BEEF TENDERLOIN WITH QUICK RED WINE PAN SAUCE



Beef Tenderloin with Quick Red Wine Pan Sauce image

One 3- to 5-pound beef tenderloin, trimmed
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
5 sprigs fresh thyme
3 cloves garlic, crushed
5 tablespoons unsalted butter, at room temperature
1 medium shallot, minced
1 cup red wine
2 cups beef stock
1 tablespoon all-purpose flour

Steps:

  • Remove the tenderloin from the refrigerator 1 hour prior to cooking.
  • On the tail end of the tenderloin, about a third of the way from where it begins to taper, make an incision almost all the way through the beef. Fold the tail onto the larger portion to make an even cylinder throughout. Use ten to twelve 8-inch pieces of butcher's twine to tie the tenderloin crosswise every 3/4 to 1 inch. This will help it to keep its shape and cook evenly.
  • Preheat the oven to 225 degrees F.
  • Pat the tenderloin dry. Brush with 1 tablespoon of the olive oil and season heavily with salt and pepper all around. Put the remaining 3 tablespoons olive oil in a cast-iron pan over medium-high heat. When hot, add the beef and sear on all sides until a nice crust is formed, 1 to 2 minutes per side. Add the thyme, garlic and 3 tablespoons of the butter to the pan. Once the butter is melted, use a spoon to baste the beef with the herb and garlic infused butter for 30 seconds.
  • Transfer the beef to a rack on a baking sheet, spoon over 2 tablespoons of the herb and garlic butter mixture from the cast-iron pan (reserve the pan) and roast until the internal temperature of the thickest part reaches 120 degrees F (for medium rare), 1 to 2 hours, depending on the size of the tenderloin. Cover the beef with foil and rest for 15 minutes.
  • Add the shallots to the remaining herb and garlic butter mixture in the cast-iron pan and sweat over medium heat until translucent, 3 to 5 minutes. Deglaze with the red wine and reduce until almost dry, 5 to 8 minutes. Add the beef stock, bring to a simmer and reduce by half, 10 to 15 minutes.
  • Meanwhile, thoroughly mix the remaining 2 tablespoons butter with the flour in a small bowl.
  • Reduce the heat to low and slowly whisk in the butter and flour mixture bit by bit, until the sauce reaches the desired consistency. Serve with the perfectly roasted beef.

8 tablespoons unsalted butter, divided
¾ cup finely chopped shallots, from 2-3 large shallots
1¼ cups red wine
3 cups beef broth
6 fresh thyme sprigs
¼ teaspoon kosher salt
⅛ teaspoon ground black pepper
1 teaspoon sugar
2 tablespoons all-purpose flour
1 (2 - 3 lb) center-cut beef tenderloin roast
Kosher salt (½ teaspoon per pound of beef)
Freshly ground black pepper (¼ teaspoon per pound of beef)
2 tablespoons vegetable oil
¼ cup beef broth

Steps:

  • Melt 5 tablespoons of the butter in a medium saucepan. Add the shallots and cook over medium-low heat, stirring occasionally, until soft and translucent, 7 to 8 minutes. Add the wine, beef broth, thyme sprigs, salt, pepper and sugar, and bring to a boil. Cook over medium heat for about 30 minutes, or until the liquid is reduced by about half.
  • While the liquid is reducing, place the remaining 3 tablespoons of butter in a small bowl and soften in the microwave, if necessary (it should be soft but not melted). Add the flour and, using a small spoon, mix into a smooth paste.
  • Once the wine mixture is reduced, reduce the heat to low and remove the thyme sprigs. Whisk the flour-butter paste, a teaspoonful at a time, into the simmering liquid, and simmer for a few minutes, until the sauce is thickened. Set aside. (The sauce can be made up to this point and refrigerated up to 3 days ahead of time.)
  • Let the beef stand at room temperature for 1 hour before roasting. Set an oven rack in the middle position and preheat the oven to 400°F.
  • Season the beef all over with kosher salt and pepper. Heat the oil in an oven-proof skillet over medium-high heat until almost smoking. Cook, turning with tongs, until well browned on all but one side, about 10 minutes total. Turn the tenderloin so that the un-seared side is down, and transfer the skillet directly to the preheated oven. (If your pan isn't oven-proof, transfer the beef to a lightly oiled roasting pan.) Roast until a thermometer inserted into the center of the meat registers 120°F-125° for medium rare, about 15 minutes, or until done to your liking (115°F-120°F for rare, 130°F-135°F for medium). Keep in mind that these temperatures account for the fact that the temperature will continue to rise about 5 degrees while the meat rests.
  • Transfer the meat to a carving board (preferably with a well for collecting juices) and let it rest, covered loosely with aluminum foil, for 10 to 15 minutes. Place a dishtowel or oven mitt over the handle of the roasting pan to remind yourself that it's hot.
  • Meanwhile, carefully discard the fat from the roasting pan (remember that the handle is hot!). Set the pan on the stovetop and add the ¼ cup of beef broth. Bring the broth to a boil, using a wooden spoon to scrape the fond, or brown bits, from the bottom of the pan. Add the flavorful broth to the red wine sauce, and then bring the sauce to a simmer.
  • Carve the tenderloin into ⅓-inch-thick slices. Serve the beef, passing the red wine sauce at the table.

