ITALIAN SAUSAGE AND PEPPER BURGERS



Italian Sausage and Pepper Burgers image

1 tablespoon olive oil
1 onion, thinly sliced
1 red bell pepper, cored and thinly sliced
1 tablespoon tomato paste
12 ounces hot Italian sausage (if links, remove casings)
12 ounces sweet Italian sausage (if links, remove casings)
8 slices provolone
1/4 cup mayonnaise
3 tablespoons pesto
4 ciabatta rolls, buttered and lightly toasted
Pickled banana peppers, for topping

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
  • Preheat an outdoor grill to medium high.
  • Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
  • In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

1 pound breakfast sausage
8 slices American cheese
4 potato buns, split and toasted
1 avocado, sliced
Kosher salt
4 over-easy fried eggs
Pickled Fresno chiles or cherry peppers, for topping, optional

Steps:

  • Preheat a grill to medium high.
  • Form the sausage meat into 4 patties. Use your thumb to make an indentation in the center of each patty so they don't curl up while cooking. Grill until cooked through or the internal temperature reaches 160 degrees F, 3 to 5 minutes per side, depending on thickness. Add 2 slices of American cheese to each patty and close the grill until melted, about 1 minute.
  • Place some avocado slices on the bottom buns and season with pinch of salt. Add a patty, then top with an egg and a few pickled Fresno chiles. Add the top bun and serve.

¾ teaspoon paprika

Steps:

  • Combine ground pork, red wine, garlic, salt, parsley, paprika, rosemary, white pepper, and black pepper in a bowl and mix until evenly combined; do not overmix. Let sit in the fridge at least 4 hours, preferably overnight, in order for flavors to meld.
  • Preheat an outdoor grill over medium-high heat.
  • Divide the meat into 4 equal portions and form into patties. Cook on the preheated grill about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).

1 cup shredded lettuce
1 medium tomato, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
  • Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°. Top patties with cheese. 2 tablespoons butter or margarine, softened
5 hamburger buns, split
5 eggs
15 dill pickle slices
5 slices pepperjack cheese
1 small red onion, sliced
10 pickled jalapeno slices

Steps:

  • Form the bulk hot pork sausage into 5 patties. Heat a large skillet, and fry the patties over medium high heat. Remove the sausage from the skillet and drain on paper towels.
  • Melt butter in a second large skillet, and toast the buns over medium heat until golden brown.
  • Meanwhile, break the eggs into the same skillet used for frying the sausage; reduce the heat to medium-low. Cook until the white is completely set and the yolk thickens. Flip the eggs and continue cooking for another 30 seconds, or until the yolk is to the diners' preferences.
  • Stack your toasted buns starting with the pickles and jalapeno slices on the bottom, then the cooked sausage patty, pepperjack cheese, fried egg, and onion. Cover with the top half of the bun. Enjoy as the cheese melts between the egg and the sausage.

1/2 teaspoon onion salt
1/2 teaspoon seasoning salt

1 lb bulk pork sausage

Steps:

  • In large mixing bowl,combine first 7 ingredients.
  • Mix well.
  • Add the sausage and beef,combine mixture well.
  • Cover and refrigerate overnight.
  • Form mixture into 16 patties.
  • Put on grill 3-5 inches above hot coals.
  • Grill for 4-8 minutes,on each side,or until done.
  • **Leftovers can be frozen, seperate patties on pieces of foil when freezing.
