2 pounds beef tenderloin, trimmed and tied
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 baguettes, cut into twenty 1/2-inch-thick slices total
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup sour cream
1/4 cup applesauce
2 tablespoons horseradish
2 tablespoons mayonnaise
2 tablespoons breadcrumbs
2 tablespoon minced chives
Kosher salt and freshly ground black pepper
Watercress leaves, for garnish

Steps:

  • For the beef tenderloin: Preheat the oven to 500 degrees F.
  • Place the beef tenderloin on a baking sheet, drizzle with the olive oil and season liberally with salt and pepper. Rub the oil and seasoning evenly over the meat.
  • Roast the tenderloin until an internal thermometer reads 125 to 130 degrees F for rare to medium rare, about 20 minutes. Remove from the oven, tent with aluminum foil and let rest until it reaches room temperature, at least 20 minutes. Transfer to a cutting board and thinly slice.
  • For the crostini: Turn down the oven temperature to 400 degrees F.
  • Put the baguette slices on a baking sheet in 1 layer. Drizzle with the olive oil and sprinkle with salt and pepper. Bake until golden brown and toasted, about 5 minutes.
  • For the horseradish sauce: Add the sour cream, applesauce, horseradish, mayonnaise, breadcrumbs and chives to a medium bowl and mix until combined. Season with salt and pepper.
  • To assemble: Spread a dollop of horseradish sauce onto each toasted baguette piece, add a slice of beef tenderloin and then top with another dollop of horseradish sauce and a few watercress leaves.

3 8 oz beef tenderloins
2 garlic cloves, pressed
1 pound assorted mushrooms (crimini, oyster, stemmed shitake), thickly sliced
2 tablespoons chopped thyme, divided
1/4 cup medium-dry Sherry (amontillado)
1 5 oz package soft fresh goat cheese
16 diag cut 1/2-inch thick baguette slices, toasted

Steps:

  • Heat 1 tblespoon oil in heavy large skillet over medium-high heat. Sprinkle steaks with salt & pepper. Add to skillet and cook to desired doneness, 4-5 minutes/side for medium rare. Transfer steaks to plate to cool. Add 3 remaining tablespoons of oil to same skillet. Add garlic, stir 30 seconds. Add mushrooms and 1 tablespoon thyme. Sprinkle with salt and pepper. Saute until mushrooms are tender and brown, stirring often, around 10 minutes. Add sherry & cook until liquid is absorbed, scraping up browned bits, about 2 minutes. Remove from heat, season to taste with salt & pepper. DO AHEAD - Steaks and mushrooms can be made 1 day ahead. Wrap separately, refridgerate. Let stand @ room temp for 30 minutes before continuing. Thinly slice steaks. Spread goat cheese over each baguette slice. Place steak atop cheese. Divide mushroom mixture among crostini, pressing lightly to adhere. Sprinkle crostini with remaining thyme.

Mushroom topping:
3 tablespoons butter
12 ounces assorted wild mushrooms (such as stemmed shiitake, oyster, black trumpet, and crimini), sliced
1 1/2 teaspoons chopped fresh thyme
Thyme vinaigrette:
1/4 cup red wine vinegar
3 tablespoons fresh thyme leaves
2 tablespoons mayonnaise
1 small shallot, chopped
1/2 cup olive oil plus more for brushing
8 1/3- to 1/2-inch-thick slices pain rustique or other flat country bread
Truffle oil

Steps:

  • For mushroom topping:
  • Melt butter in large skillet over medium-high heat. Add mushrooms and thyme. Sauté until browned, about 8 minutes. Season with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover; chill. Rewarm before using.
  • For thyme vinaigrette:
  • Blend first 4 ingredients in blender 10 seconds. With machine running, gradually add 1/2 cup olive oil; blend until almost smooth. Season to taste with salt and pepper.
  • Preheat oven to 400°F. Arrange bread on rimmed baking sheet. Brush with oil. Bake until beginning to crisp, about 8 minutes.
  • Mound 1/4 cup mushrooms on each bread slice. Drizzle each with thyme vinaigrette, then sparingly with truffle oil.

1 beef tenderloin (4 to 5 pounds), tied
Coarse salt and freshly ground pepper
1/4 cup extra-virgin olive oil
8 ounces shiitake mushrooms
1 bunch fresh thyme sprigs
Shallot-Brandy Sauce

Steps:

  • Preheat oven to 425 degrees. Season beef with salt and pepper. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add beef, and brown on all sides.
  • Toss mushrooms with remaining 2 tablespoons oil in a bowl; season with salt and pepper. Add mushrooms and 3 thyme sprigs to skillet; place in oven. Cook until beef registers 125 degrees for medium-rare, 18 to 20 minutes. Let stand 20 minutes. Serve warm or at room temperature with mushrooms and shallot-brandy sauce. Garnish with thyme.

This was a great appetizer served to us at a 50th wedding anniversary party. Afterwards, I just couldn't stop thinking about these treats! Got the recipe from the country club that served them and here it is, just in time for the holidays. Everything can be done ahead of time - a plus! Enjoy!

24 slices baguette, 1/2 " thick
3 tablespoons garlic-flavored olive oil
1 lb filet of beef, roasted rare
1 (8 ounce) bottle horseradish sauce
1 tablespoon Dijon mustard
1 teaspoon chopped fresh thyme leave
24 slices plum tomatoes, sliced very thin
4 radishes, sliced thin

Steps:

  • Preheat oven to 350 degrees.
  • Brush one side of each bread slice with olive oil.
  • Place bread, oiled side up, on a baking sheet and bake for 12 minutes.
  • Turn slices over and bake 8 minutes more.
  • Cool bread and store in an airtight container up to 3 days.
  • Allow roasted beef to cool completely and slice very thin.
  • This can be done a day ahead.
  • In a bowl, combine horseradish sauce, mustard and thyme.
  • Cover and refrigerate up to 3 days.
  • When ready to serve, spread crostini with horseradish mixture, top with a tomato slice, and then a slice of beef.
  • Top with a small dollop of the horseradish mixture, and garnish with radish slices.
