Categories     Garlic     Ginger     Pork     Stir-Fry     Dinner     Spring     Sugar Snap Pea     Gourmet     Dairy Free     Tree Nut Free

Yield Makes 2 to 4 main-course servings

Number Of Ingredients 15

14 oz fresh rice noodles, cut into 1/2-inch-wide strips if necessary
1/4 cup plus 1 teaspoon peanut oil
3/4 cup chicken stock or low-sodium chicken broth
2 tablespoons oyster sauce
1 tablespoon light soy sauce
2 teaspoons sugar
1 tablespoon Chinese rice wine or medium-dry Sherry
1/4 lb snow peas, trimmed
4 scallions, cut into 2-inch-long julienne
6 oz cha siu (Chinese boneless barbecued pork), thinly sliced
2 teaspoons finely chopped garlic
2 teaspoons finely chopped peeled fresh ginger
1/2 teaspoon cornstarch mixed with 2 teaspoons water
1/2 cup fresh mung bean sprouts
A few drops of Asian sesame oil

Steps:

  • Separate noodles, then toss with 1 teaspoon peanut oil.
  • Stir together 1/2 cup stock, oyster sauce, soy sauce, sugar, and rice wine.
  • Heat a wok over high heat until a bead of water dropped onto cooking surface evaporates immediately. Add remaining 1/4 cup peanut oil, swirling wok to coat evenly, and heat until it just begins to smoke. Stir-fry noodles, tossing frequently, until soft and translucent, 3 to 4 minutes (noodles will stick together). Add snow peas and scallions and stir-fry until snow peas are bright green and crisp-tender, about 1 minute. Add pork, garlic, and ginger and stir-fry 1 minute.
  • Add stock mixture and bring to a boil, stirring, then add remaining 1/4 cup stock. When mixture boils, stir cornstarch mixture and add to wok, then boil, stirring, until sauce is thickened and noodles are well coated, about 30 seconds. Stir in bean sprouts and remove wok from heat. Season with sesame oil and pepper.

CANTONESE BARBECUED PORK

Cantonese Barbecued Pork image

This tastes like the pork served in my favorite Chinese restaurant. Serve at room temperature arranged in overlapping layers on a platter. Garnish with cucumber slices, if desired.

Provided by SHERRY_G

Categories     World Cuisine Recipes     Asian     Chinese

Time 1h6m

Yield 6

Number Of Ingredients 11

2 tablespoons dry sherry
2 slices fresh ginger root
1 tablespoon oyster sauce
½ teaspoon Chinese five-spice powder
4 ½ teaspoons soy sauce
1 tablespoon white sugar
2 tablespoons hoisin sauce
2 tablespoons ketchup
½ teaspoon ground cinnamon
1 ½ pounds pork shoulder roast
1 tablespoon honey

Steps:

  • In bowl, stir together sherry, ginger root, oyster sauce, five-spice powder, soy sauce, white sugar, sugar, hoisin sauce, ketchup and cinnamon.
  • Cut pork into 5x2 inch strips. Place strips flat in a shallow baking dish. Pour marinade over pork strips. Let pork marinate at least 6 hours in refrigerator.
  • Drain, reserving marinade. Mix honey and 3 tablespoon reserved marinade in a small bowl; set aside. Preheat oven to 350 degrees F (175 degrees C).
  • Fill a shallow roasting pan with water and place in bottom of oven. Carefully place pork strips on a roasting rack above roasting pan so all sides are exposed to heat. If you don't have a roasting rack, insert the curved end of an S-shaped hook, paper clip, or drapery hook in pork strips and hang them from the top shelf.
  • Roast for 30 minutes. Baste pork strips with honey mixture. Roast 15 minutes and baste again. Roast 10 minutes longer or until pork strips are crisp and golden brown. Remove from oven and let cool.

CHOW-CHOW IS WHAT YOUR BARBECUE HAS BEEN MISSING | MYRECIPES
2019-07-17 The key to chow-chow, like all pickles, is patience. You'll need to stir together your vegetables, including onion, with salt and allow it to chill for 2 to 8 hours. That draws the moisture out of the vegetables and starts to preserve them. When they're chilled, put the mixture into a large pot, like a Dutch oven, and stir in your pickling liquid.
