STIR-FRIED BEEF WITH HOISIN SAUCE

Steps:
- Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
- Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
- When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
- Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
- Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

BEST EVER SAUSAGE WITH PEPPERS, ONIONS, AND BEER!
This is an excellent recipe I came up with one day. Serve with some nice Italian bread, and a bottle of your favorite beer.

- Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.

EASY ITALIAN SAUSAGE AND PEPPERS
My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

- Heat the oil in a large pan, over medium heat.
- Add the sausages and cook, turning frequently.
- You want them browned all over and this takes about 10 minutes.
- Add the onions and stir up the browned bits on the bottom of the pan.
- Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
- After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

- Heat the oil in a wok or large frying pan.
- Stir fry beef until brown lightly.
- Add peppers, onion, and stir fry for two to three minutes.
- Add seasoning, water chestnuts, garlic puree, hoisin sauce, and stir fry for 1 minute.
- Add the corn starch to beef broth.
- Slowly stir the broth into the stir fry to thicken.
- Serve over rice or noodles.

- Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. SAUSAGES WITH PEPPERS AND ONIONS

- Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
- Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
- Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
- Garnish with the basil and serve immediately.

- In a medium saucepan, bring the rice and water to a boil. Cover, reduce heat, and simmer 20 minutes.
- In a skillet over medium heat, cook and stir the ground beef until evenly browned. Drain, and set aside.
- Heat the olive oil in the skillet over medium heat. Stir in the red bell pepper, green bell pepper, parsley, garlic and ginger. Season with red pepper, salt, and pepper. Cook and stir until tender.

BEEF IN HOISIN SAUCE
Steps:
- Slice the beef thinly.
- Set aside. Chop the onion, garlic and ginger
- In a wok heat the oil over a medium flame. Saute the ginger and garlic for one minute then add the onion.
- Add the beef and cook until tender.
- Add water, salt, sesame oil and sugar. Simmer for 2 minutes.
- Then add the cornstarch and hoisin sauce and simmer for about 2 minutes.
- Garnish with the chopped chive. Serve as a side or over rice or noodles.

- In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoons sherry, 2 tablespoons soy sauce, garlic and pepper flakes. Add beef and toss to coat. BEEF STEW WITH RED WINE AND HOISIN SAUCE

- Place the meat on paper towels and pat it dry. Sprinkle it generously with salt and pepper and set it aside.
- Place a heavy, large pot (or Dutch oven) over medium-high heat on your stovetop. When it gets hot, add 2 tablespoons of olive oil and then add the meat. Sauté the meat until brown on all sides, about 10 minutes (depending on the size of your pot and the amount of meat, this step should be done in batches so as to ensure that all the meat gets browned evenly-do not crowd the pot). Remove the meat from the pot and reserve. Reduce the heat to medium; add 2 more tablespoons olive oil to pot. Add the onions and sauté them until they are golden brown, about 10-15 minutes.
- Return the meat to the pot and mix it into onions. Add 1 cup of wine, the tomatoes with their juices, the hoisin sauce, and the bay leaves. Bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer the stew for an hour, stirring occasionally.
- Add the carrots and the remaining 1cup of wine. Cover again and simmer the stew for another 30 minutes or so, stirring occasionally. Uncover to pot and continue cooking until the sauce is slightly thickened, stirring occasionally, about 15 minutes longer.
- Reduce the heat to medium, add the cornstarch mixture, and simmer until the sauce thickens, stirring occasionally, about 8 minutes. Discard bay leaves. Taste and adjust the seasoning if needed. Transfer the stew to a large serving bowl. Sprinkle with parsley and serve.
