- Preheat oven to 400 degrees.
- Combine flour, baking powder, salt and sugar in a large bowl. Mix well.
- Add butter or margarine. Mix well.
- Add remaining ingredients. Mix well.
- Drop by teaspoonfuls on cookie sheet.
- Bake in preheated oven 12 minutes.
EASY KIDS' RECIPE FOR FLUFFY BANANA COOKIES
I should rename these to the Houdini cookies, with how fast they vanish from my kitchen. Very fluffy and delicious. My daughter just turned one and loves to help make these. She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these. The recipe originated as my grandmother's banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I tossed them in as cookies and we all agreed it came out better this way.

- Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
- Place bananas, flour, 1/2 cup sugar, butter, walnuts, egg, baking soda, and salt in a bowl. Mix until well combined. Drop 3 tablespoonfuls of dough 2 to 3 inches apart onto baking sheet. Sprinkle 1 tablespoon sugar on top.
- Bake in the preheated oven until golden brown and edges are set, 15 to 20 minutes.

- Heat oven to 375°F
- In large bowl, stir banana, 1/3 cup butter, the cream cheese, vanilla and egg until well blended.
- Add cookie mix and flour; stir until soft dough forms.
- With medium cookie scoop or by heaping tablespoonfuls, scoop dough 2 inches apart onto ungreased cookie sheets.
- Bake 7 to 9 minutes or until edges begin to brown.
- Cool 2 minutes; remove from cookie sheets to cooling rack.
- Cool completely, about 30 minutes.
- In large bowl, beat filling ingredients with electric mixer on low speed until blended.
- Beat on high speed about 2 minutes or until lightly and fluffy.
- To make each sandwich cookie, spread about 1 tablespoon filling on bottoms of 16 cookies.
- Top each with one of the remaining cookies; gently press cookies together.
- Sprinkle tops of sandwich cookies with powdered sugar.
- Store between sheets of waxed paper in tightly covered container in refrigerator.

- Heat oven to 350°F. In medium bowl, stir together cake mix, pudding mix, oil and eggs until well combined. Fold in banana.
- Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls about 2 inches apart.
- Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheets to cooling rack. Cool 20 minutes.

We sandwiched delicious banana cream cheese frosting between cookies made with Betty Crocker Yellow Cake and sugar cookie mixes for a lip-smacking treat.

- Heat oven to 375°F. In small bowl, place 1/2 cup of the dry cake mix; set aside.
- In medium bowl, stir together cookie mix, remaining 1/2 cup cake mix, 1/2 cup butter and the egg until soft dough forms. Shape dough into 20 (1 1/2-inch) balls. Roll in reserved cake mix, coating completely. On ungreased cookie sheet, place balls 2 inches apart.
- Bake 8 to 10 minutes or just until set. (Watch closely to prevent cookies from getting too crispy and overbaked.) Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
- In medium bowl, beat cream cheese, 6 tablespoons butter, the vanilla and dry pudding mix with electric mixer on medium speed until blended. Gradually add powdered sugar, beating until frosting is light and fluffy.
- For each sandwich cookie, spread 1 1/2 rounded teaspoons frosting on bottom of 1 cookie. Top with second cookie, bottom side down; gently press together. Roll edges of cookies in chocolate chips.
