Homemade barbecue-crusted chicken tenders in an air fryer. Crispy on the outside, tender on the inside, and no flipping required.

3 ½ ounces barbecue-flavored pork rinds
1 cup all-purpose flour
1 tablespoon barbecue seasoning
1 egg, beaten
1 ½ pounds chicken breast tenderloins
cooking spray

Steps:

  • Preheat an air fryer to 370 degrees F (190 degrees C).
  • Place pork rinds in a food processor and pulse to the size of bread crumbs. Place in a shallow bowl. Mix flour and barbecue seasoning together in a shallow dish. Beat egg in a third shallow bowl.
  • Coat each chicken tender first in the flour mixture, then dip in beaten egg, and finally coat in pork rind crumbs.
  • Spray the basket of the air fryer with nonstick cooking spray. Arrange 1/2 of the chicken tenders in the air fryer basket, making sure none are touching. Spray the top of each tender with cooking spray. Cook until chicken is cooked through and no longer pink at the center, about 15 minutes. Repeat with remaining tenders.

But I also love recipes where each family member can customize their serving, and these flatbreads certainly allow you to do that. I'd suggest setting up a pizza bar and letting everyone make their own-which is a nice way to get the night off from cooking, too!

2 cups chopped cooked chicken
3/4 cup prepared barbecue sauce
2 prepared naan flat bread
1/2 cup shredded smoked gouda cheese
3/4 cup shredded mozzarella cheese
1/2 small red onion, halved and thinly sliced
2 tablespoons chopped fresh cilantro

Steps:

  • 1. In a medium bowl, toss together the chicken and 1/4 cup of the barbecue sauce.
  • 2. Spread half the remaining barbecue sauce on one of the flatbreads. Top with half the chicken and half each of the Gouda and mozzarella cheeses. Sprinkle with half the red onion. Gently press the cheese and onions onto the chicken with your fingers.
  • 3. Carefully place one flatbread in the air-fryer basket. Set the air fryer to 400°F for 10 minutes, until the bread is browned around the edges and the cheese is bubbling and golden brown. If not, cook for 2 minutes more. Transfer the flatbread to a plate and repeat to cook the second flatbread.
  • 4. Sprinkle with the chopped cilantro before serving.
  • VARIATIONS: Greek Chicken Flatbreads.
  • 1. Stir together 2 tablespoons extra-virgin olive oil and 1 teaspoon minced fresh garlic. Brush 2 naan flatbreads with the garlic oil. Top each with 1 cup chopped cooked chicken, 1/4 cup diced seeded plum tomato, 1/3 cup chopped artichoke hearts, 1/4 cup halved Kalamata olives, and 1/3 cup crumbled feta cheese. Follow the cooking directions for BBQ Chicken Flatbreads. Sprinkle each flatbread with 1/4 teaspoon dried oregano and 1 tablespoon chopped fresh flat-leaf parsley before serving.

1 cup shredded rotisserie chicken
1/4 cup BBQ sauce
2 store-bought flatbreads
1/2 cup shredded provolone
1/2 small red onion, cut into half-moons
1/4 cup jarred jalapeno slices
1 habanero pepper, thinly sliced
2 tablespoons ranch dressing, or to taste
1/4 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the chicken in half of the BBQ sauce to coat in a bowl. Place the flatbreads onto a baking sheet. Divide the other half of the BBQ sauce between the 2 flatbreads. Spread, leaving a slight edge all the way around the flatbreads. Top each with half of the provolone, chicken, red onion, jarred jalapenos and habanero pepper.
  • Bake until the flatbreads are golden and the cheese is melted, 10 to 12 minutes.
  • Transfer to a cutting board and drizzle over the ranch dressing. Garnish with the cilantro and slice.
