Didn't think you could manage a soufflé? Try this simple step-by-step recipe and conquer a classic

Provided by Good Food team

Categories     Brunch, Dinner, Lunch, Main course, Side dish, Starter, Supper

Time 45m

Number Of Ingredients 7

50g butter, plus extra for greasing
25g breadcrumbs
50g plain flour
1 tsp mustard powder
300ml milk
4 eggs
100g grated extra-strong cheddar (blue cheese, goat's cheese and smoked cheeses also work well)

Steps:

  • Preparing the soufflé dish: Heat oven to 200C/fan 180C/gas 6 and place a baking sheet on the middle shelf. Butter a 15cm soufflé dish generously, then sprinkle in the breadcrumbs and rotate the dish to ensure the butter is evenly coated. Tip out any excess breadcrumbs.
  • Making a thick white sauce: In a pan, melt the butter over a medium heat; stir in the flour and mustard. Cook, stirring, for 1 min. Take off the heat and gradually stir in the milk, mixing it in thoroughly before adding more. Return to the heat and stir continuously until very thick (around 10 mins). Transfer to a bowl and allow to cool. Crack the eggs, placing the whites into a clean bowl and stirring the yolks into the sauce. Stir in cheddar and season well.
  • Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.
  • Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a 'top hat' effect; this ensures the soufflé rises above the rim and doesn't stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.
  • EQUIPMENT: 15cm soufflé dish, saucepan, 2 large mixing bowls, wooden spoon, spatula, baking sheet, large metal spoon, measuring jug, grater, electric whisk, cutlery knife.

Categories     appetizer

Time 50m

Yield 4 servings

Number Of Ingredients 11

4 tablespoons softened butter
2 tablespoons finely grated Parmesan
3 tablespoons flour
1 cup hot milk
1/4 teaspoon paprika
Pinch nutmeg
1/2 teaspoon salt
1/8 teaspoon white pepper
4 egg yolks
5 egg whites
1 cup coarsely grated Swiss cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter a 6-cup souffle or straight-sided baking dish with 1 1/2 tablespoons butter. Dust the interior of the dish with the Parmesan and knock out the excess.
  • In a large saucepan, melt the remaining butter over medium-high heat. Stir in the flour and cook for 2 minutes, stirring constantly, until the butter and flour foam and froth. Remove the pan from the heat and beat in the hot milk, then simmer over medium heat and stir slowly until thick, about 1 to 2 minutes. Remove the pan from the heat and whisk in the seasonings, then the egg yolks, 1 by 1.
  • Whip the egg whites to stiff, shining peaks, then whisk 1/4 of them into the sauce to lighten it. Delicately fold the remaining egg whites into the sauce, alternating with the grated Swiss cheese.
  • Turn the souffle mixture into the prepared dish and set in the oven. Reduce the heat to 375 degrees F and bake until the souffle has puffed 1 or 2-inches above the rim and has browned on top, about 25 to 30 minutes. Serve immediately.

EASY CHEESE SOUFFLES

Easy Cheese Souffles image

Doesn't it feel great to eliminate a step in a classic recipe and have the new one turn out better? I was actually working on something I was going to call 'cheesecake souffle,' and since I was adding cream cheese to the base, I decided to skip the classic white sauce, and simply smear everything together.

Provided by Chef John

Categories     100+ Breakfast and Brunch Recipes     Eggs

Time 32m

Yield 2

Number Of Ingredients 11

2 tablespoons melted butter
2 tablespoons white sugar, or as needed
2 large eggs
1 tablespoon white sugar
1 tablespoon all-purpose flour
¼ teaspoon salt
½ teaspoon vanilla extract
1 teaspoon lemon zest
2 ounces cream cheese, softened
⅓ cup shredded Cheddar cheese
1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Brush butter on the bottom and up the sides of two 5 1/2-ounce ramekins. Scoop in some sugar; rotate ramekins to coat while pouring most of the sugar back into its container. Place ramekins on a shallow baking pan.
  • Separate eggs between 2 bowls. Add sugar, flour, 1/4 teaspoon salt, vanilla extract, lemon zest, cream cheese, and Cheddar cheese to the yolks. Mix the souffle base with a spatula until sugar and flour disappear.
  • Sprinkle a pinch of salt over the room-temperature egg whites. Beat with a whisk until soft peaks form; peaks should hold their shape but not be stiff or dry. Stir and fold 1/2 of the egg whites into the souffle base until combined. Gently fold the rest of the egg whites into the batter.
  • Fill ramekins up to the lip with the batter.
  • Bake in the preheated oven until puffed and browned, about 12 minutes. Serve immediately.

