Miso-Braised Beef with King Mushrooms image

As much as I love a traditional beef stew, or braised beef short ribs, I like to shake things up sometimes by applying the same techniques to a few non-traditional ingredients. This melt-in-your-mouth braised beef dish is cold weather comfort food at its finest. Miso adds an extra savory element, balanced with a touch of maple syrup, which further enhances the autumnal feel. Serve over mashed potatoes, rice, or noodles.

1 (2 1/2 pound) boneless beef chuck roast, cut into 2-inch thick strips
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 tablespoons peanut oil
1 tablespoon butter
3 king trumpet mushrooms, halved lengthwise
1 yellow onion, diced
¼ cup sake
3 tablespoons yellow miso
2 tablespoons maple syrup
2 tablespoons ketchup
½ cup chicken broth
1 tablespoon rice wine vinegar
¼ cup thinly sliced red chile pepper
¼ cup thinly sliced green onions

Steps:

  • Season beef with kosher salt, black pepper, and cayenne.
  • Heat peanut oil in a pan over high heat. Brown beef strips on all sides, about 3 minutes per side. Turn off heat and transfer beef to a plate.
  • Let pan cool slightly, 1 to 2 minutes; melt butter in residual heat. Turn heat to medium and add mushrooms, cut-side down. Cook until mushrooms are lightly brown, 3 to 4 minutes. Flip; continue to cook until golden, 2 to 3 minutes more. Add onion and season with salt; cook until slightly golden, 3 to 4 minutes.
  • Stir in sake and deglaze the pan, scraping up browned bits using a wooden spoon. Stir in miso, maple syrup, ketchup, and chicken broth; bring to a simmer, about 5 minutes. Add browned beef, mushrooms, and their juices.
  • Cover and let simmer over low to medium-low heat until meat is fork-tender, 2 to 3 hours, turning beef halfway through cooking time.
  • Stir in vinegar, chiles, and green onions. Cover and cook for 5 minutes more. Taste and adjust seasonings.

2 tablespoons miso
1 1/2 tablespoons mirin (Japanese sweet rice wine)
1 teaspoon soy sauce
1 teaspoon Asian sesame oil
1 1/2 pounds (1/2-inch-thick) blade steaks

Steps:

  • Whisk together all ingredients except steaks. With kitchen shears in middle of steaks, snip once through center gristle to prevent curling. Pat steaks dry and coat with miso mixture. Let stand 10 to 20 minutes.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see grilling procedure
  • Oil grill rack, then grill steaks, covered only if using a gas grill, turning over once, 4 to 6 minutes total for medium-rare.
  • Serve with: Spicy Napa cabbage slaw and steamed rice

Top wholewheat noodles with lean sirloin steak and vegetables for a low-calorie Chinese dinner that can be on the table in under 30 minutes

200g lean sirloin steaks , all visible fat removed
1 tbsp miso paste (I used Clearspring)
thumb-sized piece ginger , half finely grated, half cut into matchsticks
4 garlic cloves , 1 finely grated, 3 sliced
175g broccoli , cut into florets
2 star anise
2 nests of wholewheat noodles
4 spring onions , cut into lengths, then finely shredded into long strips
2 tsp rapeseed oil
175g button mushrooms , halved if large
reduced-salt soy sauce , to serve (optional)
sesame oil , to serve (optional)

Steps:

  • Cut the steak into strips across the grain with a sharp knife, then mix with the miso, grated ginger and grated garlic. Grind in some black pepper and toss really well to coat the meat.
  • Bring a medium pan of water to the boil, add the broccoli and blanch for 2 mins. Remove with a slotted spoon. Add the star anise, noodles and spring onions to the water, and cook for 5 mins until the noodles soften.
  • Meanwhile, heat the oil in a non-stick wok and stir-fry the steak for 1 min until it just changes colour. Remove from the pan and add the garlic slices, remaining ginger and mushrooms. Stir-fry until the mushrooms soften. If the wok looks a bit dry, splash in a little water from the noodles.
  • Return the steak to the wok, add the broccoli and toss well over the heat to warm through, adding a little more water to loosen the sauce a little. Drain the noodles and pile onto plates. Top with the stir-fry and serve drizzled with a little soy sauce or sesame oil, if you like.

1 pound ground beef
1 pound fresh mushrooms, thinly sliced
2-3/4 cups water

  • Break noodles into small pieces; reserve 1/4 cup., In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. A super-speedy, healthy stir-fry, easily halved to serve one for an after-work supper

100g wholewheat noodles
2 tsp sunflower oil
125g pack purple sprouting broccoli (or Tenderstem), cut into short lengths
100g sugar snap pea , halved
4 spring onions , cut into short lengths
2 tbsp reduced-salt soy sauce
175g lean rump steak , thinly sliced
2 tsp sesame seeds
2 tbsp clear honey

Steps:

  • Cook the noodles in boiling salted water until just tender, then drain and rinse in cold water. Heat half the oil in a non-stick wok. Add the broccoli, peas and 2 tbsp water, then cover and steamfry for 3 mins. Remove the lid, add the spring onions and stir-fry for 2 mins, adding a splash more water if needed to cook the veg. Add the noodles and half the soy sauce and toss with the veg. Divide between 2 bowls and keep warm.
  • Wipe out the wok and heat the remaining oil until smoking. Tip in the beef and stir-fry for 2 mins over a high heat, but don't move it around too much initially or it will release liquid and stew rather than fry. Tip in the sesame seeds, cook for 1 min more, then add the honey. Toss to coat the beef well, then add the remaining soy and bubble briefly. Spoon over the vegetables and noodles and serve immediately.
