1 boneless beef chuck roast (2 pounds)
3 medium carrots, peeled and chopped
2 medium sweet red peppers, chopped
1 medium onion, chopped
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/2 cup reduced-sodium soy sauce
2 tablespoons packed brown sugar
2 tablespoons white vinegar
1 garlic clove, minced
1/2 teaspoon pepper
3 tablespoons cornstarch
3 tablespoons water
24 Bibb or Boston lettuce leaves
Sliced green onions, optional

Steps:

  • In a 4- or 5-qt. slow cooker, combine roast, carrots, peppers and onion. Stir together next 6 ingredients in small bowl; pour over roast. Cook, covered, on low until roast is tender, 6-8 hours., Remove roast from slow cooker. Cool slightly; shred roast with 2 forks., Skim fat from cooking juices; transfer juices and vegetables to a small saucepan. Bring to a boil over high heat. In a small bowl, combine cornstarch and water. Gradually stir cornstarch mixture into juices; cook until sauce is thickened, 3-4 minutes. Return beef, sauce and vegetables to slow cooker; cook until heated through, 10-15 minutes., Serve beef in lettuce leaves. If desired, sprinkle with green onions.

1 tablespoons bottled chili-garlic sauce
1 1/2 teaspoons toasted sesame oil
3 tablespoons low-sodium soy sauce
1/4 cup hoisin sauce
2 tablespoons rice vinegar
2 tablespoons sherry or Chinese cooking wine
8 ounces extra-firm tofu
2 teaspoons canola oil
2 tablespoons fresh minced ginger
4 scallions, greens trimmed and reserved, thinly sliced (about 1/3 cup each greens and whites - 3/4-ounce each)
1/2 pound lean ground beef (90 percent or leaner)
1/2 cup finely diced water chestnuts
1 large head Bibb lettuce, outer leaves discarded, leaves separated
1 red bell pepper, finely diced
1/4 cup chopped peanuts

Steps:

  • In a bowl, whisk together chili-garlic sauce, sesame oil, soy sauce, hoisin sauce, vinegar and sherry.
  • Slice the tofu into 1/2-inch thick slabs and lay the slices on top of paper towels. Use more paper towels to firmly pat the tofu in order to remove as much water as possible. This should take about 2 minutes and use about 3 paper towels. Finely mince dried tofu and set aside.
  • Heat the oil in a wok or extra-large skillet over medium heat. Add the ginger and scallion whites and cook until scallion whites are translucent and ginger is fragrant, about 2 to 3 minutes. Add ground beef and tofu and cook, stirring, until beef is opaque and just cooked through, about 4 to 5 minutes. Add reserved sauce. Reduce heat to a simmer and cook, stirring, an additional 3 to 4 minutes. Add water chestnuts and stir to incorporate.
  • Fill each lettuce leaf with the filling. Serve garnished with scallion greens, red peppers and peanuts.

1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced

2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

350g trimmed sirloin steak
2 tbsp teriyaki sauce marinade, (we used Kikkoman teriyaki marinade)
1⁄2 cucumber
2 tbsp coriander , roughly chopped
juice 1⁄2 lime
6 Little Gem lettuces leaves
1 red chilli , deseeded and thinly sliced
1⁄2 red onion , thinly sliced

Steps:

  • Put the steak between two sheets of cling film and beat with a rolling pin until half its original thickness. Thinly slice the steak, then mix with the teriyaki marinade in a bowl. Leave to marinate for 5-10 mins.
  • Roughly dice the cucumber and mix with the chopped coriander and lime juice. Season with a little salt.
  • Heat a frying pan until very hot, then fry the steak slices for 1½-2½ mins for rare to medium, turning the slices halfway through.
  • Pile the cucumber mixture into the lettuce leaves, then top with the seared teriyaki beef, chilli and red onion.

