Banana Peppers Stuffed With Vienna Sausages (Or Hot Dogs) image

The heat and flavor of the peppers blends with the sausages and tomato sauce. We eat these like pickles or as appetizers. I also give the jars as Christmas gifts. The green peppers in the red sauce makes for a colorful gift. The recipe originally came from my ex-grandmother-in-law.

1 quart tomato juice
2 cups vinegar
3 cups sugar
2 (32 ounce) bottles ketchup
2 garlic cloves
4 lbs vienna sausages (or hot dogs)
1 gallon whole banana pepper (hot or sweet)

Steps:

  • Mix tomato juice, vinegar, sugar, ketchup and garlic.
  • Cook 30 Minutes.
  • Cut stem end off of banana peppers and remove seeds (use rubber gloves if making hot peppers).
  • Stuff 1 Vienna sausage (or hot dog) into each pepper.
  • Pack peppers tightly into pint or quart jars.
  • Bring sauce to boiling.
  • Pour over peppers.
  • Wipe rims of jar with a clean cloth; place llids and screw on rings fingertip-tight.
  • Set the jars on lids for 5 minutes and then set right-side up until lids pop.**.
  • **This is an heirloom recipe that uses the inversion method, which is no longer recommended by the USDA/NCHFP (National Center for Home Food Preservation) because it can affect the ability of the lid to form a good, secure seal to the jar. Current guidelines recommend pressure canning items containing meat for optimum shelf-stable storage safety, but at the very least the jars should be processed in a boiling water bath and left to cool, upright and undisturbed, on a cloth-protected counter for 24 hours. Check for seal and if the jar hasn't sealed, either re-process the jars within the 24 hours or refrigerate and use first.

A delicious stuffed banana peppers recipe filled with chopped beef, melty cheese and lots of seasonings. Great for an easy dinner, side dish, or party platter.

10 banana peppers (or more as needed, depending on the size)
1 tablespoon olive oil
8 ounces beef or steak (finely chopped (*))
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
4 ounces shredded gouda cheese (or use your favorite melty cheese)

Steps:

  • Heat an oven to 400 degrees.
  • Slice the banana peppers in half lengthwise and core them out. Set them onto a large baking sheet.
  • Heat the oil in a medium pan and add the chopped steak. Season with garlic, paprika, salt and pepper. Cook about 5 minutes, or until the beef/steak is cooked to your liking.
  • Spoon the seasoned beef mixture into the peppers, then top each with shredded cheese.
  • Bake for 15 minutes. Alternatively, you can grill the stuffed banana peppers for 15 minutes, or broil them for 6-7 minutes, until the cheeses are nice and melty.
  • Remove from heat and set onto serving plates.
  • Top with chopped green onion, spicy chili flakes and hot sauce, if desired.

30 hot peppers
2 (16 ounce) packages hot dogs
32 ounces ketchup
3/4 cup oil
1 3/4 cups vinegar
1/2 cup sugar
8 garlic cloves

Steps:

  • Seed peppers and chop. Also chop hot dogs.
  • Mix the rest of the ingredients and place into at least a 6-quart stock pot. Add hot dogs and bring to a boil.
  • Add peppers and cook for 10 minutes.
  • Place one clove garlic into each jar (optional).
  • Ladel mixture into jars. Wipe rims, apply sterilized lids and rings.
  • Pressure can 10 pounds for at least 30 minutes (90 is best - it won't hurt anything).

This is an awesome recipe for banana peppers stuffed with an Italian sausage mixture and baked in a delicious tomato sauce. We get requests to make them for the guys my husband works with all the time.

8 banana peppers
2 tablespoons butter
½ cup chopped onion
½ cup chopped celery
1 (28 ounce) can crushed tomatoes
1 (8 ounce) can tomato sauce
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
2 ½ teaspoons salt, divided
½ teaspoon ground black pepper, divided
1 egg
1 teaspoon Worcestershire sauce
½ cup grated Parmesan cheese
1 pound hot Italian sausage
1 pound mild Italian sausage
1 ½ cups bread crumbs

Steps:

  • Cut off tops of peppers, and remove ribs and seeds. Chop edible portions of tops; set aside. Bring a large pot of salted water to a boil. Add peppers, reduce heat, and simmer until tender but still firm, about 5 minutes. Drain and set aside.
  • Heat butter in a medium skillet. Saute reserved chopped pepper, onion and celery until tender, 3 to 5 minutes. Stir in crushed tomatoes, tomato sauce and garlic. Season with basil, oregano, 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Simmer uncovered for 10 minutes. Preheat oven to 350 degrees F (175 degrees C).
  • Meanwhile, in a large mixing bowl, combine egg, 1 teaspoon salt, 1/4 teaspoon pepper, Worcestershire sauce and Parmesan. Mix in hot sausage, mild sausage, bread crumbs and 1 cup of the tomato sauce mixture.
  • Using a piping bag or sausage stuffer, fill each pepper with the meat mixture. Place in a 3 quart casserole dish, and pour remaining tomato sauce mixture over peppers.
  • Bake uncovered in preheated oven for 1 hour.

