Steps:
- Sprinkle the coconut over pastry shell. Set aside. Cream butter and sugar. Add corn syrup, eggs, rum, nutmeg, vanilla and cinnamon. Beat well at medium speed of mixer. Pour egg mixture over coconut in unbaked pastry shell. Bake at 350 degrees F for 45 minutes or until filling is set. Let cool completely. Top pie with whipped cream and sprinkle with toasted coconut.

- In a large bowl, beat eggs and sugar until smooth. Blend in buttermilk and melted butter. Stir in the coconut and vanilla. Pour filling into 2 - 9 inch pie shells.

Steps:
- Place milk, cream, sugar, flour, eggs and vanilla in a mixing bowl. Mix with a hand mixer for 2 minutes on medium speed.
- Add coconut and mix together until completely incorporated.
- Place in a greased pie pan. Cook at 350° for 40-45 minutes.
- In small sauce pan, heat butter over medium heat until melted.
- Add brown sugar and mix together until sugar dissolves.
- Add rum and cook for 1 minute on medium heat.
- Slice pie and serve with rum sauce, to your liking. *Pie best when served warm.

- In a large saucepan, combine the sugar, flour and salt. Combine egg yolks and milk; stir into dry ingredients until smooth. Cook and stir over medium heat until mixture is thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; stir in vanilla and 1 cup coconut. Pour hot filling into pie shell. , For meringue, beat egg whites in a bowl until soft peaks form. Gradually beat in sugar until mixture forms stiff glossy peaks and sugar is dissolved. Spread meringue over hot filling. Sprinkle with remaining coconut. , Bake at 350° for 12-15 minutes or until golden. Cool. Store in the refrigerator.