Just about any large leaf lettuce can be used to create cups or folded packets for this spicy Szechuan-style dish of ground beef. The filling is also good on flour tortillas or pita pockets with shredded lettuce. It makes a great warm weather light dinner, perfect for sharing with friends! This recipe was printed in the food section of the December 17, 2008 Houston Chronicle and was adapted from "Quick and Easy Chinese".

3 tablespoons soy sauce
2 tablespoons dry sherry (or white wine or Shaoxing wine)
2 teaspoons cornstarch
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 lb lean ground beef
2 tablespoons vegetable oil
2 tablespoons chopped fresh ginger
1 tablespoon chopped fresh garlic
1/2 teaspoon red pepper flakes
8 ounces water chestnuts, drained and diced
3 tablespoons finely chopped scallions
1 tablespoon sesame oil
20 cup-shaped lettuce leaves (such as iceberg,bibb or Boston)

Steps:

  • In a small bowl,combine soy sauce,sherry,cornstarch, sugar and salt; stir well and set aside.
  • In a medium bowl, use a spoon to break up the ground beef; gently mix in soy-sauce mixture. Set aside 10 to 15 minutes.
  • Heat wok or large, deep skillet over medium-high heat until very hot.
  • Add oil and swirl to coat pan; add ginger and garlic.
  • Cook for about 1 minute, stirring, until fragrant but not browned.
  • Crumble in beef, and use spatula or large slotted spoon to break it up and spread meat over pan to help it cook evenly.
  • Cook until it changes color on one side, 1 to 2 minutes.
  • Turn meat and cook another minute undisturbed.
  • Toss well, using a spatula to break up any large chunks.
  • When meat is cooked, add pepper flakes and scallions, then toss well.
  • Add sesame oil and remove from heat, tossing until sesame oil is well blended.
  • Transfer meat to serving plate; serve hot,warm or at room temperature.
  • Arrange lettuce cups on serving platter; fill each with a spoonful of beef or provide lettuce cups and plate of beef and let guests assemble lettuce packets themselves.

1 small red chili pepper, seeded and diced
8 cups crisp iceberg lettuce
1/8 cup parsley, to garnish

Steps:

  • 1. Cut steak into thin slivers and put in a bowl. Add soy sauce, sherry, ginger, garlic, five-spice powder and chili sauce. Mix well, then cover and marinate in refrigerator for 1 hour, stirring occasionally. Heat oil in a large frying pan or wok. Add onion and red pepper and stir-fry for 1 minute. 2. Add beef mixture to pan and stir-fry for 2-3 minutes, stirring all the time. Turn mixture into a warm serving dish. Serve at once with chilled lettuce cups, garnished with sprig of parsley. 3. To serve, simply spoon beef mixture into lettuce cups and eat with the fingers. Serve with plenty of napkins or finger bowls.

Steps:

  • For the marinade, whisk together soy sauce, beer, garlic, sugar, 2 tablespoons lime juice, Sriracha and sesame oil in a large bowl. Add meat and toss to coat. Let sit at room temperature 1 hour or refrigerate covered up to 24 hours.
  • To Prepare Condiments. Toss carrot with remaining lime juice and salt in a small bowl and set aside. Place peppers, green onions, mint, cilantro, sesame seeds, sriracha and rice in individual serving bowls. Arrange lettuce on a platter.
  • To Prepare the Steak: Heat peanut or vegetable oil in a skillet or grill pan over medium-high heat. Add beef strips in batches in one layer without overcrowding. Brown on both sides. Transfer to a platter and keep warm.
  • Once all the beef has been browned, pour the remaining marinade and any collected meat juices into the skillet. Bring to a boil, scraping up any bits and reduce until somewhat thickened. Pour into a small bowl.
  • To serve, top a lettuce leaf with a few spoonfuls of rice, 1-2 meat strips, and a spoonful of the marinade reduction. Sprinkle with the other condiments and drizzle with sriracha. Roll up and eat.
