4 slices bacon
½ small onion, chopped
3 cups shredded, cooked chicken breast meat
⅔ cup barbeque sauce
1 (10 ounce) can refrigerated pizza crust dough
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Fry bacon in a large skillet over medium-high heat until crisp. Remove from the pan to drain on paper towels; crumble. Add the onion and shredded chicken to the hot bacon grease in the pan. Fry over medium heat until onion is tender. Stir in 1/3 cup of barbeque sauce, and remove from the heat. Mix in the cooked bacon.
  • Roll the pizza crust dough out onto a greased cookie sheet. Press out to an even thickness, and then cut in half. Divide the chicken mixture between the two pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge. Drizzle the remaining sauce over the filling. Sprinkle the cheese and cilantro over the top. Fold the uncovered portion of dough over the filling, and press the edges together with a fork to seal.
  • Bake for 25 minutes in the preheated oven, or until browned to your liking. Cool for a few minutes, then cut each calzone in half. Each serving is half of a calzone. These can be served with additional barbeque sauce if you like.

2 1/2 cups flour
4 teaspoons baking powder
3 teaspoons basil
1 tablespoon sugar
1/2 cup butter or 1/2 cup margarine, melted
2/3 cup warm water
6 teaspoons instant powdered milk
2 eggs
2 teaspoons margarine or 2 teaspoons butter
1 onion, diced
2 boneless skinless chicken breasts, cooked and diced
2 portabella mushrooms, chopped
1 cup grated cheddar cheese or 1 cup your favourite cheese
1 3/4 cups barbecue sauce, your favourite

Steps:

  • For the dough: Combine flour, baking powder, sugar and basil.
  • Add milk powder to water and stir until dissolved, add to dry mixture.
  • Add eggs and melted butter and mix well.
  • Set aside while making the filling.
  • For the filling: Cook onions in butter over medium heat until onions are tender.
  • Add chicken and mushroom pieces and cook 2 minutes.
  • Remove from heat and stir in barbecue sauce and cheese.
  • Divide dough into 4 pieces and roll out into 8 inch circles.
  • Place 3/4 cup - 1 cup of filling in each circle.
  • Fold dough in half and seal edges tightly.
  • Bake at 350°F for 15-20 minutes or until top begins to brown slightly.
  • For OAMC: Cool and freeze at this point.
  • Defrost in the oven or microwave before serving.
  • Serve warm with extra barbecue sauce to dip if desired.

6 strips bacon
1/2 cup diced red onion
4 boneless skinless chicken breasts (cooked and shredded)
1 Tablespoon extra virgin olive oil
1 (16 ounce) bottle barbecue sauce (divided)
1 (16.3 ounce) package refrigerated biscuits
1 cup shredded Mozzarella cheese
2 Tablespoons fresh cilantro (chopped)

Steps:

  • Preheat oven to 400 degrees. Fry bacon in a large skillet over medium-high heat until crisp. Remove bacon from pan, blot with paper towels and crumble.
  • Add onion and shredded chicken to a pan with olive oil. Saute over medium heat until onion is tender. Stir in 1/2 cup barbecue sauce and remove from heat. Mix in crumbled bacon.
  • Flatten out biscuit dough on a greased cookie sheet. Spread a teaspoon of barbecue sauce on each biscuit. Divide the chicken mixture between the biscuits, spreading on only half of each biscuit and keeping 1/2 inch away from the edge.
  • Sprinkle cheese and cilantro over top of each biscuit.
  • Fold biscuits in half and press the edges together with a fork to seal.
  • Bake for 12-14 minutes, or until golden brown.
  • Serve with additional barbecue sauce for dipping.

1 -2 tablespoon olive oil, to taste
4 garlic cloves, minced
1 medium red bell pepper, diced (about 1/2 cup)
5 large sun-dried tomatoes, diced
1 teaspoon thyme
1/4 teaspoon chili powder, to taste
salt and pepper
1 (10 ounce) can refrigerated pizza dough
2 chicken breasts, cooked and shredded (about 1/2 pound)
2 -4 ounces havarti cheese, in slices (quantity to taste)
12 leaves fresh basil
olive oil
1 (10 ounce) can refrigerated pizza dough

Steps:

  • Preheat the oven at 400°F.
  • Sauté garlic and red bell pepper, in olive oil, for about 3 minutes (just enough to "combine" the flavors). Put aside to cool.
  • In a bowl combine sun-dried tomatoes, thyme, chili and red pepper mixture. Toss until well mixed. Season with salt and pepper.
  • Unroll pizza dough onto clean work surface.
  • Pat out to 15x11-inch rectangle; cut in half lengthwise, then in half crosswise to form 4 rectangles.
  • Place the dough pieces on a floured surface.
  • Spread a 1/4 of the shredded chicken on one side of each dough piece. Be sure to leave 1/2 inch of the dough border free.
  • Place one slice of cheese over each portion.
  • Spread the vegetable mix over the cheese.
  • Add 3 leaves fresh basil to each calzone.
  • Brush the dough borders with little water and cover the filling with the dough (using the side without filling) and seal edges with fork.
  • Place on baking sheet sprayed with cooking spray and cook for about 20 minutes or as desired until golden brown/middle down.
  • Serve warm or cold as sandwiches.

1 deep-dish pizza dough
1 tablespoon oil, from sun-dried tomato
1 medium onion (finely chopped)
1 garlic clove (minced)
1 cup ricotta cheese
1/4 cup chopped sun-dried tomato
2 tablespoons chopped fresh parsley
1/4 lb sliced salami or 1/4 lb prosciutto, cut into strips
2 cups mozzarella cheese, shredded
cornmeal (for baking sheet)
olive oil

Steps:

  • Prepare 1 recipe pizza dough (I use'd the dough cycle on the bread machine) and let it rise.
  • While Dough Rises, Prepare Filling:.
  • In a medium frying pan heat tomato oil over moderate heat, add onion and cook, stirring often, until soft but not browned.
  • Mix in garlic, then remove from heat.
  • In a medium bowl mix ricotta cheese with dried tomatoes and parsley.
  • Stir in cooked onion mixture.
  • Divide dough into two equal portions.
  • Roll each half out on a floured surface to a 12-inch circle.
  • Spread half of the ricotta filling over half of each circle of dough, leaving about a 1/2-inch margin.
  • Sprinkle half of each circle with half of the meat strips and 1 cup of the mozzarella cheese.
  • Fold circles in halves over filling, moistening and pinching edges together (or pressing with tines of a fork) to seal.
  • Preheat oven to 450~ F.
  • Sprinkle a large, greased baking sheet lightly with cornmeal.
  • Place calzones well apart on prepared baking sheet.
  • Let rise until puffy (12 to 15 minutes).
  • Bake to a deep golden color (about 20 mins).
  • Brush tops lightly with olive oil, then serve hot.

4 teaspoons parmesan cheese
2 eggs
4 tablespoons milk

Steps:

  • Divide dough into 16 portions.
  • Preheat oven to 425°F.
  • Grease a baking sheet.
  • Heat a large skillet over medium heat, add sausage.
  • Cook until brown and crumbly, drain fat.
  • Stir onion, garlic, basil, oregano, and pizza sauce into skillet, simmer for 10 minutes.
