- Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line baking sheets with parchment paper.
- In a large bowl cream the shortening and the sugar together. Beat in the eggs, vanilla and lemon extract. Beat in the bananas and the nuts. Gradually add the flour, baking powder and salt.
- Drop the dough by spoonfuls onto the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes or until lightly colored. Transfer to wire racks to cool.

- 1. Mix flour, sugar, baking soda, and salt in a medium bowl.
- 2. Add oil and mix to combine.
- 3. Add remaining ingredients and mix to combine.
- 4. Drop on a cookie sheet (the original recipe says ungreased, but I do give it a quick spray of Pam). Bake 12-15 mins. at 400 degrees. Remove to wire racks to cool.

- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, baking powder, soda, salt, sugar, cinnamon, nutmeg, oatmeal and then walnuts - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.

- In a large bowl, blend the banana, butter, eggs and vanilla extract.
- Add the contents of the jar, and stir until well mixed.
- Drop the dough by heaping teaspoonfuls onto an ungreased baking sheet, spacing the cookies about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are light brown in color.
- Allow to cool for 1 minute on the baking sheet, then transfer to wire racks and cool completely.
- Serve immediately or store in an airtight container for up to 10 days.

- Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.
- In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
- Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
- Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.
- Makes about 30 cookies.

- Mix dry ingredients together set aside.
- Cream sugar and butter, add eggs mixing in well, stir in bananas and flavoring, add dry ingredients and oatmeal fold in nuts and chips (The dough may seem a little sticky and you may be tempted to add more flour, but first try baking off a few. Found that adding more flour made them dry after baking, the oatmeal seems to swell some during the baking process).
- Drop onto lightly greased baking sheet, bake at 375°F 10-12 minutes.

- Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.
- In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
- Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.
- Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
- As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
- Jars should be eaten immediately or kept sealed in refrigerator for up to a week.

- Layer your ingredients in the jar as follows: First, put in the wholemeal flour mixed with baking powder. Then, the dried cranberries followed by the rolled oats with cinnamon. Your fourth layer is the soft brown sugar seasoned with flaky sea salt and finally, the white chocolate chunks and Horlicks. If giving the jar as a present, simply download our gift tag with the recipe method and print it off, stick it on the jar and tie a ribbon around the top.
- If you want to make the biscuits yourself, or would rather handwrite the label, the method is as follows: Butter two baking sheets and pre-heat the oven (180C/160C fan/gas 4). Whisk an egg, the soft butter and vanilla extract in a bowl using an electric whisk until the mixture is smooth and creamy, so about 5 mins.
- Add the contents of the jar and mix together gently to form a dough. Put 12 golf-ball-sized spoonfuls of the dough onto each baking sheet, then bake for 11 mins. Remove the cookies from the oven and leave to cool a bit on the baking sheets. Eat them while they're still warm.
