- Gather the ingredients.
- Combine all ingredients in a medium saucepan over medium heat. Bring to a boil, stirring constantly.
- Reduce heat to low and simmer, uncovered, until thickened and slightly reduced-about 5 to 10 minutes. Stir occasionally.

SHW BBQ SAUCE
Steps:
- Heat the oil in a large stockpot over medium-high heat. Add the onions and saute, stirring constantly. Add the garlic and saute, about 20 seconds. Add 8 cups water, the ketchup, beer, vinegar, coffee, molasses, brown sugar, OJ concentrate, ancho chile puree, Worcestershire, cumin, cocoa powder, New Mexico chile powder, salt, pepper and tomato paste. Bring the mixture to a simmer. Cook on medium-low heat, stirring occasionally, about 1 hour.
- Remove the sauce from the heat and puree with a hand blender. Pass the mixture through a mesh strainer into containers. Cool and store the sauce.

- Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them. Reduce the heat to low. Add the ketchup, molasses, brown sugar, chipotle peppers, vinegar (or less to taste), Worcestershire sauce and salt and stir. Allow to simmer for 20 minutes. Taste after simmering and add whatever ingredient it needs (more spice, more sugar, etc.).

SWEET AND SMOKY BARBEQUE SAUCE
Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

- Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sauce is smooth and brown sugar is dissolved, about 5 minutes.

GUINNESS RIBS WITH SWEET MOLASSES BBQ SAUCE.
These are by far the best ribs I've ever had. They are so tender that the meat literally falls off the bone. The Bone Dust seasoning (see Recipe #50639),is an easy-to-make mixture of herbs and spices. This is from the "Hot Sticky and On Fire " recipe book by Ted Reader. It calls for 4 cans of Guinness, but two are for the chef!!!

Steps:
- With a sharp knife, score the underside of the rib racks in a diamond pattern.
- Sprinkle 1/2 Tbsp Bone Dust on each of the 4 racks of ribs.
- On the bottom of a dutch oven or roasting pan, place sliced onions and garlic.
- Then lay ribs on top, meat side down.
- Pour 2 cans of Guinness over top of ribs and cover tightly with foil.
- Place in 325 degree oven.
- Braise ribs until tender, about 2 1/2 hours.
- Remove ribs and set aside.
- Pour Guinness mixture into large saucepan.
- Bring mixture to a boil and boil until liquid is reduced by half.
- Stir in barbecue sauce and molasses.
- Bring to boil again, stirring constantly.
- Remove from heat.
- In blender or food processor, puree sauce mixture until smooth.
- Grill ribs over medium high heat for 6- 8 minutes per side, basting with sauce.
- Serve ribs in sections of 3 ribs each, along with remaining sauce.

- In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency.
