MEXICAN BEEF AND RICE CASSEROLE



Mexican Beef and Rice Casserole image

This Mexican casserole with beef and rice is a super easy recipe for family dinner. Garnish with your favorite toppings. I like to top with shredded lettuce and chopped cilantro! More shredded cheese is always good, too.

nonstick cooking spray
1 pound ground beef
1 yellow onion, diced
2 cloves garlic, minced
1 tablespoon taco seasoning
1 (15 ounce) can black beans, drained
1 (14 ounce) can fire-roasted diced tomatoes
1 bunch fresh spinach, trimmed and coarsely chopped
2 cups low-sodium chicken broth
2 cups shredded Mexican cheese blend, divided
1 cup long-grain rice
1 cup red salsa

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish.
  • Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more.

1 lb ground beef
1/2 cup uncooked rice
1 (10 1/2 ounce) can cream of celery soup or 1 (10 1/2 ounce) can cream of asparagus soup
1 1/4 cups water
1 teaspoon salt
1/2 cup chopped celery
black pepper
1/4 cup onion, chopped (optional)
1/4 cup green bell pepper, chopped fine (optional)

Steps:

  • Brown beef with onion (if using) and drain.
  • Add rice, soup, water, celery, peppers (if using), salt and black pepper, mix well.
  • Place in greased two-quart casserole dish and bake, covered, for 1 hour and 15 minutes at 350 degrees F.
  • Serve and enjoy!

3 cups cooked brown rice
2 cups frozen peas
1 (10.75 ounce) can condensed cream of celery soup
¼ cup milk
2 tablespoons soy sauce
1 clove garlic, minced
1 cup shredded Cheddar-Monterey Jack cheese blend, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Mix ground beef, brown rice, peas, soup, milk, soy sauce, and garlic together in a large bowl. Spoon into a 9x13-inch baking dish. Top with Cheddar-Monterey Jack cheese. Cover the baking dish with a lid or foil.
  • Bake in the preheated oven until heated through and bubbly, 15 to 20 minutes.

1 large onion, sliced
4 medium carrots, grated
1-1/2 pounds lean ground beef
1 medium green pepper, diced
2 teaspoons salt
2 cups tomato juice
2 tablespoons Worcestershire sauce
1/2 teaspoon dried basil
1-1/2 cups shredded cheddar cheese
1/2 cup toasted wheat germ

Steps:

  • In a greased 13x9-in. baking dish, layer rice, onion, carrots, beef and green pepper. Sprinkle with salt. Combine the tomato juice, Worcestershire sauce and basil; pour over the top. Sprinkle with cheese and wheat germ. cover and bake at 350° for 1-1/2 hours or until the rice is tender.

1 medium green bell pepper, diced
1 medium tomato, chopped
4 tablespoons Worcestershire sauce
1 (28 ounce) can diced tomatoes, undrained
1 tablespoon minced onion
1 teaspoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
salt and ground black pepper to taste
2 cups cooked rice
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, tomato, and Worcestershire sauce. Cook and stir until pepper has slightly softened, about 5 minutes. Strain 1/2 of the liquid from the canned diced tomatoes into the mixture.
  • Stir diced tomatoes, onion, garlic, oregano, basil, salt, and pepper into the ground beef mixture. Simmer until some of the liquid has reduced, about 10 minutes. Add rice and mix well. Transfer to a casserole dish and sprinkle Cheddar cheese on top.
  • Bake in the preheated oven until filling is heated through and cheese is melted, about 45 minutes.

3/4 lb lean ground beef (round, is My choice, the leaner the better)
1/2 cup green pepper, chopped (or a mix of red,yellow, and green)
1/2 cup onion, chopped
1 cup celery, chopped
1 cup raw brown rice (DO NOT USE INSTANT VARIETY)
2 cups beef bouillon
1/4-1/2 teaspoon red hot sauce (Tabasco type)
1 tablespoon dried parsley flakes

Steps:

  • Brown ground beef in a non-stick skillet.
  • Remove beef from skillet and drain.
  • Return beef to skillet adding vegetables and rice.
  • Cook over medium heat until rice is golden brown (about 10 minutes).
  • Stir in beef bouillon,hot sauce, and parsley.
  • Heat to boiling,simmer for 5 minutes.
  • Pour skillet mixture into a 2 quart casserole.
  • Cover and bake at 350 degrees for 50 minutes.

2 -4 tablespoons olive oil or 2 -4 tablespoons butter
1 onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
1 cup uncooked brown rice
3 cups vegetable stock (low-sodium or use chicken broth)
salt
1 fresh lemon, juice of
1/4 cup crumbled feta cheese (or to taste)
1 green onions or 1 scallion, sliced
1 cup sliced cooked mushroom (optional)
salt and pepper

Steps:

  • In a deep saute pan, on medium heat, saute the onion and garlic in oil or butter for 2-3 minutes.
  • Add in the rice, and continue cooking, stirring for 2 minutes, until coated with the olive oil.
  • Add in the stock, stirring and scraping the sides of the pan about 35 minutes, or until the rice is cooked, might take longer.
  • Season with salt and pepper.
  • Remove from heat, cover with a lid; set aside to steam for 5-6 minutes.
  • Uncover, and test for doneness.
  • If liquid is not absorbed in the rice, and the rice is not tender, return to the stove for a few minutes.
  • Then mix in the feta, green onions and the cooked mushrooms (if using); toss gently to mix.
  • Serve immediately.
  • Note: you may subsitute the vegetable stock for low-sodium chicken stock if desired.
