BASIL FOCACCIA

Basil Focaccia image

This is my mother-in-law's recipe. It's easy and delicious. You can make it with an olive oil topping or tomato sauce topping.

Provided by Gloria

Categories     Flat Bread

Time 1h50m

Yield 8

Number Of Ingredients 9

3 cups all-purpose flour
3 tablespoons white sugar
1 (.25 ounce) package instant dry yeast
1 teaspoon salt
1 ½ cups warm water (115 degrees F/46 degrees C)
1 tablespoon olive oil, or as needed
⅛ teaspoon garlic salt, or to taste
½ cup grated Parmesan cheese
1 tablespoon dried basil

Steps:

  • Whisk together 3 cups flour, sugar, yeast, and salt in a mixing bowl. Add warm water and mix well. If dough is too sticky, mix in another 1/2 cup flour.
  • Oil a bowl. Fill another, larger bowl halfway with hot water.
  • Turn dough onto a floured surface and knead until smooth. Form into a ball and place in the oiled bowl, turning to coat all sides with oil. Place the oiled bowl in the bowl of hot water. Cover and let rise until doubled in size, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Oil a 9x13-inch baking pan.
  • Turn dough out onto a floured surface and let rest for 5 minutes. Transfer dough to the prepared baking pan. Press and dimple with your fingers to even out the thickness and work it into the corners to fit. Brush lightly with olive oil, then sprinkle with garlic salt, Parmesan cheese, and finally basil.
  • Bake in the preheated oven until deep golden brown, 25 to 30 minutes. Cut into 8 squares.

FOCACCIA BIANCA WITH HERB OIL

Focaccia Bianca with Herb Oil image

Provided by Peter Reinhart

Categories     side-dish

Time 12h35m

Yield 1 sheet pan or 2 to 3 round focaccia

Number Of Ingredients 19

3 tablespoons olive oil
White Master Dough, recipe follows
1/2 to 3/4 cup Herb Oil, plus more as needed, recipe follows
2 cups freshly grated Parmesan, Romano or Asiago cheese (optional)
4 1/3 cup unbleached bread flour (567 grams)
1 3/4 teaspoons kosher salt (11 grams)
1 1/4 teaspoons instant yeast (4 grams)
2 cups water, cool (about 60 degrees F) (454 grams)
2 tablespoons olive oil (28 grams)
1 cup olive oil
1 tablespoon dried basil
1 tablespoon dried parsley
1 teaspoon dried oregano
1/2 teaspoon fresh rosemary leaves or dried
1/2 teaspoon dried thyme
1 teaspoon granulated sugar
1/2 teaspoon red pepper flakes, optional
1/4 teaspoon hot or mild paprika, optional
1 teaspoon kosher salt or coarse sea salt

Steps:

