Honey instead of sugar sweetens this homemade banana bread. The best type of bananas to use are the very, very ripe ones--once the peels start to turn black

1/2 cup butter or 1/2 cup margarine
3/4 cup honey
2 large eggs
1 cup mashed ripe banana
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans, toasted

Steps:

  • Beat butter at medium speed with mixer in a large mixing bowl; add honey, beating well. Add eggs, one at a time, beating after each addition, add the banana and mix well.
  • Combine flour, soda, and salt; stir in pecans. Add to the butter mixture, stirring just until the dry ingredients are moistened.
  • Spoon batter into a lightly greased and floured 9 x 5-inch loaf pan.
  • Bake 350°F for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; remove from pan and cool completely.

Banana Fritters with Honey and Ice Cream image

Number Of Ingredients 12

1 cup warm water (105°F to 115°F)
1 large egg
2 tablespoons vegetable oil
1 teaspoon dry yeast
1 cup all purpose flour
1/2 cup sweetened shredded coconut
1 tablespoon sesame seeds
1/4 teaspoon ground nutmeg
4 large bananas
Vegetable oil (for frying)
Honey
Vanilla ice cream

Steps:

  • Whisk 1 cup warm water, egg, and 2 tablespoons oil in large bowl to blend. Add yeast, then flour, whisking until smooth. Cover and let stand at room temperature until batter has almost doubled in volume, about 2 hours. Stir in coconut, sesame seeds, and nutmeg. Cut bananas on deep diagonal into eighteen 1/2-inch-thick slices. (Reserve any remaining bananas for another use.) Add banana slices to batter; stir gently to coat. (Can be prepared up to 1 day ahead. Cover and chill.)
  • Pour vegetable oil into heavy medium saucepan to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 350°F. Insert fork into 1 banana slice and transfer to oil. Repeat with 5 banana slices. Fry until crisp and golden on all sides, about 3 minutes. Using slotted spoon, transfer fritters to paper-towel-lined plate to drain. Repeat with remaining bananas in 2 more batches. Divide fritters among 6 plates. Drizzle with honey and serve warm with ice cream.

I first had this at a potluck as a kid and I've thought it was pure heaven ever since. It tastes good made with strawberries or other fruit too, but bananas are best IMO. Cooking time includes cooling time for crust.

2 cups flour
1 cup butter
4 tablespoons sugar
8 ounces cream cheese, softened
1 cup powdered sugar
8 ounces Cool Whip
3 large bananas, sliced
2 (3 1/2 ounce) boxes French vanilla instant pudding
3 cups skim milk

Steps:

  • Mix together the flour and 4 tablespoons sugar.
  • Cut in the butter until the mixture is in small crumbles.
  • pat the mixture into a 9 x 13-inch baking pan.
  • Bake at 350 degrees for 15 minutes.
  • Cool.
  • Blend softened cream cheese and powdered sugar together.
  • Stir in 1 1/2 cups Cool Whip.
  • Spread mixture over cooled crust.
  • Spread banana slices over the cream cheese layer.
  • Mix together 2 boxes of pudding and 3 cups milk.
  • Spread over bananas.
  • Frost with remaining Cool Whip.
  • Chill.

1 cup honey
6 egg yolks, room temperature
1 1/3 cups whipping cream, beaten to soft peaks
2 medium ripe bananas, peeled and mashed
1 cup coarsely chopped walnuts

Steps:

  • Combine milk and honey in medium saucepan.
  • Bring almost to simmer, stirring occasionally.
  • Beat yolks until pale yellow.
  • Gradually beat in hot milk.
  • Set bowl into a larger bowl filled with ice (or cover with plastic wrap directly on the surface of the custard and chill overnight).
  • Cool custard completely, stirring occasionally.
  • Fold in whipped cream and bananas.
  • Process according to ice cream maker’s manufacturer’s instructions, until half set.
  • Add walnuts and process until set.
  • Let ripen in freezer several hours before serving.
