CAJUN BUTTER STEAK BITES
Tender pan seared Cajun Butter Steak Bites are full flavoured with crispy edges. Seared in Cajun seasoning and garlic butter, ready in under 10 minutes. No marinating!

Steps:
- Combine cajun seasoning in a shallow bowl. Add the steak bites and toss to evenly coat.
- Heat 2 teaspoons oil in a skillet or pan over medium-high heat until hot.
- Sear the steak bites in batches for 2-3 minutes each side until edges are crispy and browned, adding extra oil as needed. Set aside.
- Reduce heat to medium. Add butter to the skillet and heat until melted. Sauté the chopped garlic until fragrant (about 30 seconds), while scraping up any browned bits from the pan.
- Take the pan off the heat. Throw the steak bites back in and toss through the garlic butter to evenly coat.
- Serve warm.

Steps:
- In a large bowl, combine the ground beef, rice, 1/2 cup of water and onion. Blend in salt, celery salt, garlic powder and pepper. Mix well. Shape into 1 1/2 inch balls.
- Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium heat, brown the meatballs; drain fat.
- In an 11x7 inch baking dish, combine the tomato sauce and 1 cup of water. Place the browned meatballs into the tomato sauce, turning to coat well.
- Cover and bake in a preheated oven for 45 minutes. Uncover, and cook for an additional 15 minutes.

BEEF PORCUPINES (CAJUN STYLE)
This is one of my daughter's favorite meals. Most recipes for Beef Porcupines that I see on the internet are either made in a tomato sauce, or with sour cream. These are in a beef gravy. Mmmmm!

Steps:
- Mix first nine ingredients, well.
- Shape into elongated meatballs.
- In large skillet, brown meatballs on medium high heat.
- Remove from pan. Drain all but one tablespoon of the fat.
- Saute large onion, bell pepper, and garlic until onions are transparent.
- Return meatballs to the pan.
- Mix beef base and 2 - 1/2 cups hot water.
- Slowly pour into skillet over meatballs.
- Heat over high heat until liquid comes to a boil. Reduce heat to medium low. Cover. Cook for 25 minutes.
- Dissolve cornstarch in 1/4 cup cold water.
- Pour over meatballs. Stir.
- Add peas, mushrooms, parsley, and green onion.
- Cover and simmer for 4 minutes. Serve.

Steps:
- Mix ground beef, uncooked rice, onion, garlic powder, salt, pepper, and poultry seasoning if using. Form ground beef into small balls.

- Preheat oven to 350°. Prepare cornbread batter according to package directions. Spread into a greased 11x7-in. baking dish., In a large skillet, cook beef over medium heat until no longer pink; drain. Add tomatoes, vegetables, tomato paste and seasoning. Bring to a boil. CAJUN BEEF AND GRITS RECIPE BY TASTY
Here's what you need: boneless beef check roast, kosher salt, neutral oil, red bell pepper, yellow onion, celery, garlic, diced tomato, tomato paste, Frank's RedHot® Original Cayenne Pepper Hot Sauce, McCormick Cajun Seasoning, nonstick cooking spray, unsalted butter, grits, whole milk, water, kosher salt, shredded sharp cheddar cheese, scallion

- Make the beef: Season the beef with 2 teaspoons of salt.
- Heat the oil in an Instant Pot on "Sauté" mode. Add the beef and sear on all sides, using tongs to turn the meat, 7-9 minutes total. Remove the beef from the Instant Pot and set aside.
- Add the bell pepper, onion, celery, and garlic to the Instant Pot and sauté for 5 minutes, until softened. Stir in the tomatoes, tomato paste, Frank's RedHot® Original Cayenne Pepper Hot Sauce, McCormick Cajun Seasoning, and the remaining teaspoon of salt.
- Return the beef to the Instant Pot and stir well. Put the lid on the Instant Pot, set the pressure valve to "Sealing," and pressure-cook for 50 minutes.
- Turn the pressure valve to "Venting" to release the pressure quickly. (Be sure to read all Instant Pot instructions carefully for safety.) Carefully remove the lid.
- Remove the beef mixture from the Instant Pot and set aside. Clean the Instant Pot insert.
- Make the grits: Generously coat the Instant Pot insert with nonstick spray. Add the butter and melt on "Sauté" mode. Add the grits and cook, stirring frequently, for 2 minutes, until fragrant. Whisk in the milk, water, and salt. Bring mixture to a simmer, then whisk well.
- Put the lid on the Instant Pot, set the pressure valve to "Sealing," and pressure-cook for 10 minutes.
- Let pressure naturally release for 15 minutes, then turn the pressure valve to "Venting" to release the rest of the pressure. Carefully remove the lid.
- Carefully hold the Instant Pot with an oven mitt and use a silicone spatula or wooden spoon to move the grits around and release from the bottom of the pot, then whisk well to incorporate.
- Stir in the cheddar cheese. Let cheese melt for 1 minute, then stir again. (If the grits get too thick before serving, stir in a bit of milk to loosen.)
- To serve, spoon the grits into shallow bowls. Scoop the beef mixture on top. Drizzle with Frank's RedHot® and garnish with the scallions.