  • Five hours before baking the focaccia, line a rimmed baking sheet with parchment paper or a silicone baking mat and oil the bottom and interior sides with 3 tablespoons olive oil. Begin panning and dimpling the White Master Dough, at 20-minute intervals, dipping your fingers in olive oil to keep them from sticking to the dough as you work. After three to four rounds of dimpling and resting, the dough will have relaxed enough to cover the whole pan. At this point, rub the remaining 1 teaspoon of oil over the dough and cover the pan loosely with plastic wrap. Then allow 3 hours for the final rise.
  • When the dough reaches the rim of the pan (or doubled in size), position a rack in the center of the oven and preheat to 475 degrees F (425 degrees F for convection). Carefully peel off the plastic wrap, drizzle the dough with 2 tablespoons herbed olive oil and sprinkle with flaky sea salt. Bake for 15 to 18 minutes, rotating the pan halfway through. Remove from the oven and sprinkle with 2 cups Parmesan or Romano cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Transfer the focaccia to a cutting board and let rest 3 to 5 minutes before serving.
  • Bake on the middle shelf of the oven for 8 minutes. Then rotate the pan 180 degrees and bake 9 to 12 minutes longer, or until the top and the undercrust are golden brown. If using cheese, remove the pan from the oven when the focaccia looks done and sprinkle it with the cheese. Return the pan to the oven for 2 minutes and then remove it.
  • Transfer the baked focaccia to the stovetop or to a heatproof counter. Using an offset spatula or bench blade, carefully slide it around the edge, between the crust and the side of the pan, and then lift the focaccia out of the pan and slide it onto a cutting board. Drizzle any oil remaining in the baking pan over the focaccia. If the parchment paper or baking mat is still clinging to the focaccia, remove it. Let cool for 5 minutes, then cut into 3- or 4-inch squares and serve.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl, combine the flour, salt and yeast. Add all of the water and mix on slow speed for 30 seconds or stir with a large spoon to form a coarse, shaggy dough. Add the 2 tablespoons of the olive oil, increase the speed to medium (or continue mixing with the spoon or with wet hands), and mix for another 30 to 60 seconds to make a wet, coarse, sticky dough. It may seem too wet to form a cohesive dough at this stage. Let the dough rest for 5 minutes to fully hydrate.
  • Increase the mixer speed to medium-high (or continue mixing by hand) and mix for another 30 to 60 seconds to make a smooth, sticky dough. It should be soft, supple and sticky to the touch, and offer a little resistance when pressed with a wet finger.
  • Use 1 teaspoon of the extra oil to make a 15-inch-diameter oil slick on the work surface. Rub some oil on a plastic bowl scraper and on your hands and use the scraper to transfer the dough to the oil slick. Stretch and fold the dough. Cover the dough with a bowl and let it rest for 2 to 5 minutes. Repeat the stretch and fold (rub more oil on the work surface as needed), cover the dough, and let it rest for 2 to 5 minutes. Then repeat the stretch and fold, cover with the bowl, and again let it rest for 2 to 5 minutes. Perform a fourth and final stretch and fold to make a smooth ball of dough. The dough will have firmed up after each stretch and fold and will now be soft, smooth, supple, and somewhat sticky but firm enough to hold together when lifted. Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and refrigerate for 12 to 72 hours.
  • In a bowl, whisk together the oil, basil, parsley, oregano, rosemary, thyme, garlic and pepper flakes and paprika (if using), gradually adding the salt and whisking the oil to bring the salt to the surface before tasting. Store in the refrigerator in a container with a lid, where it will keep for at least 6 months. Makes 1 cup.

DELICIOUSLY EASY GARLIC HERB FOCACCIA

Deliciously Easy Garlic Herb Focaccia image

Make focaccia in an hour. Or a little longer if your bread machine doesn't have a pizza cycle. Also great as a pizza dough! I personally use 2 cups unbleached bread flour and 1 cup whole wheat flour. As with most recipes I have created - they are a base on which to build.

Provided by Amy Beth McMaster

Categories     Bread     Yeast Bread Recipes     Flat Bread Recipes

Time 1h

Yield 12

Number Of Ingredients 14

1 cup very warm water
3 tablespoons very warm water
1 tablespoon extra-virgin olive oil
3 cups bread flour
1 teaspoon white sugar
1 teaspoon salt
2 teaspoons active dry yeast
6 cloves garlic, crushed, or more to taste
⅓ cup extra-virgin olive oil
1 cup shredded Parmesan cheese
1 teaspoon dried parsley
½ teaspoon onion powder
½ teaspoon herbes de Provence, or more to taste
salt and freshly ground black pepper to taste

Steps:

  • Place 1 cup plus 3 tablespoons water, 1 tablespoon olive oil, bread flour, white sugar, 1 teaspoon salt, and active dry yeast, respectively, in the pan of a bread machine. Select pizza cycle; press Start.
  • Combine crushed garlic and 1/3 cup olive oil in a small bowl. Set aside to let it steep, about 30 minutes.

  • Bake in the preheated oven until golden brown, 20 to 25 minutes. Remove from the oven and transfer from the baking sheet to a rack. Let cool, 5 minutes. Cut into squares with a pizza cutter.

