Steps:
- Preheat your grill to 450ºF.
- In a large bowl, mix ground beef, ketchup, Worcestershire sauce, Tabasco, pepper, garlic powder, onion powder and salt.
- Form into 12 patties and lay out on a baking sheet lined with parchment paper.
- Push a shallow thumbprint into the middle each of patty. Set aside.
- Heat a teaspoon of olive oil in a cast iron skillet.
- Place the sliced shallots into the hot oil and cook on low heat stirring infrequently, but enough so that they don't burn.
- Once the shallots reach a slightly darker color and become soft and pliable (about 15-20 minutes), remove them from the heat. Set aside.
- Place the burger patties on the grill (direct high heat) and grill for 3-4 minutes per side with the grill cover down.
- Place the cheese over the burgers for the last minute of cooking, to melt the cheese onto the burger.
- Remove the burgers from the grill and let them sit for 10 minutes.
- Place the sliced buns, cut side down, onto the hot grill for 30 seconds to a minute until slightly browned.
- Place a burger into the bun, piling bacon, shallots, and BBQ sauce on top.
- Enjoy!
THE BEST BACON CHEESEBURGER
While we love a grilled burger, this one is our go-to for all seasons. Instead of making a typical patty, we smash the meat in a super-hot cast-iron pan to get crispy, ruffled edges. Once you smash your burgers this way, you'll never go back! We top them with all the fixings, including our perfectly balanced special sauce. It's what we consider an iconic burger.

Steps:
- Preheat the oven to 400 degrees F.
- Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
- Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
- Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
- Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
- Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

BACON BOURBON BURGERS
In 2011 I attended the 'Chefs of the Coast' cook-off where 4 chefs battled it out cooking their own personal recipe using Four Roses Bourbon®. I thought that I could absolutely make a burger worthy of the Four Roses name and this is it. It's a savory burger that is seasoned to perfection and topped with bacon and other assorted toppings.

Steps:
- Make the barbecue sauce: Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the chili powder and cook, stirring, until toasted, about 1 minute. Stir in the ketchup, preserves, mustard, vinegar, soy sauce, Worcestershire sauce and 1/2 cup water. Bring to a simmer and cook until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth; let cool to room temperature.
- Make the burgers: Combine the ground beef and 3 tablespoons of the prepared barbecue sauce in a bowl; mix with your hands until just combined. Form the meat into six 1/2-inch-thick patties; season both sides with salt and pepper.
- Preheat a grill to medium. Toss the onion with 1 tablespoon of the barbecue sauce and the vegetable oil. Grill (use a grill basket if you have one), turning occasionally, until lightly charred, about 8 minutes.
- Transfer 1/2 cup of the remaining barbecue sauce to a separate bowl for brushing. Increase the grill temperature to medium high and grill the patties, brushing with the barbecue sauce and flipping occasionally, about 8 minutes for medium rare; top with the cheese during the last minute and cover to melt. Toast the buns on the grill. Serve the burgers on the buns; top with the grilled onions, avocado slices and more barbecue sauce.
