Steps:
- Creating the Gift in a Jar:
- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, baking soda, baking powder, salt, sugar, and then walnuts - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
- BANANA NUT BREAD GIFT TAG:
- Additional ingredients to be added by the recipient: 3 ripe bananas, 1/2 cup solid shortening (Crisco), 1/3 cup buttermilk and 2 eggs.
- BANANA NUT BREAD INSTRUCTIONS:
- Preheat oven to 350.
- In a large bowl, blend the bananas, shortening, buttermilk and eggs.
- Add the contents of the jar and stir just until combined; do not overstir.
- Pour the batter into a greased 9-inch loaf pan.
- Bake for 45-50 minutes or until a toothpick inserted in the center of the loaf comes out clean.
- Cool for 10 minutes in the pan, then remove the bread and cool completely on a wire rack.
- Store in an airtight container for up to 1 week.

- BLUEBERRY BANANA MUFFINS GIFT TAG:
- Additional ingredients to be added by the recipient: 3/4 cup milk, 3/4 cup butter, melted, 2 eggs, 1 tsp vanilla extract, 2 cups fresh blueberries and 1 large ripe banana, mashed.
- BLUEBERRY BANANA MUFFIN INSTRUCTIONS:
- Preheat oven to 375.
- In a large bowl, combine the milk, butter, eggs and extract.
- Add the contents of the jar, and stir just until mixed; do not overstir.
- Gently fold in blueberries and banana.
- Spoon the batter into greased or papered muffin tins, filling each cup two-thirds full.
- Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes in the tin, then transfer to a wire rack and cool completely.
- Serve immediately or store in an airtight container for up to 1 week.

BANANA NUT COOKIES
These are so easy and so good! Like banana bread in a cookie size! Even better when they're frosted (mmmm...buttercream :). Can roll them and cut them out, or just roll into small balls and squish with the bottom of a glass. I've used the Betty Crocker and Mrs. White's muffin mixes with equal success. Have yet to try with Jiffy mix though since it's always out.

Steps:
- Stir together muffin mix, flour, and brown sugar.
- Add cooled butter.
- Stir just until soft dough forms (add milk if necessary here).
- Stick in the fridge/freezer if too sticky to work with for a while.
- Turn dough onto lightly floured surface.
- Roll to 1/4 in thick and cut cookies, or roll dough into 1 in balls and press flat with the bottom of a glass.
- Place 2 in apart on cookie sheets.
- Bake at 350 F for 9-10 min or till cookies begin to brown.
- Cool on wire rack.
- Frost when cool if desired!
BANANA NUT BREAD BAKED IN A JAR
This makes a great gift for friends and neighbors. Also great for Christmas Bazaar item. Decorate with pretty label and a circle of Christmas fabric under the jar ring. Using the same basic recipe you can substitute different fruits and vegetables to make other varieties.

- Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.
- In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
- Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.
- Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
- As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
- Jars should be eaten immediately or kept sealed in refrigerator for up to a week.

- Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.
- In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
- Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
- Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.
- Makes about 30 cookies.

The nuts in these cookies can be ground or finely chopped. For a different twist try using 1/2 cup toasted sesame seeds in place of the nuts.
