Patatas bravas are one of the most beloved Spanish tapas, thanks to their simple combination of fried potatoes and flavorful sauce. Make them at home with this easy recipe!

4 medium potatoes
Olive oil (for frying, about 1-2 cups)
Salt
1/2 cup of homemade bravas sauce

Steps:

  • Peel the potatoes, rinse thoroughly, and dry with a paper towel.
  • Cut the potatoes into bite-size chunks.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the potatoes and adjust the heat to the lowest setting, allowing them to pre-cook for a few minutes.
  • Remove the potatoes and let them cool in the fridge for a few more minutes.
  • Turn the heat up to high and add the potatoes back into the pan.
  • Fry until crispy and golden.
  • Transfer the potatoes to a plate lined with paper towels to cool, and sprinkle with salt to taste.
  • To serve, drizzle the bravas sauce over the potatoes.
  • Dig in-no forks necessary!

1/2 cup mayonnaise
2 tablespoons tomato paste
2 teaspoons hot sauce
1/2 teaspoon red pepper flakes
1 teaspoon paprika
Pinch salt and freshly ground black pepper
3 large russet potatoes
2 cups canola oil
1 teaspoon salt

Steps:

  • Spicy Dipping Sauce:
  • In a small bowl mix together all of the ingredients until well combined. Set aside.
  • Peel and cut the potatoes into 1/2-inch cubes. Add the potatoes and salt to a large pot of cold water over medium heat. Bring to a boil, then add the potatoes and cook for 5 minutes. Remove from the heat and drain in a colander. Let sit out on the counter for 20 minutes to allow to thoroughly dry.
  • Heat the oil in a high sided skillet over medium-high heat to about 350 degrees F. Fry the potatoes until golden brown on all sides. (Reserve 1 cup potatoes for Round 2 Spanish Tortilla recipe.) Transfer the potatoes to a serving bowl and serve with the spicy dipping sauce.

2 russet potatoes, peeled and cut into 1-inch cubes
2 cups olive oil
1 tablespoon salt
3 tablespoons olive oil
1 onion, diced
1 teaspoon salt
1 clove garlic, finely chopped
1 red chile, minced
½ teaspoon smoked paprika
1 (14 ounce) can whole peeled tomatoes, drained
¼ cup mayonnaise

Steps:

  • Combine potatoes, 2 cups olive oil, and 3 teaspoons salt in a large cold skillet. Heat on low and cook until potatoes are softened, 12 to 15 minutes. Increase heat to high and fry until golden, 5 to 6 minutes. Drain on paper towels.
  • Heat 3 tablespoons olive oil in a large saucepan over medium heat. Cook and stir onion with 1 teaspoon salt in the hot oil until onion has softened, 3 to 4 minutes. Add garlic, chile, and smoked paprika; simmer for 1 to 2 minutes. Stir in tomatoes and return to a simmer. Transfer tomato mixture to a blender, cover, and puree until tomato sauce is smooth.
  • Serve patatas bravas with tomato puree and and mayonnaise for dipping.

  • To make the allioli: In a small saucepan combine the garlic cloves and olive oil and bring to a simmer over medium heat. Cook for 5 to 7 minutes, or until the garlic is tender and honey gold (occasionally tilt the pan as needed to keep the garlic submerged–even off the heat the olive oil should be hot enough to keep cooking it). Watch the garlic carefully so that it does not overcook. Lift the garlic cloves from the oil with a slotted spoon and set aside on paper towels to cool. Reserve the garlic oil for another use (1 tablespoon will be used later for the allioli).
  • In a small food processor fitted with the metal blade, puree the garlic cloves, mayonnaise, lemon juice, and 1 tablespoon of the garlic oil. Taste, season with salt, and pulse to mix. Scrape the allioli into a lidded storage container and chill for up to 3 days. You should have about 1 cup allioli.
  • To make the filling: In a large non-stick skillet heat the olive oil over medium-high heat. Add the onion, and cook until softened. Then add the ground beef and pork, and cook, breaking the meat up into small pieces with the edge of a wooden spoon, until no longer pink and most of its natural liquid has evaporated. Add the grated tomato, paprika, garlic, salt, and cayenne and continue cooking until the remaining liquid has absorbed/evaporated. Set aside to cool completely.
  • To make the potatoes: Add the cubed potatoes to a pot and cover with cold water by at least an inch. Salt generously and bring to a boil over high heat, being careful it doesn’t boil over (lower the heat as needed). Boil the potatoes until they are easily pierced with a fork, drain and then return to the pot off the heat. Add the olive oil and mash the potatoes with a potato masher until smooth. Adjust seasoning if needed. Let the potatoes cool slightly and then mash in the egg (you don’t want the potatoes super hot or else the egg will cook). Set aside to cool to room temperature.
