1 tablespoon all-purpose flour
2 tablespoons chili powder, or more to taste
2 cups chicken stock
1 (6 ounce) can tomato paste
1 teaspoon dried oregano
1 teaspoon ground cumin
¼ teaspoon salt
cooking spray
1 pound ground beef
1 teaspoon extra-virgin olive oil
1 onion, diced
2 (4 ounce) cans fire-roasted diced green chiles
½ green bell pepper, diced
1 (15 ounce) can black beans, rinsed and drained
8 low-carb high-fiber tortillas (such as La Tortilla Factory®)
1 (8 ounce) package shredded low-fat Mexican cheese blend

Steps:

  • Heat vegetable oil in a saucepan over medium heat. Add flour; cook and stir using a wooden spoon until smooth, 1 to 2 minutes. Mix in chili powder and cook until fragrant, about 30 seconds. Stir in chicken stock, tomato paste, oregano, cumin, and salt; bring to a boil. Reduce heat and simmer enchilada sauce until thickened and smooth, about 15 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Coat the inside of a 9x13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Heat olive oil in a separate skillet over medium heat; cook and stir onion, green chiles, and green bell pepper until softened, 5 to 10 minutes. Mix in ground beef and black beans. Stir in 1/2 of the enchilada sauce; cook and stir 1 to 2 minutes.
  • Spoon beef mixture evenly onto the center of each tortilla and roll tortilla around filling. Place tortillas, seam-side down, in the baking dish. Cover tortillas with remaining enchilada sauce and Mexican cheese blend.
  • Bake in the preheated oven until cheese is melted, about 20 minutes.

Authentic Enchilada sauce is not tomato based. This recipe is delicious. Serve with one of the great spanish rice recipes here on Food.com and my Easy and Delicious Borracho Beans (Recipe #441035) and you have a great meal.

1/4 cup butter
4 tablespoons flour
2 tablespoons chili powder (this will be mild. 3 tablesoons medium)
1 1/2 teaspoons cumin powder
1 teaspoon garlic powder
3 cups chicken stock
1/2 teaspoon salt
1/2 cup shredded cheese (this is NOT traditional but I like the creaminess it adds)
1 lb ground beef
1/4 onion, chopped (use 1/2 teaspoon onion powder if you have onion haters)
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Worcestershire sauce
12 corn tortillas
3 cups shredded cheese, divided (your choice...i use the Mexiblend cheese)
chopped tomato
sour cream
diced onion
shredded lettuce

Steps:

  • Enchilada Sauce: In a medium saucepan heat butter, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder, cumin and garlic powder and cook for 30 seconds. Slowly add chicken broth and stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Add salt and adjust as desired. Sprinkle cheese over top of sauce and stir in until melted.
  • Enchiladas: While enchilada sauce is simmering, brown ground beef and onion. Season with garlic powder, salt, pepper and Worchestershire sauce. Stir in 1-1/2 cups of the cheese.
  • In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  • Dip tortillas in enchilada sauce, coating both sides (one at a time).
  • Fill each tortilla with a large spoonful of meat mixture.
  • Roll tortilla and place seam side down in pan. Continue until meat mixture is gone.
  • Pour remaining enchilada sauce over tortillas and top with remaining cheese.
  • Bake in 350 degree oven for 20 minutes. Allow to sit for 5 minutes before serving.
  • Serve with desired garnishes.

Green Chile Enchiladas are corn tortillas stuffed with ground beef, onions, and Monterrey Jack cheese, then smothered in green chile sauce.

1 pound ground beef
1 medium onion (finely chopped)
1 clove minced garlic
Salt and pepper to taste
1 teaspoon chili powder
¼ teaspoon cumin powder
Vegetable oil for frying tortillas
1 dozen corn tortillas
2 cups Monterey Jack cheese, shredded (4 ounces)
4 tablespoons butter
4 tablespoons all-purpose flour
¾ teaspoon salt
2½ cups milk
1 4-oz can chopped green chiles

Steps:

  • Brown 1 lb ground beef along with 1 medium chopped onion, 1 clove minced garlic, salt, and pepper. Drain excess grease.
  • Add 1 t chili powder and ¼ t cumin. Cook for another 2 minutes to bloom the spices.
  • Add 2 T of water to the skillet. Cover and let sit on LOW heat while you prepare the tortillas and cheese.
  • To soften tortillas, heat ½ inch of vegetable oil in a small skillet and dip each tortilla in the oil to soften.
  • Melt 4 T butter in a medium-sized non-stick skillet over medium heat.
  • Add 4 T flour and stir until bubbly.
  • Whisk in 2½ c milk. Continue stirring until the mixture is slightly thickened. Add green chiles and remove the pan from heat.
  • Place 4 T butter in a microwave-safe Pyrex pitcher. Melt in the microwave on HIGH for about 1 minute.
  • Whisk in 4 T flour and ¾ t salt until smooth. Then whisk in 2½ c milk until smooth.
  • Microwave for 4-7 minutes on HIGH. Stir after 3 minutes and every minute thereafter. Keep cooking and stirring until the mixture is thick like a medium cream sauce.
  • Stir in green chiles.
  • Place a generous tablespoon of meat mixture onto a softened tortilla. Add a tablespoon of cheese. Roll up and place seam side down in a 9 x 13-inch baking dish. Prepare remaining tortillas in the same manner. Any remaining meat or cheese may be sprinkled on top or sides of enchiladas.
  • Pour sauce over enchiladas and cover with foil. If you have any remaining cheese, sprinkle it over the top of the sauce-covered enchiladas.
  • Heat in a 350˚F (180˚C)oven for 10-15 minutes or until heated through.

