Steps:
- In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

BASIC ITALIAN TOMATO SAUCE
This is a great go-to tomato sauce and can be doused over any kind of pasta. If you have it on hand, toss in some fresh basil for a great aroma, and when the sauce is finished, add a little butter to make it more luxurious. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Steps:
- Heat a medium saucepan over medium heat. Swirl around the olive oil to coat the pan, and when the oil is hot, add the garlic and red pepper flakes. Stir constantly for 30 seconds, just long enough to release the garlic's fragrance and transform it slightly from its raw state. Don't cook it to golden.
- Raise the heat to high and stir in the tomatoes and salt. Bring to a boil, reduce the heat, and simmer, uncovered, for 30 minutes. In the last 5 minutes of cooking, add the basil sprig, if using. Remove the basil before serving and swirl in the butter, if using.

BASIC TOMATO SAUCE
This basic tomato sauce satisfies my pasta-loving husband much more than any store-bought kind. For a change of pace, I add ground beef or Italian sausage. It's also good with black olives, mushrooms and green peppers. -Jennifer Stephens, Pearland, Texas

SIMPLE BASIC PASTA SAUCE
A simple, basic, yet very tasty pasta sauce. I like to cook My Turkey Italian Meatballs (from this site) or other meats in it to add another layer of flavor. Add any herbs you like, as well. You can add tomatoes whole if you like a real chunky sauce, or blend them in a blender first to make a smooth sauce.

QUICK, EASY, CREAMY, TOMATO PASTA SAUCE
A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

HOW TO MAKE A BASIC TOMATO SAUCE - FOOD NETWORK
From foodnetwork.com
Estimated Reading Time 2 mins
- Add Olive Oil and Onions. Use a wide skillet or a wide-bottomed pot. Start with plenty of olive oil and add diced onion. Sauté until translucent and very soft.
- Season. Season the onions with salt so they release their liquids. This will help to bring out the natural sweetness of the onions. Take your time with this — it’s the first step in layering good flavor.
- Crush Tomatoes. Open a can of whole, peeled tomatoes and crush them with clean hands. The pros like to use San Marzano tomatoes for the best flavor.
- Add the Tomatoes and Simmer. Add the tomatoes to the garlic and onions. Taste and season. Simmer for about 20 minutes until the flavors come together.
- Add Flavor and Spice. We're making a basic tomato sauce here. If you want to mix it up, try adding chili flakes, capers or olives while it simmers.
- Enjoy! And those are the basics for homemade tomato sauce. If you like a smoother sauce, just purée in a blender when you're done cooking. Use it with pasta or as an ingredient in stews like cacciatore.
