SOFT-SHELL CRABS ON THE GRILL
Kick dinner up a notch with this soft-shell crab recipe, courtesy of chef Emeril Lagasse.

Steps:
- Rinse crabs under cold running water; brush them with a small brush if necessary to remove any dirt from their shells. Twist off and discard apron. Fold back the pointed sides of the top shell to expose gills; remove gills on both sides. Using kitchen scissors, cut across the front of the crab about 1/4-inch behind the eyes and mouth; squeeze out the small sac located directly behind the mouth.
- Preheat a grill with the lid down or a grill pan over medium-high heat.
- Brush crabs with olive oil and season with salt and pepper. Place crabs on grill and cover. Cook, turning crabs every couple minutes and basting them with remaining olive oil, until they turn orange and are cooked through, 7 to 9 minutes. Remove from grill and serve immediately.
GRILLED SOFT-SHELL CRABS RECIPE
Steps:
- Gather the ingredients.
- Rinse the crabs in running cool water and reserve. Heat a grill to medium-hot-you should be able to hold your hand about an inch over the cooking grate for 3 to 4 seconds before pulling it away from the heat.
- Pat the crabs dry with paper towels. Liberally brush the crabs all over with melted butter or oil and set them on the hot grill.
- Cover the grill and cook until the crabs are lightly browned on the cooking grate side, about 4 to 5 minutes.
- Flip the crabs over, brush with more butter, and cook until they are browned on the second side and cooked through, or about 10 minutes in total. Use tongs to remove the crabs from the grill.
- Enjoy.

BBQ SOFT-SHELL CRABS WITH GRILLED VIDALIA ONIONS
Steps:
- Melt margarine over low-medium heat and add olive oil, salt, pepper, hot sauce, lemon juice, and bacon. Simmer for 2 minutes. Allow to cool.
- Place the cleaned crabs on plate. Liberally coat the crabs with the sauce, making sure to lift the sides of the shell to coat the meat inside. Save remaining sauce for basting. Cover the crabs and allow to marinate in the refrigerator for at least 2 hours.
- Heat grill to medium-low.
- Place crabs on grill topside down. Baste with remaining sauce while they cook. Cook crabs about 3 to 4 minutes on each side. The crab will crisp on the outside and the meat inside will turn white.
- Remove from grill and serve topped with Grilled Vidalia Onions.
- Heat griddle or nonstick pan over medium-high heat.
- Peel onions and cut into thin rings. Toss rings with seasoning and olive oil.
- Cook until onions turn clear and start to caramelize. Serve over grilled crab.
GRILLED SOFT-SHELL CRABS

- Clean crabs by removing gills and cutting off the eyes and mouth.
- Place crabs on pan or aluminum foil. Place on grill over a low fire. Baste the crabs with the Lemon Butter Sauce. Cook for 5 to 6 minutes on each side. Continue to baste during cooking. Before serving, top each crab with a slice of tomato and a small amount of mozzarella cheese. Allow cheese to melt. Remove from grill. Serve immediately.
- Add lemon juice and other seasonings. Seasonings may be adjusted for personal taste. Allow to simmer for about 20 minutes.
PAN-FRIED SOFT-SHELL CRABS

- Combine flour and seafood seasoning in a resealable zip-top bag. Seal and shake to mix. Combine egg and milk in a bowl. Dredge crabs in egg mixture, then add to seasoned flour and shake to coat. Shake off excess when removing from bag.
- Heat olive oil in a large saute pan or skillet over medium heat. Add crabs in a single layer and cook for 3 minutes; flip and cook until golden brown, about 3 minutes more. Remove to a serving dish.
- Mix mayonnaise, chives, pickle juice, mustard, seafood seasoning, lemon juice, salt, and pepper together for remoulade. Serve with crabs.

