Time 30m

Number Of Ingredients 11

1/2 cup butter
1 large egg
2 cups flour
1 cup sugar
2 bananas (ripe )
1 teaspoon baking soda
1 pinch salt
¼-½ teaspoon cinnamon
¼-½ teaspoon nutmeg
¼-½ teaspoon cloves
1 cup chopped nuts ( or chocolate chips)

Steps:

  • Allow one stick (1/2 cup) of butter and one egg to rest to room temperature. Preheat oven to 350°.
  • In a mixing bowl add one stick (1/2 cup) butter at room temperature and 1 cup sugar. Cream together at high speed for a few minutes with a hand or stand mixer until becoming fluffy. Add one room temperature egg and whip for a few minutes.
  • Mash 2 large bananas to make about 1 cup of "banana mush" and mix one teaspoon of baking soda and let sit for a few minutes.
  • Mix the banana into the butter. Mix well. Add 2 cups flour, one pinch of salt, and 1/2 teaspoon cinnamon. And 1/4-1/2 teaspoon of nutmeg, and cloves. Add 1 cup chopped nuts (or chocolate chips) and mix.
  • Prep two baking trays with parchment paper. I like a larger cookie, so I used an ice cream scoop that makes a bigger cookie.
  • Cook until edges are turning a bit darker brown. These large cookies took 15 minutes. A smaller cookie might take as little as 12 minutes. Allow to rest on the tray for 5 minutes after coming out of the oven before moving to a cooling rack.

Time 22m

Yield 30 cookies, 15 serving(s)

Number Of Ingredients 11

1/2 cup unsalted butter, room temperature
1 cup sugar
1 egg, room temperature
1 cup mashed banana (about 2 1/2 large bananas)
1 teaspoon baking soda
2 cups flour
1 pinch salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup chopped nuts (pick your favorite or even add chocolate chips)

Steps:

  • Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.
  • In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
  • Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
  • Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.
  • Makes about 30 cookies.

GRANDMA'S BANANA COOKIES

Grandma's Banana Cookies image

These cookies were voted an all-time favorite in our family. They can be made any time of the year-bring them to parties, keep them for your family, save one for yourself, save 10 for yourself, whatever you want! I promise everyone will love this delicious balance of sweet but not too sweet. Eat hot, eat cold, eat these whenever. They can be stored in the freezer or in a container.

Time 1h5m

Yield 40

Number Of Ingredients 15

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup mashed ripe banana
½ cup sour cream
1 teaspoon vanilla extract
1 cup margarine
1 cup white sugar
2 large eggs
1 teaspoon baking soda
1 cup chopped walnuts
½ cup unsalted butter
1 cup brown sugar
¼ cup milk, or more as needed
2 ½ cups powdered sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
  • Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
  • Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
  • Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
  • While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
  • Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
  • Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
  • Spread frosting on cooled cookies.

EASY KIDS' RECIPE FOR FLUFFY BANANA COOKIES

Easy Kids' Recipe for Fluffy Banana Cookies image

I should rename these to the Houdini cookies, with how fast they vanish from my kitchen. Very fluffy and delicious. My daughter just turned one and loves to help make these. She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these. The recipe originated as my grandmother's banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I tossed them in as cookies and we all agreed it came out better this way.

BANANA NUT COOKIES

Banana Nut Cookies image

These are so easy and so good! Like banana bread in a cookie size! Even better when they're frosted (mmmm...buttercream :). Can roll them and cut them out, or just roll into small balls and squish with the bottom of a glass. I've used the Betty Crocker and Mrs. White's muffin mixes with equal success. Have yet to try with Jiffy mix though since it's always out.