4 lbs beef tenderloin, premium oven roast
3 tablespoons black peppercorns, coarsely crushed
1 teaspoon salt
3 tablespoons olive oil
4 tablespoons butter
2 cups diced shallots
1 teaspoon sugar
3 garlic cloves, minced
1 tablespoon minced fresh thyme
3 1/4 cups beef stock
1/2 cup dry red wine
1/4 cup brandy
1 bay leaf
2 tablespoons cornstarch

Steps:

  • Sprinkle beef with peppercorns & salt, pressing to adhere.
  • Heat oil in roasting pan, over medium-high heat; sear beef all over.
  • Roast in preheated 375F oven for about 55 minutes or until meat thermometer inserted in centre registers 140F (for medium-rare); transfer to cutting board, tent with foil & let stand for 15 minutes before carving.
  • Sauce: Heat 2 tbsp pf the butter in a saucepan over medium heat; cook shallots, stirring occasionally, for about 10 minutes or until softened.
  • Stir in sugar & cook for an additional 10 minutes or until shallots are golden & caramelized; stir in garlic & thyme and cook for a further 5 minutes.
  • Add stock, wine, brandy & bay leaf, bring to a boil, then reduce heat and simmer for about 30 minutes or until sauce is reduced to about 2 cups.
  • Whisk cornstarch with 1 tbsp water, then whisk into sauce and boil until smooth & thickened; discard bay leaf.
  • Add roasting pan juices to sauce, bring to a boil, then whisk in remaining butter; serve with roast.

1 Tbsp. oil
1/4 cup chopped onion
1/4 cup A.1. Original Sauce
1/4 cup dry red wine
1 tsp. dried marjoram leaves, crushed

Steps:

  • Sprinkle pepper over both sides of steaks; press into steaks to secure.
  • Cook steaks in hot oil in large skillet on medium heat 5 minutes on each side or to until cooked through. Remove steaks from skillet, reserving drippings in skillet; cover to keep warm.

1 beef tenderloin roast (3 lb)
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper
6 tablespoons butter or margarine
1/2 cup finely chopped shallots (3 medium)
1 cup dry red wine or marsala cooking wine
1 cup Progresso™ beef flavored broth (from 32-oz carton)
1/2 teaspoon pepper

Steps:

  • Heat oven to 400°F. If necessary, trim fat from beef. Turn small end of beef under about 6 inches. Tie turned-under portion with string at about 1 1/2-inch intervals. Place in shallow roasting pan. Sprinkle with salt and cracked black pepper. Insert ovenproof meat thermometer so tip is in center of thickest part of beef.
  • For medium-rare, roast uncovered 30 to 40 minutes or until thermometer reads 135°F. Cover loosely with foil; let stand 15 to 20 minutes until thermometer reads 145°F. (Temperature will continue to rise about 10°F, and beef will be easier to carve.) For medium, roast uncovered 40 to 50 minutes or until thermometer reads 150°F. Cover loosely with foil; let stand 15 to 20 minutes until thermometer reads 160°F.
  • Meanwhile, in 8-inch skillet, melt 2 tablespoons of the butter over medium-high heat. Add shallots; cook about 1 minute, stirring frequently. Add wine; cook about 4 minutes until reduced slightly. Stir in broth. Heat to boiling. Reduce heat to medium-low; cook about 10 minutes longer, stirring occasionally, until reduced to about 1 cup. Beat in remaining 4 tablespoons butter, 1 tablespoon at a time, with wire whisk. Beat in 1/2 teaspoon pepper.
  • Remove string from beef before carving. Serve sauce with beef.

3 lb (3- to 4-inch-long) beef marrowbones (about 6 bones), both ends of marrow exposed
2 cups dry red wine (preferably Bordeaux)
1/3 cup finely chopped shallot
1/2 cup chopped mushrooms
1 small carrot, finely chopped
2 large sprigs fresh thyme
1 bay leaf (not California)
10 black peppercorns, cracked
2 cupsVeal stock
4 teaspoons arrowroot
1 tablespoon Madeira
1/4 teaspoon salt
1 (2 3/4- to 3-lb) trimmed and tied beef tenderloin
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vegetable oil
1 tablespoon unsalted butter
1 cup beef broth
1 cup water
1/2 teaspoon salt
Garnish: watercress sprigs

Steps:

