"PJ SPECIAL" GRILLED CHEESE
Not for the faint of heart, this sandwich has flavor to spare. My dad won't even eat regular grilled cheese any more.

Steps:
- Mix Cheddar cheese, horseradish mustard, garlic, salt, pepper, and cayenne pepper together in a bowl.
- Spread 1 teaspoon butter on one side of a slice of bread. Flip; spread Cheddar cheese mixture evenly over unbuttered side. Top with the other slice of bread. Spread 1 teaspoon butter on top.
- Preheat a griddle over medium-high heat. Place sandwich on the griddle and press down with a spatula to flatten slightly. Cook until browned, 2 to 3 minutes. Flip and continue cooking until second side is browned, 2 to 3 minutes more.

ULTIMATE GOURMET GRILLED CHEESE
This gourmet grilled cheese is loaded with herbed caramelized onions, gooey gruyere and white cheddar cheeses, and is cooked in a savory rosemary butter!

Steps:
- Add 1 1/2 Tbsp butter and olive oil to a skillet and heat over MED-LOW heat. Add diced onions, salt, pepper, fresh thyme and 1 tsp of fresh rosemary to the hot skillet and saute, stirring often, until onions are soft and starting to brown, about 10 minutes.
- Stir brown sugar into the onions and cook another minute.
- Transfer onions to a plate.
- Spread one side of two pieces of bread with a little bit of mayonnaise.
- To the same skillet, add remaining butter and rosemary, and heat over MED heat. Swirl to coat the bottom of the skillet with the melted butter.
- Add both pieces of bread, mayonnaise side down, and cook until bread is golden brown and crunchy, about 2-3 minutes.
- As soon as you add the bread to the skillet, add a bit of cheese to the top of each piece of bread. Once it starts to melt a little, sprinkle a couple tablespoons of the caramelized onions over the top of one of the pieces of bread.
- When the bread is good and golden brown, sandwich the pieces of bread together and cook on LOW until cheese is fully melted.
- Transfer to a plate, repeat with remaining slices of bread and ingredients.
- Slice and enjoy!

Steps:
- Butter one slice of bread and place in frying pan or on griddle. Place cheese on bread.
- Butter the second slice of bread and place butter side up on top of cheese.
- Fry on medium heat until golden brown, turn over and fry other side of sandwich. Remove from heat and spread jelly on the TOP of the sandwich and serve.
- I prefer mozzarella or Colby jack cheese with strawberry jelly or American cheese with grape jelly.

- Preheat oven to 350°. Cream butter, cheese spread and egg until smooth. Stir in chiles, salsa and cheddar cheese. Spread about 1 tablespoon cheese mixture on each slice of 1 loaf of bread. , Top with remaining bread; spread with more cheese mixture. Cut each sandwich into 4 squares or triangles; place on a baking sheet lined with parchment. Bake until cheese is melted, 10-15 minutes. , Freeze option: Place cooled appetizers on a baking sheet. Freeze for 1 hour. Remove from the baking sheet and store in an airtight container in the freezer until needed. To bake frozen, place on a greased baking sheet. Bake at 350° for 15 to 20 minutes or until bubbly and browned.

- Choose Your Ingredients. There are just a few staple ingredients you’ll need for making a great grilled cheese: bread, cheese, and butter. You can use basic sandwich bread and a couple slices of your favorite cheese.
