This Italian Beef and Rice Casserole is a filling dinner that adults and kids love! Ground beef is nestled in tender rice and packed with lots of veggies and delicious Italian flavors for a hearty casserole that will fill you up!

1.5 lbs ground beef
1 onion (diced)
1 green pepper (diced)
14.5 oz canned tomatoes ((1 can))
1 cup shredded carrots
2 cups white rice ((I use jasmine))
2.5 cups beef broth
2 tbsp Italian seasoning
1 tsp garlic powder
1 tsp salt
1 cup mozzarella cheese
parsley (chopped)

Steps:

  • Brown and drain the ground beef. Place the ground beef in a large casserole dish.
  • Mix in the onion, green pepper, diced tomatoes, shredded carrots, rice, broth, garlic powder, salt, and Italian seasoning.
  • Cover tightly with foil and bake at 400˚F for 50-60 minutes, or until the rice is tender.
  • Once the rice is tender, remove the foil, add the cheese to the top, and bake for 5 more minutes, or until the cheese is melted.
  • Once the cheese is melted, remove from oven, garnish with chopped parsley (optional) and serve warm.

2 tbsp olive oil
1 onion (, diced (any type))
1 red capsicum / bell pepper (, diced (large))
2 garlic cloves (, minced)
500g (1 lb) ground beef (mince) (, lean)
2 1/2 tbsp tomato paste
1 1/4 tsp salt
1/2 tsp EACH cumin, black pepper
1 tsp each onion powder, dried oregano (or other herb of choice)
1/4 tsp cayenne pepper ((optional))
1 dried bay leaf
1 1/4 cups (225g) long grain white rice (, uncooked (Note 1))
2 cups (500 ml) beef broth (, low sodium)
2 cups (300g) diced frozen veggies (, I used corn, pea, carrot mix (Note 2))
3 big handfuls baby spinach (~ 90g/3 oz) (, or other leafy greens (Note 3))

Steps:

  • Heat oil in large pot over high heat. Add onion, capsicum and garlic. Cook for 1 minute.
  • Add beef, cook until brown, breaking it up as you go.
  • Add tomato paste, salt, pepper, onion powder, oregano, cumin and cayenne pepper. Cook for 1 minute.
  • Turn heat down to medium. Add rice and beef broth, mix well. Add frozen veggies and bay leaf, then stir.
  • Place lid on, lower heat to medium low so it's simmering gently. Cook for 12 - 15 minutes (might even take longer) until all liquid is absorbed (tilt pot to check). The rice should be just cooked, but will be wet.
  • Remove from heat. Quickly toss spinach on top of the rice and put the lid back on. Leave to rest for 10 minutes.
  • Fluff rice and mix through wilted spinach with a fork. Adjust salt if desired. Serve!

2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced

1 lb flank steak
3 tablespoons peanut oil
1 tablespoon dry sherry
1 tablespoon soy sauce
1 tablespoon honey
2 teaspoons cornstarch
2 teaspoons minced fresh ginger

3 large scallions, cut diagonally into 1-inch slices
4 ounces snow peas, trimmed
1 medium yellow squash, halved lengthwise, then sliced 3/4-inch thick
1 small red bell pepper, seeded cut into 1/4-inch strips
1/2 teaspoon hot red pepper flakes

Steps:

  • Cook rice according to package directions.
  • Meanwhile, slice steak 1/4-inch thick, then cut slices crosswise in half. Whisk 1 T. peanut oil, the sherry, soy sauce, honey, cornstarch, and half the ginger and garlic in small bowl. Add steak and toss to combine.
  • Heat 1 T. peanut oil in large heavy skillet over high heat until a drop of water evaporates on contact. Add remaining ginger, garlic, and the scallions. Reduce heat to medium-high; stir-fry 1 minute. Transfer with slotted spoon to medium bowl. Add peas, squash and bell pepper to skillet; stir-fry until crisp-tender, 3-4 minutes. Add to scallions.