6-8 Banana or Hot Peppers
1 1/2 pounds hot sausage
1 pound mild sausage
1/2 cup diced onion
Tops (minus the stems) of the peppers, chopped small
1/4 cup green peppers, chopped small
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
2 1/2 cups shredded mozzarella
1 egg
1/2-3/4 cup seasoned bread crumbs
3-3 1/2 cups Marinara Sauce

Steps:

  • Preheat oven to 350F.
  • Cut the tops off of the peppers and set them aside (throwing away the stem itself).
  • Wearing rubber/plastic gloves, take a knife and chop off the top of the peppers and run the knife on the top about 1/4" from the tip to the top of the pepper. You don't want to split them in half. You want the pepper whole but have the slit so you can stuff it.
  • Remove the rib and seeds; discard.
  • In a separate bowl, add the sausages, onion, green and hot pepper tops, spices, ¾ cup of the mozzarella, egg, bread crumbs (start with a 1/2 cup) and 1/2 cup marinara sauce.
  • Gently mix to incorporate. If the mixture it too wet add the rest of the bread crumbs. You want the mixture more on the moist side. It should be semi-loose in structure.
  • Gently open up the pepper and stuff with the meat mixture slightly mounding.
  • Place each filled pepper in a 9×13" baking dish.
  • Add the marinara sauce over top of the peppers - at a bare minimum you want to use at least 1 1/2 cups. You can add more if you want more sauce.
  • Cover with foil and bake for 35 minutes or when an inserted meat thermometer into the sausage reads 160-165F.
  • Remove foil and top with remaining cheese.
  • Bake uncovered for 5-10 minutes or until the cheese is melted.

1 pound hot Italian sausage
5 cups shredded mozzarella cheese, divided
1 (24 ounce) carton ricotta cheese
1 cup diced stick pepperoni
3 eggs, lightly beaten
¼ cup freshly grated Parmesan cheese
2 tablespoons fresh flat-leaf parsley
1 teaspoon garlic powder
¼ teaspoon freshly grated nutmeg
20 hot banana peppers, tops and seeds removed, or more to taste
1 (28 ounce) jar spaghetti sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Set aside to cool.
  • Mix cooked sausage, 4 cups mozzarella cheese, ricotta cheese, pepperoni, eggs, Parmesan cheese, parsley, garlic powder, and nutmeg together in a bowl. Stuff each pepper with cheese mixture.
  • Cover the bottom of a 9x13-inch baking dish with 1 cup spaghetti sauce. Add stuffed peppers, stacking them if needed. Cover with remaining sauce. Top with remaining mozzarella cheese and any remaining cheese mixture. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until bubbly and fragrant, at least 1 hour.

8 banana peppers
1 lb spicy Italian sausage (ground)
½ cup mozzarella cheese
½ cup tomato sauce
2 tbsp water
salt and pepper (to taste)

Steps:

  • Preheat your oven to 350 degrees F.
  • Start by preparing your peppers. While wearing disposable gloves, cut tops of the peppers and remove any large pieces of the Inside rib. There will be small bunches of seeds inside. If you like a lot of heat, leave them. If you prefer a more mild pepper, remove the seeds.
  • Divide the ground sausage into 8 separate, equal portions and stuff one portion into each pepper. It's okay if the sausage is exposed and doesn't completely fill the contents of the pepper.
  • In a baking dish, take half of the tomato sauce and spread it along the bottom of the baking dish. Add the water and mix it together with a spoon or whisk.
  • In a single layer, lay each pepper in the sauce in the dish.
  • Pour the remaining tomato sauce over the peppers.
  • Cover the baking dish with foil and pop it into the pre-heated oven for roughly 40 minutes.
  • At 40 minutes, remove the baking dish from the oven and carefully remove the foil. There will be hot steam released. If a knife easily pierces the pepper, they're ready for the next step.
  • Top each pepper with mozzarella cheese.
  • Turn the oven to broil and put the peppers back in the oven, uncovered.
  • Broil until the cheese is golden brown and remove from the oven.
  • Let cool for at least 10 minutes before serving. Enjoy!
