1 tablespoon olive oil
1 red bell pepper, diced
1 jalapeno, diced
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
8 medium inner romaine lettuce leaves (from a romaine heart)
1 cup shredded pepper jack cheese
1/2 cup chopped tomatoes
2 red onions, diced
2 avocados, each sliced into 8 slices
2 ears fresh corn, cooked and kernels sliced off
1 container sour cream
1/2 cup fresh cilantro leaves
2 limes, each cut into 4 wedges

Steps:

  • In a skillet over medium-high heat, add the olive oil, bell pepper, jalapeno and onions and cook until starting to soften, 3 to 4 minutes. Add the ground beef and cook until totally browned, about 8 minutes. Add the chili powder, cumin, salt, black pepper and crushed red pepper and stir to combine.
  • Pile the mixture into individual romaine lettuce leaves and top each with 2 tablespoons pepper jack, 1 tablespoon chopped tomatoes, one-eight of the red onion, 2 slices of avocado, one-eighth of the corn, a dollop of sour cream, 1 tablespoon cilantro and 1 lime wedge.

1 green bell pepper, chopped
1 yellow onion, chopped
2 tablespoons olive oil
2 tablespoons chicken stock
1 pound ground beef
3 tablespoons taco seasoning
2 large roma (plum) tomatoes, chopped
½ teaspoon salt
1 (8 ounce) package shredded Cheddar cheese
12 large romaine lettuce leaves

Steps:

  • Cook and stir green bell pepper and yellow onion in a skillet over medium heat with olive oil and chicken broth until onion is translucent, about 5 minutes.
  • Cut up ground beef into small pieces; place into a separate skillet over medium heat. Cook and stir ground beef with taco seasoning until beef is browned and crumbly, 5 to 8 minutes. Drain excess grease.
  • Sprinkle roma tomatoes with salt in a bowl. Place Cheddar cheese into a separate bowl.
  • Fill each lettuce leaf with about 2 tablespoons beef filling; top with 1 to 2 teaspoons green pepper mixture, roma tomato, about about 1 1/2 tablespoons Cheddar cheese.

1/4 cup chili beans, drained
1-1/2 teaspoons Worcestershire sauce
1 teaspoon onion powder
1 teaspoon chili powder
1/8 teaspoon garlic powder
Pepper to taste
2 flour tortillas (8 inches), warmed
1/3 cup shredded lettuce
1 plum tomato, chopped
2 tablespoons shredded cheddar cheese
6 baked tortilla chip scoops, coarsely crushed

Steps:

  • In a small nonstick skillet, cook beef over medium heat until no longer pink; drain. Stir in 1/3 cup salsa, beans, Worcestershire sauce, onion powder, chili powder, garlic powder and pepper.   • PREP: Begin by washing and drying the lettuce wraps. Set aside. Prepare everything for cooking the beef filling, because the process goes quickly! Mince the garlic, dice the onion, and stir together all of the seasonings. Drain and rinse black beans.
  • BEEF: Heat oil in a large skillet (cast iron if possible) over high heat. Add onion and cook for 2-3 minutes or until lightly golden. Add in the garlic and cook for 30 seconds.
  • BEEF CONT.: Add ground beef and cook for 2-4 minutes, breaking it up into small pieces as you go, until meat is no longer pink. If there is a lot of extra grease (from higher-fat percentages of beef), drain off. Add in all the seasonings: chili powder, paprika, cumin, cayenne pepper, oregano, garlic powder, salt, and pepper. Stir for another 2-3 minutes or until beef is completely cooked through. Add in the tomato sauce and stir until thickened, another 1-2 minutes. Stir in the drained and rinsed black beans.   • ASSEMBLE: Set out washed and COMPLETELY dried (don't want watery tacos!) lettuce pieces.
