Steps:
- Heat oven to 350ºF.
- Place meat, fat side up, in roasting pan. Press peppercorns and 2 tsp. thyme onto surface of meat. Bake 2 to 2-1/4 hours or until 135°F. Meanwhile, mix sour cream, horseradish and sugar until blended. Refrigerate until ready to serve.
- Remove meat from oven. Cover with foil; let stand 15 to 20 min. or until medium-rare doneness (145°F).
- Meanwhile, melt butter in large skillet on medium heat. Add onions; cook and stir 8 to 10 min. or until golden brown. Add mushrooms; cook and stir 6 min. or until tender. Sprinkle with flour; cook and stir 1 min. Stir in broth; simmer 5 min. or until thickened, stirring constantly. Remove from heat; stir in mustard and remaining thyme.
- Slice meat. Serve with sauces.

STANDING RIB ROAST OF BEEF

- Preheat the oven to 425 degrees.
- Brush the meat with the olive oil. Combine all of the seasonings in a small bowl. Rub the seasoning paste uniformly over the meat. Place the meat, bone side down, in a roasting pan and roast for 20 minutes.
- At the end of 20 minutes, reduce the oven temperature to 350 degrees and continue cooking for 1 1/2 to 2 hours for medium rare or until a thermometer inserted near the center of the roast reads 130 degrees. While the beef is cooking, periodically, CAREFULLY pour off the fat that has accumulated in the roasting pan into a heat proof container.
- Remove the roast from the oven and allow to stand for 20 minutes before carving.
- After the roast has rested for 20 minutes, transfer it to a large cutting board, being careful not to burn yourself. Lay the roast bonesidedown on the cutting board. Insert a sharp knife between the meat and the rib bones, separating the meat from the ribs in one large piece to slice the beef into boneless slices or simply carve into rib portions, each with a bone attached . Carve the boneless meat into 1/2-inch thick slices.

- Combine garlic, salt, pepper, and thyme. Press evenly into surface of roast.
- Place a rack in a shallow roasting pan. Place roast on the rack. Don't add any water and don't cover.
- Roast for 18 to 22 minutes per pound for rare to medium. Cook longer if not done to your preference.
- Remove roast.
- For the currant sauce, mix the last three ingredients together. Heat on stove top.

- Heat oven to 350°F.
- Combine garlic, salt, pepper, and rosemary and press evenly onto the roast.
- Place meat on a rack in a shallow roasting pan.
- Put meat thermometer in thickest part of the meat. Do not add water or cover.
- Roast meat for 18 minutes per pound for medium rare. Roast until thermometer reads 140°F and place meat on a large cutting board and let is sit for 15 minutes.
- Meanwhile, in a small saucepan combine the sauce ingredients and cook over medium heat for about 5 minutes or until bubbly, stirring occasionally.
- Carve roast into slices and serve with sauce.