- Line a baking sheet with paper towels; set aside. Combine flour, salt, and pepper in a large shallow dish. Dredge crabs in seasoned flour, tapping off excess; set aside.
- Heat a large skillet over medium-high heat. Add butter and oil to skillet. When butter has melted, add crabs and cook until deep golden brown, about 4 minutes per side. Transfer crabs to a prepared baking sheet to drain. Sprinkle with salt. Serve immediately with lemon wedges.

- Season crabs with salt and pepper and dredge in the flour, shaking off excess. Set aside.
- In a large skillet over medium high heat, add the oil and saute the crabs until soft, about 2 minutes on each side. Remove the crabs and set aside. Add the garlic and cook for 1 minute. Then add the capers and white wine. Cook until wine has reduced to about 1/2. Swirl in the butter and the chopped chives. Season with salt and pepper.

- Heat 2 inches oil in a deep pot to 375 degrees F (190 degrees C).
- Whisk flour, bread crumbs, cornstarch, seafood seasoning, paprika, garlic powder, salt, pepper, and chili powder together in a bowl until evenly combined. Mix milk and eggs together in a separate bowl.
- Dredge each whole crab in the flour mixture, dunk in the egg mixture, then back in the flour mixture to coat.
- Lower crabs carefully into the hot oil. Fry until they start to float, then fry for an additional minute, flipping halfway through. Transfer to a paper towel-lined tray to drain oil. Serve immediately.

- Soak the crabs in milk for 30 minutes. Mix the flour, salt, pepper, ginger, paprika and garlic powder in a bag; dredge crabs in the mixture.

SOFT-SHELL CRABS WITH SPICED CUCUMBER SALAD
As we started tasting the German- and Czech-style American pilsners, Eric Asimov said he'd like a hot dog. No need to stop there. Spicy or fried foods, many kinds of seafood and fish, and barbecue suit these golden, refreshingly bitter beers. I chose soft-shell crabs, crisped with an Indian-style chickpea-flour crust and served over spiced cucumbers. Buy the crabs alive, not frozen. Fish markets will take care of killing and cleaning them. Keep the crabs refrigerated and use them by the next day.The crabs are sold by size, but most markets do not offer choices. You will usually find the larger ones, called "jumbos," which have bodies 5 to 5 1/2 inches across. This recipe is designed for jumbos, with two per person as a main course or one each in a picnic-ready sandwich on a bun slathered with chili-fueled mayonnaise and layered with cucumber salad. Pour another brew and dig in.

- Place cucumbers in a colander, toss with salt and set over a bowl to drain. Mix mayonnaise and sriracha, and set aside in a small serving dish.
- Heat 1 tablespoon oil over medium heat in a small skillet and add mustard seeds. When sizzling, add ginger, shallots and chilies. Sauté until shallots soften. Remove from heat, add vinegar and stir. Rinse and drain cucumbers, place in a shallow serving bowl and fold in shallot mixture. Sprinkle with mint.
- In a bowl, lightly beat eggs with 1 tablespoon water. Mix chickpea flour and curry powder, and spread on a plate. Dip crabs in egg, then in flour mixture. Heat remaining oil in a large skillet. Add crabs and sauté over medium-high heat until lightly browned, turning once. You may need two shifts. Remove from pan and arrange on cucumber salad.
- Serve, with red chili mayonnaise on the side, or serve on buns spread with mayonnaise and piled with salad.

- Place the shallots in a saucepan with the lime juice and port. Reduce over medium heat until two tablespoons of sauce remain (five to seven minutes). Add heavy cream and grated ginger. Bring to a boil and reduce by a third to three tablespoons.
- Reduce heat to very low and whisk in the butter, a small piece at a time. Season to taste with salt and cayenne pepper. Strain the sauce through a fine mesh strainer and add a few more drops of lime juice if necessary. Keep warm (be careful not to overheat or the sauce may curdle).
- Preheat broiler or outdoor grill.
- Brush the crabs with olive oil and season with salt and pepper. Grill three to four minutes on each side, until crisp and a deep reddish brown.
- Arrange the crabs on a serving platter, drizzle sauce over them and sprinkle with scallions and coriander.
