Steps:

  • LOAF: Combine meats, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and egg in a large bowl. Mix well. Mix milk and water and add to meat mixture a little at a time until smooth but firm. Shape into loaf and put into greased baking pan. Bake 30 minutes at 375℉ (190℃). SAUCE: Sauté onions in butter until golden and add all other ingredients. Bring slowly to a boil, lower heat and simmer 10 to 15 minutes. (great with ribs or chicken). After loaf has cooked for 30 minutes, pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting often with remaining sauce. Serve loaf hot in thick slices with remaining sauce. Also makes great sandwiches.

3 eggs
1/2 cup barbecue sauce, (Sweet Baby Rays®)
2 Tbs yellow mustard
1/4 cup minced onions
1 tsp garlic salt
1 tsp salt
1/2 tsp pepper
1 1/2 cups Italian bread crumbs
Additional barbecue sauce to pour over top of meatloaf

Steps:

  • Preheat oven to 375°
  • In a large mixing bowl, mix all ingredients together, except bread crumbs,
  • Once everything is mixed well, add bread crumbs and continue mixing with hands.
  • Form meatloaf into a loaf and place into a 2-3 quart oval baking dish.
  • Pour barbecue sauce over the top of the meatloaf.
  • Cover with foil and cook for 90 minutes.
  • Remove foil and let cook 15 more minutes.
  • Serve with mashed potatoes, veggies and/or salad.

2 pounds pecan wood chunks, soaked in water
½ cup unfiltered apple juice
2 tablespoons apple cider vinegar
1 ½ tablespoons bourbon whiskey
1 ½ tablespoons water
1 tablespoon Worcestershire sauce
1 tablespoon fresh lemon juice
½ cup water
⅓ cup ketchup
3 tablespoons apple cider vinegar
1 ½ tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard

Steps:

  • Combine salt, cayenne pepper, garlic powder, cumin, Mexican oregano, and thyme in a spice grinder until powdered. Set rub aside.
  • Combine beef, almond flour, bell pepper, onion, jalapeno, egg, and garlic in a bowl. Mix lightly with hands until loosely combined. Gently fold in spice rub mixture until distributed throughout.
  • Punch holes in the bottom of the aluminum foil pan and coat with grapeseed oil. Form the meat mixture into a loaf and place in the prepared pan. Place in the refrigerator to chill while preparing the smoker.
  • Preheat the smoker to 250 degrees F (120 degrees C). Place a water-filled pan under the grate where the meatloaf will be placed. Fill firebox with charcoal and 1 chunk pecan wood.
  • Place meatloaf in the hot smoker.
  • Combine apple juice, vinegar, bourbon, water, Worcestershire sauce, and lemon juice in a clean, all-purpose spray bottle. Spray the outside of the meatloaf well with apple spray every 30 minutes.
  • Refill firebox with charcoal and 1 chunk pecan wood every 45 minutes to maintain temperature; ground meat absorbs smoke very easily, so use only 1 chunk of wood at a time. Smoke meatloaf until internal temperature reaches 130 degrees F (55 degrees C), about 2 hours.
  • Combine water, ketchup, vinegar, Worcestershire sauce, paprika, mustard, lemon juice, honey, liquid smoke, ancho chile powder, red pepper flakes, and black pepper in a saucepan over medium-high heat. Bring glaze to a boil and reduce to a simmer. Cook until reduced, about 20 minutes.
  • Discontinue apple spray; brush glaze over entire top and sides of meatloaf every 30 minutes. Continue smoking until internal temperature reaches 160 degrees F (71 degrees C), 4 to 5 hours more. Remove meatloaf from smoker and let rest 10 minutes before cutting and serving.

Steps:

  • Mix together beef, crumbs, onion, egg, salt, pepper and 1/2 can tomato sauce.

½ cup bread crumbs
2 small onions, chopped
1 tablespoon curry powder
1 tablespoon dried Italian seasoning
1 egg, beaten
1 clove garlic, minced
½ cup milk
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon margarine
2 small onions, chopped
¾ cup ketchup
½ cup beef stock
¼ cup steak sauce
½ cup Worcestershire sauce
2 tablespoons white vinegar
2 tablespoons instant coffee granules
½ cup packed brown sugar
3 tablespoons lemon juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, mix together the ground beef, bread crumbs, 2 onions, curry powder, Italian seasoning, egg, garlic, salt and pepper. Gradually mix in the milk until you have a nice texture for forming meatballs. You may not need all of the milk. Form the meat into balls slightly smaller than golf balls. Place them in a greased baking dish.
  • Bake the meatballs for 30 minutes in the preheated oven. Once the meatballs are in the oven, start making the sauce straight away.
  • Melt the margarine in a saucepan over medium heat. Add the remaining onions, and cook until browned. Stir in the ketchup, beef stock, steak sauce, Worcestershire sauce, vinegar, instant coffee, brown sugar and lemon juice. Bring to a boil over medium heat, and simmer, stirring occasionally, until the meatballs are done.
  • Remove the meatballs from the oven, and drain any excess grease. Pour the sauce over them, and return to the oven. Bake for an additional 30 minutes.
  • These meatballs taste even better after they have been left to rest for a while to soak up the sauce. I usually make the recipe at lunchtime and let it cool. I put it back in the oven at about 200 degrees for approximately 15 minutes to reheat for dinner. This is not necessary but it makes it taste even better!

  • Cook and stir onion and garlic in the bacon drippings until onion is softened, 6 to 7 minutes. Remove from heat and cool.

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

1 ½ teaspoons salt
