Here's a fun way to end your day at the beach! Kids can help arrange teddy bear-shaped graham snacks on top of frosted cupcakes.

1 box Betty Crocker™ Super Moist™ cake mix (any flavor)
Water, vegetable oil and eggs called for on cake mix box
2 drops blue food color
1 cup Betty Crocker™ Whipped vanilla frosting
1 roll (from 4.5-oz box) Betty Crocker™ Fruit by the Foot™ chewy fruit snack (any flavor)
1/2 cup teddy bear-shaped graham snacks, crushed, or brown sugar
1 tablespoon Betty Crocker™ blue sugar, if desired
12 teddy bear-shaped graham snacks
6 paper drink umbrellas or small plastic umbrellas, if desired
6 ring-shaped gummy candies
6 multi-colored fish-shaped crackers

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes. Tightly wrap 12 cupcakes; freeze for a later use.
  • Stir blue food color into frosting until blended. Frost remaining 12 cupcakes with frosting.
  • Cut six 1 1/2-inch pieces from fruit snack roll; peel off paper backing. Use fruit snack and remaining ingredients to decorate cupcakes as shown in photo or as desired.

We are ready for summer and what better way to welcome in the beach weather on the way! Everyone will love these teddy bear beach cupcakes, both delicious and fun to make!

White Cupcakes (we used Betty Crocker white cake mix)
Whipped Vanilla Frosting (we used Betty Crocker frosting )
Blue Food Coloring
Rainbow Candy or Fruit by the Foot
Teddy Bear Shaped Grahams
Crushed Graham Crackers (use extra teddy grahams)
Ring and Fish Shaped Gummies
Paper Drink Umbrellas

Steps:

  • Preheat your oven and prepare the cupcakes according to recipe directions. We used Betty Crocker's white cupcake mix. Add muffin liners to your 12 cupcake/muffin tins. Divide the batter evenly among 12 muffin tins. Bake until the tops spring back or a toothpick inserted comes out clean. Be sure to check baking times on the box.While the cupcakes are cooling on a wire rack, set aside your decorations (teddy grahams, gummy floaties, fish shaped gummies, beach towel candy, paper umbrellas, and "sand". Crush extra teddy grahams into a ziplog bag to resemble sand. We usually use a rolling pin and apply pressure back and forth to make crushed grahams. Once the cupcakes are cooled, mix your frosting in a bowl or directly in the container several drops of blue food coloring to resemble beach water. Frost all of the cupcakes with either a frosting spatula, butter knife or piping bag. Lightly sprinkle blue sugar onto 6 of the frosted cupcakes.On the other 6 cupcakes, dip just half of the cupcake at an angle into the "sand". Sprinkle extra crushed grahams on top for extra thickness.Place 6 teddy bear grahams into 6 round gummy floaties and 6 teddy bear grahams onto the rainbow candy beach towel (using a toothpick, add a small amount of frosting to the back of the teddy bear so the bear stays on the beach towel). Place each of these teddy bear grahams on each cupcake for a total of 12, 6 "floating in the water" and 6 "sun bathing on their towel."Place paper umbrellas in the teddy graham sand and mini fish gummies in the water. We added extra friends onto each cupcake because why not enjoy the beach with a friend or 2!

24 flat-bottomed ice cream cones
One 18.25-ounce box vanilla cake mix
3 large eggs
1/3 cup vegetable oil
Two 16-ounce tubs vanilla frosting
1/2 teaspoon blue food coloring, plus more as necessary
1 1/2 cups graham cracker crumbs
Blue rock candy crystals
Flat taffy-style candy or fruit strip candies in several colors, such as Airheads or Fruit Roll-Ups
Bear-shaped graham cracker snacks, such as Teddy Grahams
Candy rocks
1 pretzel rod
2 lime fruit slice candies
Granulated sugar, for rolling
Gummy candies in the shapes of fish, turtles, sharks, whales, starfish and other sea creatures
Gummy candy rings, such as Lifesaver Gummies
1 wrapped soft caramel candy, such as Goetze's Caramels

