3 pounds ground beef
3 Tablespoons ketchup
2 teaspoons Worcestershire sauce
1 teaspoon Tabasco
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
2 shallots (peeled and thinly sliced)
1 teaspoon olive oil
12 brioche buns (sliced in half)
12 thin slices of sharp cheddar cheese
12 pieces of bacon (cooked and broken in half)
BBQ Sauce (See link in post)

Steps:

  • Preheat your grill to 450ºF.
  • In a large bowl, mix ground beef, ketchup, Worcestershire sauce, Tabasco, pepper, garlic powder, onion powder and salt.
  • Form into 12 patties and lay out on a baking sheet lined with parchment paper.
  • Push a shallow thumbprint into the middle each of patty. Set aside.
  • Heat a teaspoon of olive oil in a cast iron skillet.
  • Place the sliced shallots into the hot oil and cook on low heat stirring infrequently, but enough so that they don't burn.
  • Once the shallots reach a slightly darker color and become soft and pliable (about 15-20 minutes), remove them from the heat. Set aside.
  • Place the burger patties on the grill (direct high heat) and grill for 3-4 minutes per side with the grill cover down.
  • Place the cheese over the burgers for the last minute of cooking, to melt the cheese onto the burger.
  • Remove the burgers from the grill and let them sit for 10 minutes.
  • Place the sliced buns, cut side down, onto the hot grill for 30 seconds to a minute until slightly browned.
  • Place a burger into the bun, piling bacon, shallots, and BBQ sauce on top.
  • Enjoy!

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

Steps:

  • In a large bowl, combine the ground beef, garlic powder, parsley, salt, pepper, and paprika.
  • Brush the ramekin with barbecue sauce. Lay down the bacon strips, rotating clockwise, spacing evenly on the edges.
  • Place half of the beef patty on top of the bacon.
  • Press the beef patty evenly into the ramekin, leaving a small divot in the middle.
  • Place the cheddar cheese in the divot.
  • Preheat the oven to 425°F (220°C).
  • Place the second half of beef patty on top of the cheese and pat to flatten. Lay the ends of the bacon strips over the patty. Brush the remaining barbecue sauce on top.
  • Place the ramekin on a baking sheet along with the sesame bun, face down.
  • Bake for 25 minutes, or until the bacon is crisp to your liking.
  • Assemble the burger with the toasted sesame bun, lettuce and tomato.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. For the barbecue sauce:
2 tablespoons vegetable oil
1 red onion, chopped
2 cloves garlic, chopped
1 1/2 tablespoons chili powder
3/4 cup ketchup
1/4 cup apricot preserves
3 tablespoons yellow mustard
3 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
For the burgers:
2 1/2 pounds ground beef chuck
Kosher salt and freshly ground pepper
1 red onion, sliced into rings
1 tablespoon vegetable oil
6 slices monterey jack or pepper jack cheese
6 sesame seed hamburger buns, split
2 avocados, sliced

Steps:

  • Make the barbecue sauce: Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the chili powder and cook, stirring, until toasted, about 1 minute. Stir in the ketchup, preserves, mustard, vinegar, soy sauce, Worcestershire sauce and 1/2 cup water. Bring to a simmer and cook until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth; let cool to room temperature.
  • Make the burgers: Combine the ground beef and 3 tablespoons of the prepared barbecue sauce in a bowl; mix with your hands until just combined. Form the meat into six 1/2-inch-thick patties; season both sides with salt and pepper.
  • Preheat a grill to medium. Toss the onion with 1 tablespoon of the barbecue sauce and the vegetable oil. Grill (use a grill basket if you have one), turning occasionally, until lightly charred, about 8 minutes.
  • Transfer 1/2 cup of the remaining barbecue sauce to a separate bowl for brushing. Increase the grill temperature to medium high and grill the patties, brushing with the barbecue sauce and flipping occasionally, about 8 minutes for medium rare; top with the cheese during the last minute and cover to melt. Toast the buns on the grill. Serve the burgers on the buns; top with the grilled onions, avocado slices and more barbecue sauce.

2 lbs lean ground chuck or 2 lbs ground round
1 cup white breadcrumb (2 slices white bread)
2 cups sharp cheddar cheese, coarsely shredded (8 ounces)
2 eggs
1 large sweet onion, chopped
8 tablespoons barbecue sauce, divided use
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • Preheat the oven to 350°F
  • In a large skillet, cook the bacon over medium heat until browned. Remove the bacon from the skillet, drain, and crumble. In the remaining fat in the skillet, saute the onion until lightly browned, about 5 minutes.
  • In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, reserved bacon pieces, 4 tablespoons of the barbeque sauce, worcestershire sauce, salt, and pepper.
  • Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 4 tablespoons of barbeque sauce.
