APPLE STACK CAKE

- Place apples and water in a 6-qt. stockpot; bring to a boil. Reduce heat; simmer, uncovered, 40-45 minutes or until apples are softened, stirring occasionally. Mash into a chunky sauce. Stir in brown sugar and pie spice; simmer, uncovered, 10-15 minutes longer or until liquid is absorbed and sauce is thickened. Cool completely., Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition., Divide dough into 8 portions; shape each into a disk. Cut out eight 9-in. circles of parchment. With a floured rolling pin, roll out a dough disk to fit each parchment circle. Transfer to baking sheets. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks to cool completely., Place1 layer on a serving plate; spread with 2/3 cup filling. Repeat layers. Top with remaining cake layer, wrap tightly in plastic wrap; refrigerate 1-2 days or until layers soften. If desired, sprinkle cake with confectioner's sugar.

- Preheat oven to 450°. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, ginger, baking soda and salt; add to creamed mixture alternately with molasses and buttermilk, beating well after each addition., Drop 2 scant 1/4 cupfuls of batter, at least 7 in. apart, onto a parchment-lined baking sheet. With well-floured fingers, pat each into a 5- to 6-in. circle. Bake 2-3 minutes or until golden brown. Remove from pans to wire racks to cool completely. Repeat with remaining batter., To assemble, place 1 cake layer on a serving plate; spread with 2 tablespoons apple butter. Repeat layers 4 times; top with a sixth layer. Repeat to make 2 more stack cakes. Refrigerate, covered, until serving. If desired, serve with additional apple butter.

EASY CHOCOLATE HAYSTACKS
This is a quick and easy chocolate-fix that the kids and adults will love. It's easy to play around with the ingredients to suit. My family has been making it for years and it's still a fave! Ingredients can be switched up with great results. It's also great with white chocolate and cranberries or crushed peppermints. You can use any nuts in place of the almonds.

- Line a baking sheet with waxed paper.
- Stir oats, chocolate chips, coconut, and almonds together in a large bowl.
- Whisk sugar, milk, butter, and salt together in a saucepan; bring mixture to a boil, add vanilla, and remove from heat. Pour milk mixture over chocolate chips mixture; stir until well-combined. Drop spoonfuls of chocolate mixture onto prepared baking sheet. Chill in the refrigerator until haystacks are set, 15 to 20 minutes.

CHOCOLATE LAYER CAKE
Steps:
- Preheat the oven to 350 degrees. Butter and flour 3 (9-inch) cake pans. Cut 3 circles of waxed paper or parchment paper to fit the bottoms of the pans, then press them in.
- In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter until smooth. Add the sugar and eggs and mix until fluffy, about 3 minutes. Add the vanilla, cocoa, baking soda and salt and mix. Add 1/2 of the flour, then 1/2 of the sour cream and mix. Repeat with the remaining flour and sour cream. Drizzle in the hot coffee and mix until smooth. The batter will be thin. Pour into the prepared pans and bake until the tops are firm to the touch and a toothpick inserted into the center comes out clean (a few crumbs are okay), about 35 minutes. Halfway through the baking, quickly rotate the pans in the oven to ensure even baking, but otherwise try not to open the oven. Let cool in the pan 10 minutes. Turn out onto wire racks and let cool completely before frosting.
- Frosting: In a mixer fitted with a paddle attachment, cream the butter and cream cheese together until smooth. Drizzle in the melted chocolate and mix. Add the coffee and vanilla and mix. Add the sugar, 1 cup at a time, mixing after each addition. Mix until well blended and fluffy. To frost the cake, use a spatula to cover 2 of the cake layers with frosting. Stack them together. Flip the third cake layer over and rest it on the top to create a very flat top for the cake. Frost on the sides and top. Cover and refrigerate until ready to serve.
CHOCOLATE ALABAMA STACK CAKE
Steps:
- Cake: 1. Position rack in the middle of the oven and preheat to 350°F. Lightly butter as many 9-inch round cake pans as you have-you want to create a total of 10 layers, baking 2 or 3 layers at a time. If you only have two or three pans, cool them between batches and butter them again as needed. 2. Sift the flour, salt, & baking powder into a small bowl; stir to combine well. Set aside. 3. Put chocolate in the top of a double boiler over low heat; the water should never be hotter than a simmer. Stir the chocolate with a silicone spatula until it melts, scraping down the sides as necessary. Remove from heat. 4. In a large mixing bowl beat the butter & sugar on medium speed until light and creamy, about 5 minutes. Add eggs one at a time, beating until smooth after each addition. Reduce speed to low; add the sifted dry ingredients 1 cup at a time, beating until incorporated. Add evaporated milk & melted chocolate; beat just to combine. Add water & vanilla, beating until well combined. 5. Place scant 2/3 cup batter in each prepared cake pan; use the back of a spoon or an offset spatula to spread the batter evenly. Bake 2 or 3 layers at a time for 8 to 9 minutes-a layer is done when you hold it near your ear and do not hear it sizzle. Allow the layers to cool in the pans for 10 minutes. Turn them out onto baking racks, using a metal spatula to ease them out of the pans, and let cool completely. Icing: Combine sugar & evaporated milk in medium saucepan over medium-low heat. Add chocolate & butter and heat, stirring, until they've melted. Increase the heat to medium and cook, stirring occasionally, for 10 minutes, until the mixture has emulsified and is smooth. stirring to combine. Icing will be thin, but it will thicken as it cools. Assemble: 1. Place 1 layer on a cake plate & spread 2 or 3 spoonfuls of icing on top. Repeat with remaining layers. Then cover top & sides. Let cake stand for 1 hour before serving.
FOURTEEN LAYER CHOCOLATE CAKE
Fourteen very thin layers with chocolate between each layer. Hope you enjoy this! I am from Georgia and make it all the time for church functions and family reunions.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 4 or 5 - 8 inch round cake pans.
- In a large bowl, cream together the shortening, 1/2 cup butter and 2 cups sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour alternately with the 3 cups milk; beat well. Pour 1/4 cup of batter into each prepared pan, and spread evenly. You will need to bake the layers in two or three batches.
- Bake for 5 to 7 minutes in the preheated oven, just until the layers are dried out. Do not brown.
- To make the frosting: In a saucepan over medium heat, combine 3 cups sugar, 1 cup butter, cocoa, water and 2 cups evaporated milk. Bring the mixture to a rolling boil, stirring frequently, then boil for 2 minutes. Remove from heat and beat for one minute with an electric mixer. Stack cake layers with icing in between, letting the icing run down the sides of the cake. Smooth the sides and top with the remaining icing.

