A friend of mine couldn't make up her mind between banana cream pie and cheesecake for her birthday, so I came up with this rich and creamy concoction. The vanilla cream topping takes a little extra time to make but it really completes the dessert!

1 ¼ cups vanilla wafer crumbs
½ cup ground walnuts
5 tablespoons butter, melted
4 (8 ounce) packages cream cheese, room temperature
1 ⅛ cups white sugar
3 tablespoons all-purpose flour
4 eggs
1 cup sour cream
2 ripe bananas, mashed
¼ cup banana liqueur
1 ½ teaspoons vanilla extract
1 ½ teaspoons unflavored gelatin
3 tablespoons cold water
1 cup milk
⅓ cup white sugar
4 egg yolks
2 teaspoons vanilla extract
1 ½ cups heavy cream, chilled
12 vanilla wafer cookies

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease the sides of a 9 inch springform pan. In a medium bowl, mix together the vanilla wafer crumbs, ground walnuts, and melted butter. Press into the bottom of the prepared pan.
  • In a large bowl, stir cream cheese to soften. Mix together 1 1/8 cup sugar and flour; stir into the cream cheese until smooth. Stir in eggs, one at a time, mixing until well blended after each one. Stir in sour cream, mashed banana, banana liqueur, and 1 1/2 teaspoons of vanilla. Pour over the crust in the springform pan.
  • Cover the bottom of the outside of the cheesecake pan with aluminum foil to prevent water from the water bath from seeping in. Place springform pan inside a larger pan. Place the whole thing into the preheated oven, and fill the outer pan with hot water.
  • Bake for 45 minutes in the preheated oven. After the time is up, turn the oven off, but leave door closed. Leave cheesecake in the unopened oven for 1 hour. Before removing from the water bath. Run a knife around the outer edge of the cake to keep it from shrinking away from the center and cracking. Let cool to room temperature, then refrigerate until chilled, at least 3 hours, or overnight.
  • In a small bowl, sprinkle the unflavored gelatin over the cold water, and set aside to soften. Heat milk in a small saucepan over medium-low heat until hot but not boiling. Meanwhile, whisk together 1/3 cup sugar and egg yolks until smooth and frothy. Whisk about 1/3 of the hot milk into the egg yolk mixture, then pour the yolk mixture into the pan with the remaining milk. Cook over low heat, stirring constantly with a spatula, making sure that the mixture does not burn on the bottom, until it is thick enough to coat the back of a metal spoon. Remove from the heat. Stir the softened gelatin into the hot pastry cream until dissolved, then stir in vanilla. Pour into a bowl, place a sheet of plastic wrap directly on the surface, and refrigerate until cooled, about 1 hour.
  • When the pastry cream is cooled, whip heavy cream just past soft peaks. Stir pastry cream to soften, then fold in the whipped cream. Place vanilla wafers on top of the cooled cheesecake, then spread the vanilla cream over the entire top. Chill until serving. Run a wet knife around the outer edge of the cake before removing the sides for a cleaner look.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

20 vanilla cream-filled sandwich style cookies
1/4 cup margarine, melted
24 ounces cream cheese, softened
2/3 cup granulated sugar
2 tablespoons cornstarch
3 eggs
3/4 cup mashed banana
1/2 cup whipping cream
2 teaspoons vanilla extract
shredded coconut, for topping (optional)

Steps:

  • Use a blender to finely chop the cookies.
  • Add margarine and blend until they are well combines.
  • Press mixture into the bottom of a 10" springform pan and smooth it out.
  • Refrigerate the crust while you make the filling.
  • Beat cream cheese with electric mixer until creamy.
  • Beat in sugar and cornstarch followed by the eggs (one at a time).
  • Beat in bananas, whipping cream, and vanilla.
  • Pour mixture into crust.
  • Place pan on a cookie sheet and bake in a 350 degree oven for 15 minutes.
  • Reduce oven temperature to 200 degrees and bake an additional 75 minutes, or until center is almost set, adding coconut for last 20 minutes.
  • Allow to cool completely before removing rim of pan -- Before removing the pan, run warm water over a knife and slide a knife around the edge of the cake to separate the cake from the pan cleanly.
  • Refrigerate cheesecake, uncovered, at least 6 hours.

