- In a bowl, combine the onions, cheeses, mayonnaise, mushrooms and olives. Spread on bread slices and place on ungreased baking sheets. Bake at 350° for 8-10 minutes or until bubbly.

Steps:
- Brown sausage and ground beef.
- Chop in skillet till in fine pieces.
- Drain.
- Add tabasco and Velveeta cheese and mix until melted.
- Spread on the small party rye bread.
- Bake at 300 degrees until hot, usually 10-15 minutes.
- These are easy to prepare in advance.
- freeze then, when needed pop them into the oven for impromptu parties.
CHANE'S BEER AND RYE BEEF STEW
Almost like a traditional Scottish stew. Adjust spices to taste while cooking. I serve this with garlic mashed potatoes piped on the plate around the stew.

Steps:
- Mix rye flour, whole wheat flour, 1 teaspoon ground pepper, 1 teaspoon thyme, 1 teaspoon caraway seeds, garlic powder, and basil in a large resealable plastic bag. Add beef to the bag a handful at a time, tossing to coat.
- Transfer beef to a large slow cooker. Add remaining 1 1/2 teaspoon thyme, 1 teaspoon caraway seeds, crushed tomatoes, onion, salt, and garlic. Pour in beer.
- Cover and cook on Low for 3 to 4 hours.
- Stir stew. Mix in frozen carrot mixture, green bell pepper, tomato paste, mushrooms, beef broth, gravy mix, hot sauce, and sugar.
- Cover and cook on Low until beef is tender and flavors combine, about 4 hours more. Season with remaining 1 1/2 teaspoon pepper.

- Preheat oven to 350 degrees F (175 degrees C).
- Place ground beef and ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain fluids.
- In a medium saucepan over low heat, melt the processed cheese.
- Mix the melted processed cheese into the meat mixture. Spoon the blended mixture onto cocktail rye bread slices. Arrange slices in a single layer on a large baking sheet.
- Bake in the preheated oven 10 to 12 minutes, until processed cheese begins to brown. Serve warm

- preheat oven to 400F.
- Slice bread into 20 pieces. If using a 1.5 loaf, slice into 3/4" to 1" slices and cut those in half.
- Mix all other ingredients in a bowl.
- Place about 1 tablespoon of cheese mixture onto each piece of bread and place on a baking sheet either oiled or lined with parchment paper.
- Bake for 12 minutes or until cheese is lightly browned in spots. Broiling is good, also, but be careful not to burn or over brown.
- Cool and serve.

- Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
- Broil for 3 to 5 minutes, until cheese is melted. Serve warm.