BASIL-PARMESAN FOCACCIA WITH FRESH TOMATOES

Basil-Parmesan Focaccia With Fresh Tomatoes image

Provided by Joanna Pruess

Categories     pizza and calzones, appetizer

Time 2h35m

Yield Eight to 10 generous first-course servings

Number Of Ingredients 16

1 medium onion, peeled and finely chopped
1 package rapid-rise or regular active dry yeast
1/2 cup warm water between 105 and 115 degrees
3 cups unbleached all-purpose flour
6 tablespoons olive oil
1 cup freshly grated Parmesan cheese
1/4 cup finely chopped fresh basil
2 teaspoons salt
2 teaspoons coarse or kosher salt
5 tablespoons olive oil
2 large cloves garlic, peeled and minced
1/2 cup finely chopped fresh basil
2 teaspoons salt
Freshly ground black pepper
3 to 4 large tomatoes, thinly sliced
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Place the chopped onion in a bowl and pour boiling water over it. After 15 seconds, drain and blot dry with paper towels. Set aside.
  • Combine the yeast with the half-cup of water. Add one and a half cups of the flour and mix. Turn the dough out on a lightly floured board and knead it for about eight minutes until it is smooth and elastic. Pour one tablespoon of the olive oil in a bowl, add the dough, turning once to cover with the oil. Drape a lightly dampened towel over the bowl and let the dough rise in a warm, draft-free spot until doubled in bulk. This will take one and a half hours with rapid-rise yeast, or three hours with regular yeast.
  • Punch down the dough, add the onion, a quarter-cup of water, three tablespoons of olive oil, the cup of Parmesan cheese, the remaining flour, the basil and two teaspoons salt, and mix. Turn the dough out onto a lightly floured board and knead it for eight minutes, or until it is smooth and elastic, adding small amounts of additional flour if needed.
  • Preheat the oven to 400 degrees.
  • Roll the dough into a large circle measuring about 15 inches in diameter and about a quarter-inch thick, and transfer it to a heavy cookie sheet. Using your fingertips, make several indentations in the dough, so the surface is irregular. Brush with two tablespoons of olive oil and sprinkle on two teaspoons of coarse salt. Bake in the top half of the oven for 20 to 25 minutes, or until the focaccia is golden brown and crisp. (You may prepare the recipe ahead to this point, but leave the baked focaccia at room temperature.)
  • To prepare the topping, combine the olive oil, garlic, basil, salt and pepper. Lay the sliced tomatoes in an overlapping pattern on the focaccia and spoon the olive-oil mixture over them. Return the focaccia to the oven for two minutes. Sprinkle with three tablespoons of Parmesan and return the focaccia to the oven just until the cheese is melted and lightly browned, about one to two minutes. Remove from the oven and cut into large slices. Serve.

BASIL AND OLIVE OIL FOCACCIA

Basil and Olive Oil Focaccia image

Make and share this Basil and Olive Oil Focaccia recipe from Food.com.

Provided by joiekc

Categories     Breads

Time 6h

Yield 2 large bread, 4 serving(s)

Number Of Ingredients 13

2 teaspoons dried yeast
2 teaspoons sugar
300 -310 ml of lake warm water
250 g bread flour
250 g plain flour, and more
flour, for dusting
2 teaspoons salt
1 teaspoon basil (dried or fresh)
3 tablespoons olive oil
1 tablespoon extra virgin olive oil
1 garlic clove
salt and pepper
lemon juice

Steps:

  • Dissolve the yeast and sugar in half of the water.
  • On a large surface or large bowl, make a pile of the flours and salt with leave a well in the centre.
  • Pour all the dissolved yeast mixture into the well and mix together the flour and water with a fork or fingers. Work from the centre and outward. Add the other half of the water when all the mixture gas soaked up. (more or less water could be used).
  • Dust your hands and the surface with some flour. Kneading, rolling, pushing and folding for about 5mins.
  • Push the dough into a round shape and dust it over with some extra flour. Put it in a large bowl and score the dough top with a knife.
  • Cover with clingfirm, leave it to prove for about 40mins to one and a half hour. (Now it is very important to leave the dough in a warm area, I normally leave it under the sun light or I will bring it into the shower with me -- wherever is warm and moist.) When you see the dough has double its size then it is done.
  • Now make the topping with a glove of garlic and a handful of basil ( I used tried Basil). Add together with about 3 tbsp or more of Olive oil, a pinch of salt and pepper and bit of lemon juice.
  • After the dough has double its size then start kneading and punching for a min -- (just think of whoever you hate at that time).
  • Split the dough in half, roll each dough to an oval shape about 1/2" thick. Place it on a flour dusted baking tray and smear the basil topping on both tops. Push fingers deeply into doughs to make holes, allowing the flavor to penetrate.
  • Leave it to prove the second time for about 45mins or when it become around 3cm high.
  • Gently place the baking tray in the middle of the oven ( I baked them one by one, or bake them all together if one single baking tray is big enough) I bake them for about 10mins with 240°C You will know when they turn golden brown.
  • Give the bread a good drizzle of some E.V. Olive Oil right after they are out of the oven. Let it cool and enjoy.
