HEARTY GERMAN FARMER'S BREAKFAST (BAUERNFRUHSTUCK)
Great hearty rib-sticking meal for breakfast, lunch or supper! Very popular in my household. This is a versatile one-pan recipe-- you can sub or add ingredients as desired-- try ham, mushrooms, tomatoes, or chives. (Note: For an equally delicious simplified version of Bauernfruhstuck using frozen Potatoes O'Brien, please see my recipe #278230). Delicious! P.S. Any leftovers you have make a wonderful breakfast the next day--reheat a few seconds in the microwave (although I've been known to eat this cold), and serve with toast or stuff into a flour tortilla for a quick breakfast on-the-go.

Steps:
- In a skillet over low heat, cook bacon until crisp. Remove to paper towel. Reserve 2 tablespoons drippings; add potatoes, green pepper, onion, salt and pepper. Cook and stir over medium heat until the potatoes are golden brown.
- Stir in eggs and milk, and cook and stir until eggs are almost set, about 2 minutes.
- Reduce heat to low. Add cheese and bacon, stirring gently until heated through and eggs are set.
- Serve immediately.
- Leftovers are tasty the following day. Good wrapped in a flour tortilla for a breakfast burrito, breakfast on the go.
- Serves 4 to 6.

Steps:
- Fry the bacon until crisp. Remove and drain on paper towel. Remove bacon fat from pan, add the butter and saute the chopped onion until soft.
- Add the potatoes and brown lightly.
- Beat the eggs lightly and add the salt, pepper, milk and finally the bacon (chopped).
- Pour the egg mixture over the onions and potatoes and stir occasionally until cooked.
BAUERNFRUHSTUCK, METZGER STYLE
If you search the web, you will find dozens of "Bauernfruhstuck" (Farmer's Breakfast) recipes. The wonderful thing is that most of them are different. In a farm household, breakfast fortifies the field workers for a hard day's work in the fields. My version has its roots in my mother's heritage as the daughter of an German immigrant farmer in Nebraska in the first half of the 20th Century. I have modified it to use at hand items and leftover potatoes. Essen Sie und genieen Sie!

Steps:
- Cut the baked potatoes into 1/2 inch cubes without removing the skins.
- Saute the onions and peppers in two tablespoons of olive oil for 4- 5 minutes in a 12-inch skillet.
- Remove the onions and peppers and set aside.
- Cook the brown and serve sausage in the same pan.
- Remove the sausage and set aside.
- Put the potatoes in the pan and fry on one side for 5 minutes, turn, and fry on other side for 3 minutes.
- Return the vegetables and sausage to the pan.
- Whisk the eggs, milk, and Adobo together, add to the pan, and stir while cooking.
- When the eggs firm up, add the grated cheese, stir several times, and remove from the heat.
- Serve at once with breads on the side.
- Note: Adobo is a commercial mixture of salt, pepper, garlic, and other spices.
- Substitution: 1 teaspoon of garlic salt and 1/4 teaspoon of pepper.

- Lay out 6 tortillas on 2 cookie sheets.
- Evenly distribute the scrambled eggs, then sausage, the fried onion/pepper mixture, cheese and top with remaining tortillas.
- Bake in a hot oven-450 is good, for 5 minutes-you want the tortillas crisp and the cheese all melty.
- Remove and plate up with salsa, sour cream and cilantro.

EASY BAUERNFRUHSTUCK (GERMAN FARMER'S BREAKFAST SKILLET)
Here's a quick and simplified version of my Hearty German Farmer's Breakfast - Bauernfruhstuck recipe #120363, and just as delicious! Uses pre-cut frozen potatoes (I use the Ore Ida brand Potatoes O'Brien), onions, bell peppers, and precooked sausage, ham or bacon. Leftovers (if any) are awesome, and may be eaten either warm or cold. Makes a great breakfast wrap, too. Serve with some fresh fruit and your favorite beverage for a delicious breakfast, lunch or supper.

Steps:
- Heat skillet on medium heat with the olive oil.
- Add frozen potatoes in a single layer. Cook 6 minutes, turn, and continue cooking another 6 minutes.
- Reduce heat to medium-low. Stir in the chopped onions, bell peppers, and the butter. Cook for 8-10 minutes, stirring often and scraping the bottom of the pan, until onions are softened and peppers are almost done.
- Reduce heat to low; stir in the chopped sausage (or ham or bacon), and the tomatoes, if using.
- In a small bowl whisk eggs, milk, and the salt & pepper together. Add the chives, if using.
- Pour egg mixture over potatoes, stirring to incorporate. Cook for a few minutes more, stirring occasionally, until eggs are done.
- Sprinkle with cheese and snipped chives.
- Serve with fresh fruit and your favorite beverage.
- Note: Leftovers, if any, are wonderful--makes a tasty breakfast wrap!