SIMPLE CHEESE SOUFFLE

Simple Cheese Souffle image

Crispy on the outside, light and moist in the center, this cheese souffle cooked in an enormous copper pot, and accompanied by nothing more than a green salad and a crusty baguette, is an excellent choice for a dinner party.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes

Number Of Ingredients 16

4 tablespoons unsalted butter, room temperature
4 teaspoons grated Parmesan cheese
4 teaspoons dry breadcrumbs
4 ounces Jarlsberg cheese
2 ounces cheddar cheese
3 ounces saga blue cheese
3 ounces brie cheese
1/4 cup all-purpose flour
3 teaspoons Dijon mustard
3/4 cup plus 2 tablespoons whole milk
1 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
6 large egg yolks
12 large egg whites
1/4 teaspoon freshly grated nutmeg

Steps:

  • Heat oven to 425 degrees. Place rack in center. Generously butter bottom and sides of a 2-quart souffle dish with 1 1/2 tablespoons of unsalted butter. In a small bowl, mix together Parmesan cheese and breadcrumbs, and sprinkle in dish, swirling to thoroughly coat the bottom and sides.
  • Grate Jarlsberg and cheddar cheeses into a small bowl. Cut Saga blue and brie into small chunks. Combine, and set aside.
  • Melt the remaining 2 1/2 tablespoons of butter in a large saucepan over low heat. Whisk in flour and mustard, and cook, whisking constantly, for 3 to 5 minutes. Slowly whisk in milk, and cook until thick and smooth, an additional 3 to 4 minutes. Remove from heat, and season with salt, pepper, and cayenne pepper. Pour souffle base into a large bowl. Whisk in egg yolks a few at a time until smooth. Stir in cheese until well incorporated.
  • In the bowl of a heavy-duty electric mixer fitted with the whisk attachment, whip 12 whites on medium-low speed until foamy. Increase the speed to high, and continue whisking until stiff peaks form, about 4 minutes.
  • Quickly and gently fold the egg whites and nutmeg into the souffle base just until incorporated. Pour into souffle dish, and bake for 30 to 35 minutes. Serve immediately.

BASIC CHEESE SOUFFLE

Basic Cheese Souffle image

The mystery of this classic dish isn't that mysterious. It also isn't that hard! Learn how to make the most basic and delicious souffle!

Provided by Nick

Categories     Entree

Time 1h

Yield Serves 4-6.

Number Of Ingredients 7

4 Tablespoons butter, plus a bit for the dish
1/4 Cup all-purpose flour
1 1/2 Cups warm (but not hot) milk
6 eggs, separated
Pinch of Salt and Pepper
Pinch of Cayenne (optional)
1 Cup total of grated cheese. I used about 1/2 Cup Parmesan and 1/2 Cup Pepperjack

Steps:

  • 1) Make sure to prepare all the ingredients before starting to mix together the souffle. When separating the eggs, do it one egg at a time and make sure not even a single drop of yolk gets in your egg whites.
  • 2) Add butter to a saucepan over medium-high heat until butter is melted and then whisk in your flour. Cook for three or four minutes, whisking constantly.
  • 3) Slowly whisk your milk into the roux (flour and butter). Work slowly so no lumps form in the sauce. It helps if your milk is warm for this so feel free to microwave it quickly.
  • 4) Once your milk is whisked in, continue to cook the sauce so it thickens. Add your grated cheese and spices to the sauce.
  • 5) Whisk about 1 cup of the hot cheese sauce into your whisked egg yolks. Go slowly so your yolks slowly rise in temperature. Once that's done, whisk your yolk mixture back into your cheese mixture.
  • 6) When you start to whisk your egg whites, make sure your bowl and whisk are VERY clean. If you're using the same whisk that you used for your yolks, make sure it's sparkling clean. Even a single drop of fat (yolk) will kill your whites.
  • 7) Beat the whites until they form stiff peaks, about 5 minutes if you're a good whisker.
  • 8) Now the hard part. Take about 1/6 of your whites and stir them into your cheese base. Don't worry about maintaining volume at this point. This will just lighten the base a bit.
  • 9) Now add the rest of your egg whites and gently FOLD the whites into the sauce. Use a flat spatula and gently fold the base over the whites. Don't stir it in or you'll destroy the volume in the egg whites.
  • 10) As soon as the mixture is combined, pour it into a buttered dish (or individual ramekins) and bake for 30 minutes (15-20 with ramekins) at 375 degrees.
  • 11) Test the middle of the souffle to make sure it's cooked through and serve immediately.
