BASIC CHICKEN CHOW MEIN RECIPE
I couldn't find a decent basic chow mein recipe on the internet or in books, so i experimented and came up with a delicious and simple chicken chow mein recipe which is easy and cheap to make.

Steps:
- Heat some oil in a pan, a wok is best to use.
- Cut the chicken breast into small slices or cubes and cook on a low heat until brown.
- Add the beansprouts and cook until soft. Then add some soy sauce.
- Add the diced onions and cook until transparent.
- Lastly add the egg noodles and add soy sauce. Cook for 5 minutes and then serve.

BASIC OLD FASHIONED CHOW MEIN
Steps:
- slice celery-put on paper towel-dry repeat with remaining vegetables, putting each in its own pile heat oil in wok until almost smoking add garlic and salt, cook until garlic browns-remove add celery and cook on high about 30 seconds push up sides of wok add onions cook another 30 seconds-push up wok repeat with green pepper and then mushrooms-add more oil if necessary add water and soy sauce-reduce heat to medium-cover cook 2 minutes more uncover, add bean sprouts push vegetables up the side of wok, add corn starch dissolved in water to the boiking liquid on bottom of wok stir all together serve on fluffed bed of rice with chow mein noodles add onion, cook 30 seconds

Steps:
- In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve with rice; sprinkle with chow mein noodles.

AUTHENTIC CHINESE PORK CHOW MEIN
No need to order in chow mein when you can make it yourself, this is just as good if not even better than any Chinese restaurant or take-out -- if you prefer more flavor then add in more soy sauce --- if desired after the pork is finished browning you may add in fresh minced garlic and stir for 2 minutes, this is only optional --- you will love this!

Steps:
- Cut meat into thin strips.
- Combine 2 tbsp cornstarch with sugar, blend in 1 tbsp soy sauce and 2 tbsp oil; mix to blend.
- Pour over pork strips; toss well to coat, marinade in mixture for 20 minutes.
- In a wok or large saute pan heat 2 tablespoons shortening; brown the meat lightly on all sides in hot shortening (after browning the pork you may add in chopped garlic and saute for 2 minutes if desired).
- Add remaining 4 tbsp soy sauce and 1-1/2 cups water; simmer, covered on low heat for 45 minutes.
- Add in the celery and onions; simmer for 15 minutes more.
- In a small bowl, blend in remaining cornstarch with 1/4 cup water; stir into meat mixture.
- Add molasses, water chestnuts, bean sprouts and mushrooms; heat thoroughly.
- Season with salt and pepper.
- Garnish with chopped green onions and toasted almonds.
GROUND BEEF CHOW MEIN

- Cook rice according to package directions., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add the broth, celery, bean sprouts, water chestnuts, mushrooms, pimientos, soy sauce and ginger. Bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. , In a small bowl, combine cornstarch and water until smooth. Gradually stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.