10 ounces flank steak ((285g, cut into bite-sized pieces))
¼ teaspoon salt
1 tablespoon water
1/8 teaspoon baking soda ((optional, but good for tougher cuts of meat))
1 teaspoon dark soy sauce ((mushroom flavored preferred))
1 teaspoon cornstarch
1 teaspoon oil
1 tablespoon hot water
¼ teaspoon sugar
½ teaspoon sesame oil
1½ tablespoons soy sauce
2 teaspoons dark soy sauce
½ teaspoon MSG ((totally optional!))
Fresh ground white pepper
5 cups cooked rice
3 tablespoons canola oil ((divided))
2 eggs ((beaten))
1 medium onion ((diced))
3/4 cup peas
1 scallion ((chopped))
1 tablespoon Shaoxing wine

Steps:

  • First, combine the beef, salt, water, baking soda, dark soy sauce, cornstarch, and oil in a bowl and stir until well-incorporated. Set aside. (We added a bit of water to marinate the beef, which generally is a no-no for beef...but for this fried rice dish, it keeps the small morsels of beef juicy and tender!)
  • Next, combine the hot water, sugar, sesame oil, soy sauces, MSG (if using), and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.
  • Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). If you are using cold leftover rice, try to break up the clumps as best as possible.
  • Heat your wok over medium high heat, add 1 tablespoon of oil and the eggs, and scramble them until just cooked. You can start scooping them up when they look like they are almost done. Transfer them back into the same bowl you mixed them in and set aside. They will continue to cook in the bowl and you will cook them again in the rice.
  • Heat the wok until just smoking and spread 1 tablespoon oil around your wok. Add the marinated beef in one layer, and let sear for 20 seconds. Next, stir fry the beef until about 70% done. Transfer the beef back to the marinade bowl, and set aside.
  • With the wok over medium high heat, add the last tablespoon of oil, and sauté the onions until translucent, about 2 minutes. Add the rice, using a metal spatula to flatten out and break up any large clumps. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, about 5 minutes. Also, sprinkling a little water on large clumps of rice will help break them up more easily.
  • Once the rice is warmed through, add the sauce mixture. Stir the rice with a scooping motion until the grains are evenly coated with sauce. The rice should be completely hot by now. Next, add the beef and any juices from the bowl you set aside earlier, and stir fry for another minute.
  • Add the eggs, breaking up any large clumps, peas, and the scallions. Continue stir-frying for another 30 seconds. Push the rice into the middle of the wok to let the perimeter of the wok heat up. After about 20 seconds, pour 1 tablespoon of Shaoxing wine around the perimeter of the wok. Stir-fry for another 20 seconds. Adding the wine using this method gives the dish a little extra wok hei! At this point, taste the rice to see if it needs a little more salt, soy sauce, or white pepper and season accordingly.
  • Serve immediately, and, if you're like us, don't forget some homemade chili oil!

1 lb thinly sliced beef (freeze meat and then slice as close to paper thin as possible)
1 medium onion
0.5 (16 ounce) package frozen broccoli carrots cauliflower mix
1/4 head cabbage, sliced thinly
pickled ginger, called Beni Shoga (optional)
1 1/3 cups dashi
5 tablespoons soy sauce
3 tablespoons mirin
2 tablespoons sugar
1 teaspoon sake
1 teaspoon fresh ginger juice
1 garlic clove, crushed

Steps:

  • Cook rice according to directions.
  • Slice onion thinly. Cut thinly sliced beef into bite-sized pieces. Set aside. Put dashi, soy sauce, sugar, mirin, sake, ginger juice and garlic in a pan. Add onion slices in the pot and bring to just under a boil then lower to a simmer. Allow to simmer for minimum of 5 minutes.
  • Boil enough water for 1/2 package of frozen carrots, broccoli and cauliflower. When water is at a boil, add contents of package of vegetables as well as 1/4 head of cabbage. When vegetables are almost done, (4-5 minutes), drain them. Add beef and drained vegetables into the saucepan and simmer for 5 minutes. If veggies cooked earlier then add additional time to allow sauce to return to simmer and fully cook meat.
  • Serve hot steamed rice in a deep rice bowl. Put the beef and vegetable topping on the top of rice. Place some red ginger on the top if you would like.

Steps:

  • Whisk scallions, minced garlic, minced ginger, 1 cup water, 6 tablespoons soy sauce, 6 tablespoons sugar, and cornstarch together in a large bowl. Add beef; mix gently to coat. Cover with plastic wrap and refrigerate for 1 hour.
  • Whisk 1 1/3 cups water, 1/2 cup sugar, and 1/2 cup plus 2 tablespoons soy sauce in a bowl to make the sauce.
