Steps:
- Heat oil in skillet. Add chicken, onions, green pepper and garlic and cook until chicken is browned and no pink remains and the vegetables are tender. About 5 minutes.
- Stir in Barbecue Sauce, water and corn, bring to a boil. Reduce heat, cover and simmer for 5 minutes.
- Stir in rice, bring to slow boil, cover and remove from heat. Let stand about 5 - 7 minutes or until rice is tender.
- Serve with a side salad, if desired

- Heat olive oil in a large skillet over medium high heat. When oil is hot, add the onions and red peppers and cook and stir until the onion becomes translucent, about 2 minutes. Season the chicken with salt and pepper and add to the skillet. Saute until it begins to brown, 2 to 4 minutes. Add the BBQ sauce and stir until combined. Transfer mixture to a bowl.
- Add Knorr® Rice SidesTM- Rice Pilaf, water and buttery spread to the skillet and bring to a boil. Cover and reduce heat to medium-low and continue cooking for 5 minutes. Stir in corn; cover and cook an additional 2 minutes. Return chicken mixture to the pan; stir to mix thoroughly. Remove from heat and let stand 2 minutes.
- Serve topped with chopped green onions.

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat oil in large Dutch oven over medium-high heat. Sprinkle chicken thighs evenly with 1 teaspoon salt and 1/2 teaspoon pepper.
- Place chicken skin-side down in the Dutch oven; cook undisturbed until golden crisp and easily released from the bottom, about 5 minutes. Flip chicken and cook for 3 minutes more. Transfer to a plate and set aside. Chicken will not be cooked through at this point.
- Add butter to the drippings and melt. Add onion and cook, stirring often, until translucent, about 3 minutes. Add garlic; cook for 1 minute. Add rice; cook, stirring to coat grains in drippings and lightly toast, about 1 minute. Stir in 3 cups stock and remaining salt and pepper. Bring to a boil. Use a wooden spoon to scrape any browned bits from the bottom of the Dutch oven. Place the chicken thighs over the rice.
- Bake in the preheated oven until all liquid has been absorbed and chicken is cooked through, 45 to 55 minutes. Add remaining stock if liquid is absorbed before rice and chicken are cooked through. Sprinkle with parsley and squeeze lemon juice over the top.

- Pour BBQ Sauce into pan, fill the empty bottle with tap water (or something fancier if you're"that way") and pour about half of it into the pan as well.
- Stir until blended over low-medium heat.
- Add thawed chicken.
- Cook chicken and sauce while stirring over medium heat until chicken is done, then turn down to low.
- Keep an eye on it and add more water from the bottle if needed.
- For rice, just add rice and water to a pan with a tight-fitting lid, bring to a boil, stir for a minute, and cook at medium heat for 30 minutes while COVERED.
- when everything's done, pile it on a plate and eat it up.
- Sometimes I add a dash or two of"Kick-Yo-Ass" hot-sauce for a little spice.

- RICE: Cook rice in chicken broth, stock, or water. Once cooked, fluff with a fork and add the juice of a lime (to taste; I add all of it) and cilantro to taste.
- CHICKEN: Remove excess fat from the chicken breasts. Slice the breasts in half horizontally, cover with plastic wrap (to avoid splatter), and pound halves to an even thickness using a meat mallet or the bottom of your frying pan (this helps them cook evenly). Add the salt (if you are using table salt instead of fine sea salt, you'll need to reduce amount; also reduce if sensitive to salt), brown sugar, pepper chili powder, paprika garlic powder, onion, powder, and cumin to a small bowl. Stir to mix. Pat chicken dry with a paper towel, drizzle with oil (use a silicone or pastry brush or your hand to evenly spread the oil) and then sprinkle and gently press this seasoning mixture evenly onto all sides of the chicken pieces.
- Preheat a grill or grill pan to medium-high heat (about 400 degrees F.) (See Note 3.) Generously oil the grill or ridges of the grill pan. (I drench a rolled-up paper towel in vegetable oil and, holding it with tongs, rub it over the grill grates.)
- Place the chicken onto the grill and grill 5 to 6 minutes per side, until the chicken is cooked through (registers 165 degrees F on a food thermometer and juices run clear). Remove the chicken from the grill and let rest for 5 minutes, tented with foil. Chop the chicken into small, bite-sized pieces. If desired, baste the chicken with additional BBQ sauce as it cooks or toss it in BBQ sauce after you've chopped it into bite-sized pieces. (Add additional BBQ sauce to personal taste preference.)

- In a large skillet brown chicken and onion with olive oil over medium heat. When chicken is no longer pink (about 5-7 minutes; don't worry if it isn't cooked all the way through it will have more cooking time while the rice simmers) add in the garlic and cook for 2 minutes.
- Stir in the rice, broth, corn, tomato sauce, chilies, bbq sauce, chili powder, salt and pepper. Cover and simmer for 15 minutes or until the rice is tender. Stir occasionally while simmering. Remove from heat sprinkle with shredded cheese then replace top and allow cheese to melt. Top with desired toppings before serving.
