Beef Gyro, Trader Joe's Style image

Who needs overpriced Mediterranean joints when you got trusty Trader Joe's for less than half the cost?

1 pita pocket
3 slices Trader Joe's gyro meat
1 dollop hummus
3 tablespoons Greek yogurt
1 tablespoon lemon juice
1 pinch dried oregano
1 clove garlic chopped finely
Sliced red onion
Chopped tomato and cucumber
Lettuce leaves
Feta

Steps:

  • Chop up your gyro toppings-tomatoes, cucumbers, onions, lettuce, and anything else you feel like adding.
  • To make the sauce, mix together the Greek yogurt with a squeeze of lemon juice, garlic, and oregano.
  • Heat gyro slices in a hot skillet for 20 seconds per side. Alternatively, you can also microwave the slices on high for 30 seconds.
  • Cut the pita bread down the center to make a little pocket for everything to go in. Spread a layer of hummus inside.
  • Stuff the pita pockets with the meat and toppings. Garnish with your yogurt sauce and the feta.

Going out to restaurants got to be expensive for our family, so I came up with this homemade beef gyro. Usually, I set out the fixings so everyone can assemble their own. My husband and our two busy teens request them often. -Sheri Scheerhorn, Hills, Minnesota

1 cup ranch salad dressing
1/2 cup chopped seeded peeled cucumber
1 pound beef top sirloin steak, cut into thin strips
2 tablespoons olive oil
5 whole pita breads, warmed
1 medium tomato, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 small onion, thinly sliced
1 cup crumbled feta cheese
2-1/2 cups shredded lettuce

Steps:

  • In a small bowl, combine salad dressing and cucumber; set aside. In a large skillet, cook beef in oil over medium heat until no longer pink. , Layer half of each pita with steak, tomato, olives, onion, cheese, lettuce and dressing mixture. Fold each pita over filling; secure with toothpicks.