1/2 cup chopped onion (1 medium)
1 cup frozen corn
1/2 cup sour cream
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
8 oz. (2 cups) shredded colby-Monterey Jack cheese
1 (10-oz.) can Old El Paso™ Enchilada Sauce
6 (8-inch) flour tortillas
Shredded lettuce, chopped tomatoes and additional sour cream, if desired

Steps:

  • Heat oven to 350°F. In 10-inch nonstick skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain. Add corn; cook and stir about 3 minutes or until corn is thawed. Stir in sour cream, green chiles and 1 cup of the cheese.
  • Spread about 1/4 cup of the enchilada sauce in 13x9-inch (3-quart) glass baking dish. Spread about 2 teaspoons enchilada sauce on each tortilla. Top each with 2/3 cup beef mixture. Roll up tortillas; place seam side down over enchilada sauce in baking dish.
  • Drizzle remaining enchilada sauce evenly over filled tortillas. Sprinkle with remaining 1 cup cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish and seal tightly.

Shredded beef green chile enchiladas, a wonderful Mexican inspired comfort food that combines shredded beef and green chiles with easy to roll tortillas.

1 (3lb) chuck roast
1 pkg taco seasoning
1 cup beer
2 (10 oz) cans green enchilada sauce
3/4 tsp garlic powder
1/2 tbsp chili powder
1/2 tsp black pepper
1/4 tsp salt
8 oz sour cream
1 (4 oz) can green chilies
2 cups shredded sharp cheddar cheese, divided
10 (8 inch) flour tortillas
Optional toppings, diced tomatoes, green onion, avocado, additional sour cream

Steps:

  • Generously sprinkle roast on both sides with taco seasoning.
  • Place is slow cooker and pour beer over the top.
  • Cook on high for 5-6 hours until very tender.
  • Once tender, shred beef with two fork, right in the slow cooker so that it mixes in with the liquid.
  • Preheat oven to 350 degrees.
  • In a medium mixing bowl, combine enchilada sauce, garlic powder, chili powder, black pepper, salt and sour cream.
  • Remove half of the sauce to another mixing bowl and stir in the shredded beef, green chilies and 1 cup of the cheese.
  • Take half of the remaining sauce mixture and spread in the bottom of a 9×13 inch baking dish that's been coated with cooking spray.
  • Divide chicken mixture between the tortillas, about half a cup in each, spread down the middle.
  • Wrap each tortilla up by folding in the sides and then rolling up. Set each seam side down in baking dish.
  • Spread remaining sauce over the top of the tortillas and sprinkle the remaining 1 cup of cheese on top.
  • Cover tightly with foil and bake in preheated over for 30 minutes.
  • Top with desired toppings and serve

2 pounds ground beef, 80/20 blend
1 t. kosher salt
1/2 onion, small dice
2 garlic cloves, minced or pressed through a garlic press
1/2 t. onion powder
1 t. black pepper
1 t. Texas chili powder
1/2 t. garlic powder
3 T. water
1/2 c. tomato sauce (4 oz. can)
1 batch of Green Enchilada Sauce
25-10 corn tortillas
1/4 c. oil for heating the tortillas
1 c. shredded Monterrey Jack or Quesadilla or Oaxaca cheese

Steps:

  • Prepare the Green Enchilada Sauce according to the instructions found here. For the enchilada filling: Place the ground beef in a saute pan over medium-high heat and sprinkle with kosher salt. Sear the meat well, drain, and then add in the diced onion and garlic. Add the spices. Cook 2 minutes to soften the vegetables. Add in water and cook 5-10 minutes to a saucy consistency. The beef filling should be moist but not runny with water. Continue simmering if you need to evaporate excess water. Add the tomato sauce. Simmer 5 minutes or so and season to taste. Remove from the heat and cool. In a saute pan, add a little oil and fry each corn tortilla for several seconds on both sides. Remove the tortilla to a plate lined with paper towels and repeat with the remaining corn tortillas. This warms them for the filling and makes them rollable. Place about 1/4 c. of green enchilada sauce in a large casserole dish. Lay a tortilla flat and fill with about 2-3 T. of filling. Roll up and place into the casserole dish, seam side down. Repeat with the remaining tortillas until your casserole dish is full. Pour the green enchilada sauce over the enchiladas and cover with cheese of your choice. Bake at 350 degrees for 25 minutes. Remove and top with pickled jalapenos, sour cream, cilantro, or your favorite toppings! Serve hot with beans and rice!