  • Rinse marrowbones and soak in warm water to cover 10 minutes. Press on 1 bone with your thumb at end of bone with smaller opening, pushing marrow out other end. Discard bone and repeat with remaining bones. Cut marrow crosswise into 1/8-inch-thick rounds. Cover marrow with cold water in a bowl and chill, changing water twice, 24 hours.
  • Boil wine, shallot, mushrooms, carrot, thyme, bay leaf, and peppercorns in a 3-quart heavy saucepan until reduced to about 1/2 cup, about 15 minutes. Add veal stock and return to a boil. Pour through a fine sieve into a 2-quart heavy saucepan, pressing on and discarding solids. Return sauce to a boil. Stir together arrowroot and Madeira and whisk into sauce. Simmer, whisking occasionally, until slightly thickened, about 2 minutes, then stir in salt and season with pepper.
  • Preheat oven to 350°F.
  • Pat beef dry and sprinkle with salt and pepper. Heat oil and butter in a small flameproof roasting pan over moderately high heat until foam subsides, then brown beef well on all sides, about 10 minutes. Put roasting pan with beef in middle of oven and roast until an instant-read thermometer inserted diagonally 2 inches into center registers 130°F for medium-rare, about 30 minutes. Transfer to a cutting board and let stand 10 minutes, then cut into 1/2-inch-thick slices.
  • Bring broth, water, and salt to a simmer in a small saucepan. Drain marrow and transfer with a slotted spoon to saucepan. Poach at a bare simmer 8 minutes.
  • Bring sauce to a simmer and add marrow using slotted spoon.
  • Pour some sauce over sliced beef and serve remainder on side. If desired, arrange marrow rounds between beef slices with slotted spoon.

1 2-3 pound beef tenderloin roast
Sea salt or Kosher salt (about ½ teaspoon per pound)
Freshly ground black pepper (about ¼ teaspoon per pound)
1 - 2 tablespoon olive oil
8 tablespoons unsalted butter (softened, divided)
2 large shallots
1 ¼ cups red wine
3 cups beef broth or stock
3 fresh thyme sprigs
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 teaspoon sugar
2 tablespoons all-purpose flour

Steps:

  • In a medium saucepan over medium-low heat, melt 5 tablespoons of butter. Add the shallots and cook stirring occasionally for about 5-7 minutes or until soft and translucent. Add the wine, beef broth, thyme sprigs, salt, pepper, and sugar, and bring to a boil. Cook over medium heat for about 35-45 minutes, or until the liquid is reduced by about half.
  • While the wine mixture is reducing, place the remaining 3 tablespoons of softened butter in a small bowl and add the flour. Mix the butter and flour until a smooth paste is formed.
  • Once the wine mixture is reduced, remove it from the heat and strain the sauce through a fine mesh strainer into a small bowl or measuring pitcher, discard the solids then return the wine mixture to the saucepan.
  • Return the saucepan to the stove and simmer over medium-low heat. Gradually, whisk in the flour mixture and allow the sauce to simmer until the sauce is thickened, about 2-3 minutes. Remove from the heat and set aside.You can make the sauce up to this point 2 days in advanced.
  • Remove the beef tenderloin from the refrigerator about an hour before roasting and allow it to sit at room temperature.
  • Using a thin sharp knife (like a utility or paring knife), trim the silver skin (the silver thin membrane of chewy connective tissue on the beef surface). Then, tie the tenderloin. If one end is more tapered than the other, bend it under the roast and secure it when tying so the roast is an even thickness throughout.
  • Pat dry the beef tenderloin and season it generously with salt and ground black pepper. Let the beef stand at room temperature for 1 hour.
  • Set an oven rack in the middle position and preheat the oven to 400 degrees Fahrenheit.
  • Heat a heavy pan over medium-high heat. Add the oil. When the oil is hot, place the roast in the skillet and sear, turning with tongs until golden brown and all but one side. Turn the roast over with tongs to the unseared side and turn off the heat.
  • Transfer the skillet to the pre-heated oven and roast for about 15 minutes, depending on the size of your roast, until an oven-safe meat thermometer inserted into the thickest part of the tenderloin registers 120 degrees Fahrenheit for medium rare, or until your desired doneness is reached. The temperature of the meat will continue to rise about 5 degrees after it is removed from the oven while it is resting, before slicing.
  • Transfer the beef roast to a cutting board or platter and allow it to rest, covered loosely with aluminum foil, for about 10 minutes.
  • Meanwhile, carefully discard some of the fat from the skillet. Set the pan on the stovetop and add the 1/4 cup of beef broth. Bring to a boil and using a wooden spoon scrape the brown bits from the bottom of the pan.
  • Remove the skillet from the heat and add the broth from the skillet to the red wine sauce. Mix to combine and then bring the sauce to a simmer over low heat for about 2-3 minutes. Remove from the heat.
  • Slice the beef tenderloin and serve with the wine sauce.