3 cups sugar (sifted)
3 bananas (softened and slightly brown)
3 cups cake flour (without salt and baking powder)

6 large eggs (room temperature)

Steps:

  • Preheat oven to 350 degrees.
  • Add Butter, Sugar and Cream Cheese to mixing bowl and mix until smooth and creamy (60 sec).
  • Mash the Bananas then add to the mixing bowl and mix well (15 sec).
  • Add Vanilla Extract to the mixing bowl and mix well (15 sec).
  • Add Eggs one at a time, ensure that each Egg is mixed well before adding the next Egg (10 sec per egg).
  • Sift the Cake Flour and Baking Powder together.
  • Add Cake Flour/Baking Powder into the mixing bowl and mix well until the mixture is smooth throughout (90 sec).
  • Grease and Flour at tube pan 10-in or 12-in.
  • Pour cake mixture to pan, put pan into oven and immediately reduce heat to 325 degrees.
  • Bake cake at 325 degrees for 1 hour and 30 minutes or until a wooden tester comes out clean.
  • Cool in pan for 10 minutes, then cool on wire rack.

whipped cream, candied citrus peel and fresh mint for garnish

1 cup heavy cream
8-ounce bar semi-sweet chocolate
3 bananas

2 Tbsp. (plus a dash) fortified wine

  • Instructions for cake:
  • Preheat oven to 275 degrees. Grease and flour a 10-inch tube pan. Cream margarine, butter, and cream cheese, with sugar until fluffy and well combined. Add salt and vanilla, and mix well. Add eggs, one at a time, beating well after each addition. Add flour and mix well. Pour batter into pan. Place in a cold oven and bake at for 1 1/2 hours, or until done. Check doneness by inserting a toothpick in the center; if it comes out clean, it's ready. Cool in pan, then turn out and slice into half-inch-thick slices. Preheat grill pan to medium heat.   • Instructions for Bananas with Chocolate Sauce:
  • In a small saucepan, melt 2 tablespoons butter. Pour 1 cup heavy cream into another small saucepan and turn on the burner to medium-high. Scald the cream. Break up the semi-sweet chocolate bar into a medium mixing bowl. When the cream is hot, pour it over the chocolate and sets the bowl aside. In a large skillet, melt the other 2 tablespoons butter over medium-high heat. Peel 3 bananas, slice them and place in another mixing bowl. Add 1/2 cup sugar to the bananas, gently toss them and place them in the buttered skillet. When the bananas are golden-brown, add a dash of fortified wine and cook until it evaporates. Whisk the chocolate cream mixture until smooth, then add 2 tablespoons fortified wine, mixing well.
  • Assembly:
  • Put a cake slice on each dessert plate or parfait cup, top with a spoonful of the bananas, and then another cake slice and another spoonful of bananas. Drizzle the top of each dessert with the chocolate wine sauce.

1 stick plus 2 tablespoons unsalted butter, at room temperature
1 cup plus 6 tablespoons sugar
2 teaspoons vanilla extract
3 large eggs, at room temperature
3 very ripe bananas, mashed

Steps:

  • Preheat the oven to 325 degrees F. Make the filling: Beat the cream cheese and vanilla in a stand mixer fitted with the paddle attachment on medium speed until smooth; transfer to a bowl. Clean out the mixer. Add the egg whites to the mixer and beat with the whisk attachment on medium-high speed until frothy, about 1 minute.   • Divide the batter among the prepared muffin cups. Insert the pastry tip halfway into each and pipe about 1 tablespoon filling into the middle of the batter. (The cups should be about three-quarters full.) Bake until a toothpick inserted into the cake (not the filling) comes out clean, 20 to 35 minutes. Transfer the pan to a rack and let cool about 15 minutes, then remove the cakes to the rack to cool completely.

  • Grease a 9-inch springform pan. Mix together graham cracker crumbs and kosher salt. Stir in melted butter. Crumbs should stick together when pressed. Pour into the springform pan and press crust down into an even layer with the bottom of a measuring cup. Chill for 10 minutes while you make the filling.
  • Use a hand mixer to beat the cream cheese on high speed. Pour in heavy cream and Light & Fit Original Greek Banana Cream yogurt, then beat on high speed until smooth and thick. Add sugar and kosher salt, then beat until soft peaks form and filling is smooth. Pour filling on top of crust and smooth top with a spatula. Refrigerate overnight.
  • Remove cheesecake from springform pan. Shingle sliced bananas over the top. Sprinkle with chopped roasted peanuts, if using.
  • Slice, serve, and enjoy!

1-1/2 cups milk