- 1. Preheat the oven to 350°F and place the rack in the middle position.
- 2. Combine the dry ingredients in a bowl and whisk to combine. Set aside.
- 3. Combine the butter and sugar in the bowl of a standing mixer fitted with the paddle attachment and mix on medium speed until wet and grainy.
- 4. Add the molasses. Scrape the sides of the bowl with a flexible spatula to get all of the molasses into the mixture.
- 5. Add the eggs one at a time. Scrape all the way to the bottom of the bowl and mix on low speed.
- 6. Alternately add the buttermilk and the dry mixture about a quarter at a time. Stop the mixer to scrape the bowl and turn it on again on low speed for about 10 seconds. The mixture should be stiff like a soft cookie dough.
- 7. Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for 30 minutes.
- 8. Divide the dough into 6 or 8 equal portions and place each one on a round piece of parchment paper a little larger than a 9-inch cake pan. Roll out the dough to the size of the parchment. Place the cake pan over the disk and trim away the excess around the edge.
- 9. Leaving the parchment paper underneath, lift the disks onto baking sheets and bake them for approximately 10 minutes, or until the top surface appears dry and a wooden skewer inserted in the center comes out clean.
- 10. Slide the disks off the baking sheet onto a flat surface to cool.
- 11. To make the filling, combine all the ingredients in a large, heavy-bottom saucepan and bring to a light simmer. Immediately transfer to the work bowl of a food processor fitted with the steel blade and pulse into a thick paste.
- 12. To assemble the cake, spread about 1 cup of the filling onto each layer, taking care to center each disk on top of the one beneath it. Repeat until all the layers are used. Do not put apple filling on top of the cake.
- 13. Wrap the cake well and refrigerate it for up to 24 hours. This gives the apple filling time to work itself into the cake. Dust with confectioners' sugar and serve chilled.
OPEL'S CHOCOLATE STACK CAKE
It appears that I clipped this recipe out of a magazine it's so old. The lady's name is Opel Forshee, which I don't know her personally but she looks like a very sweet little lady. I have made this recipe many times and it is certainly a hit with my family. It's also quite an impressive cake. NOTE: this recipe makes 10 really thin layers but you can make 8 layers by adding a little more batter in pans. I always make the 10 layers.

- Preheat oven to 350. Combine both flours, baking soda and baking powder and set aside.
- CAKE: Beat eggs in a large mixer bowl and add sugar, stirring to mix. In a seperate bowl, combine buttermilk and oil, mixing well. Add flour mixture and buttermilk mixture alternately to egg mixture, beginning and ending with flour mixture, beating well after each addition. Stir in vanilla. Pour 2/3 cup batter into greased and floured round cake pans (I use 8" pans). Bake at 350 for 8 minutes or until layers begin to brown around edges. Allow to cool in pans 5 minutes, remove cake from pans and stack layers, placing a paper towel between each layer. Repeat with remaining batter until 10 layers are baked. PLEASE NOTE: Prepare icing after layers are baked.
- ICING: Combine sugar & cocoa in a large heavy saucepan. Add milk & combine well. Cook over medium heat, stirring constantly until sugar melts. Add butter, stirring until melted. Allow to come to a boil then continue boiling for 7 minutes. Remove from heat then add in vanilla. Icing will be thin at this point but will harden later. Ice cooled layers while icing is warm.
- ASSEMBLE: Start stacking layers and be generous with icing between layers because there is plenty. Once last layer is on top, ice generously. Icing will run down the cake, which actually will ice the sides. Keep spooning icing back on top as it puddles.
- Note: the icing will start to get gooey as it cools but then will harden later. This cake is better made the day before serving. This allows the icing to harden properly. If you can't make it a day ahead, make it in the morning to serve that evening.
