- Combine all ingredients plus 4 tablespoons of the reserved clam juice in a bowl and mix until thoroughly combined.

- In a medium sized bowl, mash softened cream cheese with a fork until soft and creamy. Slowly add in 1 tablespoon of clam juice while mixing with fork and cream well. Add lemon juice and Worcestershire sauce.
- Add green onion and clams to mixture. Add a few dashes of Tabasco to taste. If mixture seems thick, add remaining clam juice in one tablespoon increments to desired consistency. Serve with potato chips or refrigerate for up to 2 days.

BAR CLAM DIP

- Drain bottled bar clams and reserve broth, set aside. Chop the bar clam meat and reserve. In a small saucepan over low heat, reduce by half the bar clam broth. Remove and chill. In a blender, add clam meat, cream cheese, lemon juice, garlic, Worcestershire sauce, chilled broth, sour cream and process. Adjust seasoning, if you find dip too thick, dilute with milk. Serve with a variety of vegetables and bread.

Clam dip has been served for decades in my family at every gathering since I can remember. - Preheat the oven to 350 degrees F (175 degrees C).
- Combine minced clams and lemon juice in a small saucepan. Bring mixture to a simmer. Simmer for 15 minutes.

CHUNKY CLAM AND BACON DIP WITH PITA TOASTS

- In a skillet cook bacon over moderate heat, stirring, until golden and crisp and transfer with a slotted spoon to paper towels to drain.
- In a large sieve set over a bowl drain clams, reserving clam juice, and in another bowl whisk together cream cheese and sour cream. Whisk 2 tablespoons reserved clam juice into cream cheese mixture with clams, bacon, and remaining ingredients. Dip may be made 1 day ahead and chilled, covered. Bring dip to room temperature before serving.
- Serve dip with toasts or chips.

- Heat oven to 425 degrees. In a large bowl, using a fork or rubber spatula, stir and mash together the softened cream cheese and sour cream until smooth.
- Add clams, mozzarella, parsley, scallions, jalapeño, lemon juice, Worcestershire sauce, hot sauce, fish sauce or a teaspoon of reserved clam juice, and lots of black pepper, and stir until well combined. If the mixture seems thick, stir in a little more reserved clam juice.
