I haven't tried this, but it has to be good! Gabby Gourmet, aka Fred Wix was a Utah icon for years. He had a segment on the noon news where he always cooked up something delectable! I found this recipe on KUTV.com. As Gabby would say, Enjoy!

1 tablespoon light cooking oil (canola)
1/2 medium onion, chopped
2 garlic cloves, pressed or minced
1/2 cup beef broth or 1/2 cup chicken broth
1 tablespoon garlic red wine vinegar
1 tablespoon Worcestershire sauce
1 cup chili sauce (your favorite)
1/2 cup molasses
1/4 cup lemon juice
6 tablespoons brown sugar
1/2 teaspoon sweet paprika or 1/2 teaspoon hot Hungarian paprika
salt & fresh ground pepper, to taste
4 -6 chicken breasts, skinned, boned and cut into thirds or fourths
8 medium country-style pork ribs

Steps:

  • In a medium-size Dutch oven-type pan, heat the oil over a medium heat, then add the onion and garlic and saute until onion is transparent.
  • Add all of the remaining ingredients, except the chicken and ribs.
  • Reduce the heat to low, cover lightly and let the mixture simmer about 30 minutes, stirring occasionally.
  • Arrange the chicken and ribs in a shallow baking dish (9 X 13 inch), then pour the cooked sauce over all.
  • Bake in a preheated 350º oven for 1 hour.

1/4 cup olive oil
3 pounds chicken pieces, skin on (thighs, drumsticks, breasts)
3 pounds pork ribs on the slab
Salt and pepper to taste
1/4 cup garlic powder
Sweet & Tangy Barbecue Sauce

Steps:

  • Lightly brush your grill with olive oil and preheat it to approximately 350°F.
  • In the meantime, rinse the meat, pat it dry, and season with salt, pepper, and garlic powder. Arrange the chicken and ribs on the grill. Resist turning the meat for at least 5 minutes. This will help it sear nicely. After 5 minutes or so, turn the meat over, sear the other side for 5 more minutes. Turn again, and this time, brush the meat with the barbecue sauce. Then turn again every 5 minutes, repeating the process of brushing the meat with sauce until the chicken and ribs are cooked through and the barbecue sauce begins to caramelize and form a crust on the meat (35 to 40 minutes).
  • Serve with more barbecue sauce on the side.

12 pork spare ribs
6 chicken legs and thighs
1 cup apple juice
4 tbs. maple syrup
2 tbs. soy sauce
2 tbs. olive oil
½ tsp. cloves
½ tsp. ground cinnamon
6 cloves garlic (unpeeled)

Steps:

  • 1. Combine all of the above in a large bowl and toss. Cover and place in the refrigerator for at least one to two hours or up to over night. You may also place this in a zip-lock freezer bag. Preheat Oven 400 degrees: Place the entire ingredients in a baking pan. You may need to use two baking pans. Place in oven and bake for approximate 90 minutes. Remove from oven and let sit for a minute. Serve with your favorite sides.