  • Trim steaks of excess fat and pat dry with towels; brush them lightly with some olive oil and lightly oil a nonstick pan. 1 beef tenderloin roast (about 2 1/2 pounds), trimmed and tied for roasting
1/2 teaspoon salt
1/2 teaspoon black pepper
For Sauce:
4 tablespoons unsalted butter
1/4 cup chopped onion
1/2 cup dry red wine
8 whole peppercorns
1 bay leaf
1 sprig fresh thyme (or 1/2 teaspoon dried)
2 cups beef broth
3 tablespoons flour

Steps:

  • 1. Heat oven to 450 degrees 2. Heat a large stainless steel skillet (not nonstick) over high heat until very hot. Add vegetable oil. Season all sides of the meat with salt and pepper. Place meat in the skillet and brown on all sides, about 6 minutes total. (see Tips for Success). Remove to roasting pan with rack. 3. Roast at 450 degrees for 25 to 30 minutes or until meat thermometer registers 5 degrees less than desired finished temperature on an instant-read thermometer. 4. Meanwhile, in a medium-size heavy bottomed saucepan, cook onion over medium heat in 1 tablespoon of the butter for 3 minutes until softened. Add red wine, peppercorns, bay leaf and thyme. Bring to a boil; boil for about 4 to 5 minutes until syrupy consistency. Add broth and simmer for 2 minutes. Strain and discard solids. Pour liquid back into saucepan. 5. In a small dish, mix together remaining 3 tablespoons butter and the flour with your fingers until combined and somewhat crumbly. Gradually whisk into simmering sauce until thickened. Remove sauce from heat; keep warm. 6. Remove meat from oven and allow to rest in a warm place 10 minutes before slicing. To serve, thinly slice meat; whisk sauce over low heat, if necessary to reheat, and serve with meat.

2 teaspoons dried thyme
2 teaspoons seasoned salt
1 beef tenderloin roast (5 pounds)
9 bacon strips, finely chopped
3 cups sliced fresh mushrooms
4 tablespoons butter, divided
4 medium onions, chopped (about 3 cups)
9 garlic cloves, minced
1/3 cup tomato paste
6 cups beef stock
2-1/4 cups dry red wine
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 425°. Rub thyme and seasoned salt onto all sides of roast. Place tenderloin on a rack in a shallow roasting pan. Roast 50-60 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, in a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add mushrooms to drippings; cook and stir 4-5 minutes or until tender. Your guests will rave when they taste this beef tenderloin --- The cooking time stated is for a 3-pound beef tenderloin and cooked to medium-rare but more on the rare side, you might want to cook it a bit longer or use a thermometer for perfect results. This will feed up to 6-8 people if you are planning on serving more then prepare two separate recipes for 2 beef tenderloins and roast in two separate baking dishes. Prep time includes bringing the beef down to almost room temperature, but it is only estimated.

1 (3 lb) beef tenderloin (the beef tenderloin can be a bit bigger)
1 tablespoon olive oil (can use a little more)
1/2-1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup butter (no subs!)
1 medium onion, thinly sliced
1 -2 tablespoon fresh minced garlic (or to taste)
1 (8 ounce) package sliced fresh mushrooms
1/2 cup dry red wine
2 teaspoons Worcestershire sauce
1 teaspoon dried Italian seasoning
1 teaspoon louisiana hot sauce
1 pinch black pepper (or use up to 1/4 teaspoon)
1 cup beef broth
1 -2 teaspoon flour

Steps:

  • Line a medium roasting pan with foil.
  • Lightly coat the tenderloin with olive oil; place on a plate and let sit out on the counter until almost room temperature (this might take several hours, this is an important step so do not omit, this will relax the meat fibers and make for a more tender and juicy beef roast!).
  • Season the beef with salt and black pepper (nothing else!).
  • Place in the roasting pan and bake uncovered in a 450 degree oven for 15 minutes.
  • Meanwhile while the roast is cooking; melt the 1/2 cup butter in a medium saucepan over medium heat.
  • Add in onions slices, garlic and mushrooms; cook stirring for about 6-7 minutes.
  • Add/stir in wine, Worcestershire sauce, Italian seasoning and hot sauce and pinch of black pepper.
  • In a small bowl whisk together beef broth and flour until completely blended and smooth; add to the wine mixture.
  • Reduce the heat and simmer stirring occasionally for 10 minutes or until the onion slices are tender.
  • Remove the beef from the oven and reduce heat to 425 degrees, then top with prepared mushroom/wine sauce; return to oven for about 16-18 minutes more or to desired doneness.
  • Transfer the beef to a serving platter and pour the sauce over beef or transfer to a gravy server.
  • Let beef stand for 10-15 minutes before serving.
