Refined Sugar-Free Banana Liqueur Recipe a homemade tasty sweet liquid that can be used on its own, in drinks, syrups, breakfast, or desserts.

1/2 cup sliced bananas ((approximately one banana))
1/2 cup gluten-free vodka
1/2 cup of water
1/8 cup yacon syrup
1/8 cup maple sugar

Steps:

  • First, sterilize the canning jar and lid.
  • Second, place sliced bananas into a 1/2 pint canning jar.
  • Finally, pour vodka on top of sliced bananas.
  • On the fifth day remove bananas and strain out the liquid.
  • Toss infused bananas away.
  • In a small pan over medium heat add water, yacon, and maple sugar to the pan until a sweet syrup has developed approximately 4 minutes.
  • Pour the strained liquid into the cooled syrup and stir together.
  • Lastly, pour into a sterilized jar and store in the fridge.
  • Use as any other liqueur.
  • Good for up to 6 months.

This recipe is naturally sweetened with fruit and an optional drizzle of agave syrup meaning less added sugar is required in this banana bread

125g self-raising wholemeal flour
½ tsp baking powder
2 tsp ground cinnamon
75g sultana
50g butter, melted
2 tsp vanilla essence
1 egg
1 tbsp milk
3 ripe bananas, mashed
drizzle agave syrup, to serve (optional)

Steps:

  • Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
  • Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
  • Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
  • Children: Drizzle with agave syrup if using.

2 medium bananas
3 cups vodka
1 cup sugar syrup (see note)
1 teaspoon vanilla extract

Steps:

  • Peel and mash bananas.
  • Combine with the vodka, sugar syrup and vanilla in sterilized, wide-mouth jar.
  • Cap the jar and shake gently to mix.
  • Let stand in a cool, dark place for 1 week.
  • Strain and filter the liquid.
  • Transfer clear liqueur to a sterilized bottle.
  • Note: To make sugar syrup, bring 1 cup sugar and 1/2 cup water to a boil.
  • Simmer, occasionally scraping down the sides of the pan, until the sugar is dissolved, about 5 minutes.

  • Peel the bananas, then cut them in half crosswise and lengthwise.In a medium skillet add butter along with the coconut sugar, salt vanilla and cinnamon. For the coconut sugar to melt nicely, we need to add it to a cold pan.
  • Put on medium heat and let melt gently, then cook about 2 minutes until bubbly and thickened. Don’t worry if it looks plasticy and does not come together right away. It will once the bananas go in and the rum will bring it together. Place the banana quarters in the pan, rounded side down.
  • Cook until the bananas begin to soften, 2 to 3 minutes. Turn the bananas onto their flat sides. Now for the fun part! Very carefully, add the rum, making sure not to drip any on the stove or the sides of the pan. Stand back from the pan and use a stick lighter to ignite the alcohol. Use extreme caution to stay away from the flame! Allow the alcohol to burn off, then continue cooking, stirring and flipping the bananas until the sauce is thickened and the bananas are tender. This takes about 3 minutes.
  • To serve, place the bananas in a dish and top with a big scoop vanilla ice cream. Pour over the remaining sauce and serve warm.