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Set the ice cream cones in the cups of in two 12-cup muffin pans so they stand upright.
  • In a stand mixer fitted with the paddle attachment, combine the cake mix, eggs, oil and 1 cup cold water. Beat on low speed just to combine, then increase the speed to high and beat until very smooth, about 2 minutes. Divide the mixture among the ice cream cones. Bake until the cupcakes rise above the edges of the cones and a tester inserted in the center of 1 comes out clean, 18 to 20 minutes. Transfer to cooling racks and cool completely.
  • Set aside about 1/4 cup vanilla frosting in a small bowl. Put the remaining frosting in a clean mixer bowl and add about 1/2 teaspoon blue food coloring. Beat and continue to add food coloring, if necessary, to get a sea blue color.
  • Dollop a tiny bit of frosting on the bottom of a cone (this will help anchor it to the serving tray) and then dollop a generous amount on top. Anchor the cone to the serving tray and repeat with the remaining cones, arranging them in a 4-by-6 cone grid, with the edges touching.
  • Using an offset spatula, smooth the blue frosting across the tops of the cupcakes, adding more as necessary, so it appears as 1 layer and the individual cupcakes are no longer visible. Smooth the remaining blue frosting on the sides to cover the cupcakes but not the cones.
  • Pat the graham cracker crumbs onto one half of the cake, creating a wavy pattern along one edge where the water meets the sandy beach. Put the reserved white frosting in a pastry bag fitted with a large leaf tip. Pipe the white frosting along the edge where the water and sand meet to make breaking waves.
  • To decorate the beach half of the cake, arrange the blue rock candy just behind the breaking waves to create the crashing surf. Stick some beach umbrellas in the sand, making sure you stick them into the cakes and not the frosted spaces between them. Cut the taffy into beach towels and arrange some cookie bears on the towels on the beach. Arrange some piles of candy rocks on the beach.
  • To make palm trees, sprinkle your work surface with a little sugar and roll or flatten the lime fruit slice candies. Cut into 5 palm leaves. (If you have time, let the leaves dry and harden for 1/2 hour or so, they will stick up straighter on the finished tree). Break the pretzel rod in half and stick the leaves on top to make a palm tree. Stick the tree into one of the cupcakes on the beach.
  • Attach one end of the twist tie to a gummy candy fish and wrap the other end around the remaining half of the pretzel rod to make a fishing pole. Stick the pole in the sand and add a cookie bear as a fisherman.
  • To decorate the ocean half of the cake, arrange gummy candy sea creatures in the water. Stick some cookie bears into gummy candy rings and set them in the ocean to float. Press or roll the caramel candy to flatten and then crimp the edges to make a boat. Attach a square sticky note to a toothpick to make a sail. Stick it in the boat, along with a cookie bear as a sailor.

Simply whip up some cream cheese frosting, add some coconut and decorations-and you've got adorable, tasty treats bound to make anyone smile!

18 each unfrosted cupcakes, cooled
¾ cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
2 ¾ cups powdered sugar
1 teaspoon vanilla extract
⅛ teaspoon salt
2 tablespoons heavy cream
1 cup sweetened flaked coconut
42 each miniature marshmallows
44 black sugar pearl sprinkles, or as needed

Steps:

  • Place butter in a large bowl and cream until smooth with an electric mixer. Add cream cheese and beat until thoroughly combined. Mix in powdered sugar, 1 cup at a time, beating well after each addition. Mix in vanilla and salt until thoroughly combined. Pour in heavy cream and beat until frosting is smooth, about 2 minutes.
  • Take 1 baked and cooled cupcake and frost with cream cheese frosting, making as even a layer as possible. Sprinkle coconut over the top of the frosting, and shake off any excess.
  • Take 1 mini marshmallow and cut it in half horizontally using scissors or kitchen shears. Place one half of the marshmallow cut-side down in the center of the top of the cupcake, and press gently into the frosting to adhere. Take 1 black sugar pearl sprinkle and attach to the middle of the marshmallow half using a small amount of frosting; thus creating the nose and muzzle. Take 2 black sugar pearl sprinkles and place above the nose on each side for the eyes. Press gently into frosting to adhere. Take 2 whole mini marshmallows and place at the top of the cupcake on each side to create ears. Repeat with remaining cupcakes.

Steps:

  • Prepare cake batter and bake as directed on package for 24 cupcakes. Cool in pans 15 min. Remove from pans to wire racks; cool completely.
  • Remove 1-1/4 cups COOL WHIP; set aside. Tint remaining COOL WHIP with food coloring. Spread top of each cupcake with some of each color COOL WHIP to resemble the ocean and its beach. Sprinkle 1 tsp. graham crumbs over white COOL WHIP on each cupcake for sand.
  • Insert 1 small cocktail umbrella into beach area on each cupcake for the beach umbrella. Decorate cupcakes with remaining ingredients as shown in photo. Keep refrigerated.
