1 1/2 lbs. lean ground beef ((I use 85/15))
1 small onion (chopped (or half a large onion))
2 cloves garlic (finely minced)
1 teaspoon salt
1/2 teaspoon black pepper
16 ounces sliced white button or baby bella mushrooms
4 ounces cream cheese, (cubed)
2 cups beef broth
1/2 cup milk
3 Tablespoons all-purpose flour
1/2 cup sour cream
Salt & Pepper (to taste)

Steps:

  • Add the ground beef, onion, and minced garlic to a large skillet set over medium-high heat on the stove and season with the salt and pepper. Cook, stirring occasionally, until the meat is almost browned but still slightly pink and the onions have begun to soften, about 5 minutes. Drain any excess grease from the pan.
  • Add the sliced mushrooms to the ground beef and onions and continue cooking for another 5 minutes or so, until the mushrooms are softened and brown and the meat is fully cooked.
  • Add the cream cheese to the cooked meat and mushrooms and let it sit for 1-2 minutes to melt somewhat before stirring it into the meat mixture. While the cream cheese melts, combine the beef broth and milk in a separate bowl and whisk in the flour until no lumps remain.
  • After stirring in the melted cream cheese, pour the beef broth/milk/flour slurry into the pan with the meat and mushrooms and cook for 3-4 minutes, stirring occasionally, until slightly thickened and bubbling.
  • Remove from the heat and stir in the sour cream. Season with additional salt and pepper, to taste.
  • Serve over hot buttered egg noodles, sprinkled with freshly chopped parsley, if desired.

1 pound ground beef
¼ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon butter
1 onion, diced
2 teaspoons minced garlic
3 tablespoons all-purpose flour
1 cup beef broth
2 teaspoons Worcestershire sauce
¾ teaspoon prepared mustard
¼ cup light sour cream
¼ cup light cream cheese, softened

Steps:

  • Heat a large skillet over medium-high heat. Crumble ground beef into the hot skillet; season with salt and pepper. Cook and stir beef until completely browned, 7 to 10 minutes. Drain and discard any excess grease. Transfer beef to a bowl.
  • Melt butter in the skillet over medium heat. Cook and stir onion and garlic in hot butter until softened, 3 to 5 minutes. Stir flour into onion mixture; cook and stir until flour is browned, about 1 minute. Return beef to the skillet; stir. Pour beef broth over the mixture in the skillet; bring to a boil. Stir Worcestershire sauce and mustard through the mixture.
  • Place a cover on the skillet, reduce heat to medium-low, and cook mixture at a simmer until the consistency is gravy-like, about 1 hour.

3 pounds boneless top sirloin
1 ½ teaspoons salt
freshly ground pepper, (to taste)
2 tablespoons butter
2 tablespoons vegetable oil
1 small onion, (diced (about 1 cup))
1 tablespoon minced garlic
½ cup full-bodied red wine
2 cups low-sodium beef broth
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
12 medium cremini mushrooms, (sliced (about 2 cups))
⅓ cup cream cheese or Neufchatel, (softened)
⅓ cup sour cream ((I use light sour cream))
2 tablespoons cornstarch
additional salt and fresh ground pepper, (to taste)
2 tablespoons chopped fresh chives
long grain white rice or egg noodles, (prepared according to package directions)

Steps:

  • Trim edges of sirloin of any excess fat. Thinly slice the meat and then slice each piece in half again lengthwise. Slices should be about ½-inch thick by about 2-inches long.
  • In a large skillet over MEDIUM-HIGH heat, melt the butter with the vegetable oil. Brown the beef strips quickly in batches, seasoning with salt and pepper as they cook. Be generous with the pepper. Remove beef from pan to a dish and repeat with remaining beef.
  • Once all the meat is cooked, add onions and garlic to beef drippings in empty pan. Cook and stir for a couple of minutes. Add wine and cook for a minute or two. Add beef broth, Dijon mustard and Worcestershire sauce and cook and stir for another minute. Add beef strips and combine well. Bring to a low boil, reduce heat to low, cover pot and simmer for 45 minutes to 1 hour, until beef is fork tender.
  • Remove about ¼ cup of the cooking liquid from the beef stroganoff to a small bowl. Add cornstarch to the liquid and mix until cornstarch has dissolved. Pour the cornstarch slurry into the beef stroganoff and cook, stirring, for a minute or two as sauce thickens slightly. Add sliced mushrooms and allow to cook, stirring occasionally about 10 minutes. Add cream cheese and sour cream, stir to combine and allow to cook another 5 minutes or until the cream cheese has completely melted into the sauce. Taste and season with additional salt and pepper if needed. Sprinkle with fresh chives and serve over rice.

½ cup red wine
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil

Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce

10 ounces medium or wide egg noodles

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

1 pound beef sirloin or tenderloin steak
salt and pepper
1 large white onion finely diced
1 cup sliced white mushrooms
3 cloves garlic minced
4 cups beef broth
1 tablespoon Worcestershire sauce
3-4 cups egg noodles
1/4 cup sour cream
1/ 4 cup cream cheese softened
salt and pepper to taste

Steps:

  • Thinly slice the beef across the grain into small bite-size strips. Season the beef with a little salt and pepper. Heat two tablespoons of cooking oil in a very large skillet, then add in half of the beef strips. Let brown, then flip and brown the other sides. Remove and plate, then quickly brown the other steak pieces, then place on the plate and set aside.
  • Add another tablespoon of cooking oil if needed and add in the onions and cook, stirring, until the onion is soft and translucent.
  • Stir in the mushrooms, cook and stir until the mushrooms are tender, about 10 more minutes.
  • Add in the garlic, fry for two more minutes.
  • Stir in the beef broth, deglazing the bottom of the pan by scraping the browned bits off with a wooden spoon and then add in the Worcestershire sauce.
  • Add in the egg noodles and stir to submerge completely in the mixture.
  • Bring to a boil, stirring constantly, then reduce heat to medium-low. Cover and simmer until the noodles are cooked, around 20 minutes. If needed, add more beef broth to cook the noodles completely if your liquid evaporates faster than the recipe. Let simmer until you have the amount of gravy you like - we like a lot!
  • Once the noodles are almost completely cooked, stir in the plated steak and continue to cook until cooked through completely. sour cream, and cream cheese until combined into the mixture completely. Serve garnished with fresh parsley.

  • Slice the beef into thin bite-sized strips. Mix the flour, salt and pepper in pie plate; toss beef strips in flour until coated.
  • Heat 1 tablespoon oil and 1 tablespoon butter in 12-inch heavy skillet. Brown half of the beef strips and the mushrooms over medium-high heat; remove to a clean bowl.
  • Add the onion, garlic and broth to the skillet; cook for 1 minute, scraping up brown bits from the bottom of the skillet.
  • Add the beef mixture back to skillet. Turn off the heat. Stir in the sour cream and simmer on low until heated through; do not boil.
