1/2 cup milk
1 teaspoon turmeric (leveled)
Optional: 2 tablespoons double cream
Salt (to taste)
Pepper (to taste)
Handful bay leaves

2 tablespoons vegetable oil
2 medium onions, minced
1 ½ pounds ground beef
1 cup milk
2 slices Texas toast thick-sliced bread
½ cup raisins
1 teaspoon apricot jam
1 tablespoon hot chutney
½ tablespoon curry powder
1 teaspoon salt
½ teaspoon ground black pepper
1 large egg
1 pinch salt
1 bay leaf

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Heat the oil in a large skillet over medium-high heat. Cook the onions in the hot oil until soft. Break the ground beef into the skillet and cook until brown.
  • Place the milk in a shallow dish. Soak the bread in the milk. Squeeze the excess milk from the bread. Set the milk aside. Add the bread to the beef mixture. Stir in the raisins, apricot jam, chutney, curry powder, salt, and black pepper. Pour the mixture into the prepared baking dish.
  • Bake in the preheated oven 1 hour.
  • While the bobotie bakes, whisk together the reserved milk, egg, and a pinch of salt. Pour over top of the dish. Lay the bay leaf onto the top of the milk mixture.
  • Return the bobotie to the oven until the top is golden brown, 25 to 30 minutes. Remove bay leaf before serving.

Steps:

  • Melt the butter in a saucepan.
  • Add the onions and saute for 5 minutes.
  • Add the apple dice and cook for 1 more minute.
  • Add the chopped beef and mix together.
  • Squeeze out the excess milk from the bread slices.
  • Tear up the bread slices and add to pot.
  • Add the curry powder, raisins, almonds, lemon juice, egg, and turmeric, and stir well.
  • Place mixture in a greased 9 x 13" baking dish.
  • Place bay leaves vertically in the casserole.
  • Bake at 325 degrees F for 40 minutes, then remove from the oven.
  • Mix together the egg and milk
  • Then pour it over the Bobotie.
  • Bake for 15 more minutes.
  • Remove bay leaves before serving.

1-1/2 lb. extra-lean ground beef
3 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
2 onions, chopped
1 Tbsp. tomato paste
2 tsp. each curry powder, dried Italian seasoning and ground cumin
1/2 cup mango chutney
2 eggs
1-1/2 cups long-grain white rice, uncooked
1/2 cup KRAFT Shredded Mild Cheddar Cheese

Steps:

  • Heat oven to 350°F.
  • Pour milk over bread in medium bowl. Lightly press bread into milk; let stand until ready to use.
  • Brown meat in large nonstick skillet on medium heat. Remove meat from skillet; drain. Set aside.
  • Add dressing to skillet; heat 1 min. Add onions; cook 3 min. or until crisp-tender, stirring frequently. Add tomato paste and dry seasonings; mix well. Cook and stir 2 min. Remove skillet from heat. Stir in meat.
  • Squeeze bread slices over bowl to remove as much milk from bread as possible; reserve milk for later use. Add bread to meat mixture along with the chutney; mix well. Spoon into 2-qt. casserole sprayed with cooking spray.
  • Whisk eggs with reserved milk until blended; pour over meat mixture.
  • Bake 50 min. or until topping is golden brown and set in the center. About 30 min. before casserole is done, cook rice as directed on package, omitting salt.
  • Top casserole with cheese; bake 5 min. or until melted. Serve with the rice.

1 onion, chopped
1 pound ground beef
½ slice bread
½ cup milk, divided
1 egg, beaten, divided
¼ cup seedless raisins
1 tablespoon white vinegar
2 teaspoons white sugar
1 teaspoon ground turmeric
1 teaspoon salt
½ teaspoon curry powder
¼ teaspoon ground black pepper
2 bay leaves
1 ½ tablespoons chutney

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium-high heat; add onion and saute until browned, about 5 minutes. Add ground beef to onion and saute until browned, about 5 minutes.
  • Soak bread in 1/4 cup milk in a small bowl, mash, and add to ground beef mixture; stir in 1/2 of beaten egg, raisins, vinegar, sugar, turmeric, salt, curry powder, and ground black pepper.
  • Transfer beef mixture to glass baking dish; insert bay leaves.

Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka

2 slices white bread
2 onions, chopped
25g butter
2 garlic cloves, crushed
1kg packet lean minced beef
2 tbsp Madras curry paste
1 tsp dried mixed herbs
3 cloves
5 allspice berries
2 tbsp peach or mango chutney
3 tbsp sultana
6 bay leaves
300ml full-cream milk
2 large eggs

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
  • Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
  • Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
  • For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.
