SPICY FRIED CAULIFLOWER WITH WHITE CHEDDAR RANCH DIP
The perfect vegetarian party treat, spicy cauliflower is fried to a golden brown and served alongside a cheesy sour cream dip.

- In 10-inch skillet, heat oil over medium heat.
- Cut cauliflower into florets; discard stems
- In medium bowl, beat eggs and milk with whisk. In large bowl, stir together Bisquick mix, cornstarch, paprika, chili powder, ground red pepper and salt.
- Dip cauliflower florets into egg, then into Bisquick mixture; dip again into egg and coat with Bisquick mixture. Place in hot oil; fry until golden brown. Transfer fried cauliflower to clean plate lined with napkins or paper towels.
- In small bowl, beat sour cream, cheese powder and dressing mix with whisk until well blended.
- Serve cauliflower immediately with sour cream dip. Enjoy!

- Cut the cauliflower in large florets. Transfer to a large bowl and set aside.
- In a small bowl, combine the celery salt, oregano, cumin, onion powder, garlic powder, paprika, cayenne, salt, and pepper. Mix well.
- In a medium bowl, add half of the spice mix to the flour.
- Add the cornstarch and mix.
- In a separate medium bowl, combine the soy milk, apple cider vinegar, and hot sauce. Whisk.
- Pour the remaining spice mix over the cauliflower florets and mix.
- Pour the milk mixture over the cauliflower and mix well until they are coated.
- Cover with plastic wrap and chill for 1 hour minimum.
- Heat the vegetable oil in a large pan until it reaches 350°F (180°C).
- Toss each cauliflower floret in the flour mixture until well-coated, shaking off any excess. Dip them back in the remaining soy milk mixture in the bowl where they marinated, then again in the flour mixture.
- Fry the cauliflower for 4-5 minutes, until golden brown and crispy.
- Drain the pieces on a wire or paper towels. Let cool 5-10 minutes before serving.

- Preheat the oven to 400 degrees F (200 degrees C).
- Coat cauliflower with 1 tablespoon olive oil. Season with salt and pepper and spread out onto a baking sheet.
- Chop tops off garlic cloves and place on a sheet of aluminum foil. Drizzle cloves with remaining olive oil and wrap foil to create a pouch; place on the baking sheet with the cauliflower.
- Roast in the preheated oven, tossing cauliflower halfway through, until tender, about 25 minutes.
- Remove from the oven and allow cauliflower to cool slightly. Unwrap garlic cloves and discard foil. Reduce oven temperature to 375 degrees F (190 degrees C).
- Combine 1 cup Cheddar cheese and yogurt in a food processor; blend until smooth. Add cauliflower and squeeze garlic cloves in as well. Process, scraping down the sides as needed, until creamy, 1 to 2 minutes. Transfer to a baking dish and top with remaining Cheddar.
- Bake until top begins to brown, about 15 minutes. Remove from the oven, garnish with green onions, and serve.

- In a large saucepan, place steamer basket over 1 in. of water. Place cauliflower in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, just until tender, 10-12 minutes., Meanwhile, in a small saucepan, mix cornstarch, salt and white pepper. Stir in milk and butter until smooth. - Break cauliflower into florets. In medium saucepan, bring about 2 inches of water to a boil. Add cauliflower, cover and simmer until tender, about 15 minutes. Run under cold water to stop the cooking; drain well.
- In a food processor, puree cauliflower and green onion until fairly smooth. Scrape down sides, add sour cream and dressing mix. Process until combined. season with salt and pepper, if desired.
- Remove to serving bowl and refrigerate until chilled.
- Serve with fresh veggies, crackers, pita chips or anything else you want to dip. :).

- In a medium bowl, combine the flour, arrowroot powder, salt, cayenne, white pepper, onion powder, garlic powder, paprika, Old Bay seasoning, and nutritional yeast.
- In another medium bowl, combine the hot sauce, soy milk, and Dijon mustard and whisk until creamy.
- In a large Dutch oven or heavy pot, heat the oil to 350°F (180°C). Double-line a large plate with paper towels and keep nearby.
- Use one hand to dip a cauliflower floret into the wet mixture, then drop it into the flour mixture. Use your dry hand to coat it completely. Dip it back into the wet mixture and again in the dry mixture, keeping one hand devoted to wet and one to dry.
- Carefully lower the twice-coated floret into the hot oil. Repeat with the remaining cauliflower until you can't fit any more into the pot. Do not overcrowd. Fry for 4-5 minutes, until the pieces are golden. Transfer the fried cauliflower to the lined plate and continue to fry the remaining cauliflower. Serve hot.
