BBQ STEAK BITES
BBQ Steak Bites are a quick and easy appetizer for any occasion. Made with sirloin steak, vegetables and homemade bbq sauce quickly grilled for the perfect savory bite.

- Prepare a grill fire to about 300° with hickory for smoke flavor. Soak bamboo picks in water for about 15 minutes. Cut sirloin into about 1 inch chunks. Slice onion into bite sized pieces. Rinse mushrooms and pat dry with paper towels. Drain bamboo picks. Thread a mushroom, an onion slice and a chunk of steak onto each pick and set on a baking sheet. Just before adding the steak bites to the grill, pour bbq sauce into a small bowl and dunk each steak bite into sauce. Cook over indirect fire for about 8 -10 minutes or until steak reaches desired doneness. Remove from grill and serve immediately.
STEAK BITES

- Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
- Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
- Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
- Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
- Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

- Preheat oven to 400°. Cut bacon crosswise into thirds. Place bacon on a microwave-safe plate lined with paper towels. Cover with additional paper towels; microwave on high 3-4 minutes or until partially cooked but not crisp., Place chicken in a small bowl; sprinkle with steak seasoning and toss to coat. Wrap a bacon piece around each chicken cube; secure with a toothpick. Place on a parchment-lined baking sheet., Bake 10 minutes. If desired, add horseradish to barbecue sauce; brush over wrapped chicken. Bake until chicken is no longer pink and bacon is crisp, 5-10 minutes longer.

SWEET GRILLED STEAK BITES

- Season the meat with Greek seasoning. In a large resealable bag or non reactive bowl, combine the soy sauce, corn syrup, garlic and seasoned salt. Massage the bag to blend, then add the beef. Press out most of the air and seal. Marinate for up to 24 hours, flipping over occasionally to evenly marinate.
- Preheat a grill for medium heat. When hot, lightly oil the grate. Thread the beef cubes onto skewers.
- Grill the meat on the preheated grill, turning occasionally, until they have reached your desired degree of doneness. Be careful not to let the flames get too high. These will darken quickly because of the high sugar content. Don't worry- they aren't burning!
