SPINACH MEATBALLS
This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.Update: 03/13/2010 Elainemae, a reviewer suggested we use infant's rice cereal instead of breadcrumbs and it serves a dual purpose - increase the iron content. Great idea! :)

Steps:
- Preheat oven to 350°F.
- In a medium bowl, combine ground beef, spinach, egg, onion powder, garlic powder, bread crumbs, salt & pepper.
- Mix all ingredients well and form into small meatballs.
- Place meatballs on jelly roll pan and place into preheated oven; bake for 40-50 minutes (depending on size of meatballs).
- While meatballs are cooking, prepare pasta according to package directions, drain and keep warm.
- In a large skillet or sauce pan, pour jar of prepared spaghetti sauce.
- When meatballs are fully cooked, remove from oven and place in sauce.
- Simmer on medium heat 6-8 minutes.
- Serve meatballs and sauce over cooked pasta.
- Top with grated Parmesan cheese.
PARMESAN SPINACH BALLS
These delicious little appetizers are always a hit. Serve warm or at room temperature with a good quality mustard. These can be frozen unbaked and popped into the oven when unexpected guests pop in.

- In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
- Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

- Heat oven to 400°F.
- Add hot water to stuffing mix in large bowl; stir just until moistened. Add meat, spinach, cheese and egg whites; mix well.
- Shape into 60 (1-1/2-inch) balls. Place in 2 rimmed pans sprayed with cooking spray.
- Bake 20 min. or until done (160°F), heating pasta sauce near end of baking time.

MEATBALLS WITH PARSLEY AND PARMESAN
Meatballs are usually the spicy sidekick to spaghetti, but with a crusty roll, zesty tomato sauce, and some fresh mozzarella, they are transformed into hero material. Proving their versatility, these beefy bites from home cook Gayle Gardener of New Mexico also work as hors d'oeuvres. Just add a dipping sauce, and they'll be the hit of the party. If you're counting calories, substitute ground turkey or chicken for the beef and bake them.

- Stir the eggs, bread crumbs, cheese, 3 tablespoons olive oil, the parsley, garlic, salt, and pepper in a large bowl to blend. Add the beef and mix thoroughly. Form the mixture into 1 1/2-inch meatballs.
- Pour enough oil into a heavy large skillet to coat the bottom; heat over medium-low heat. Working in batches, add meatballs and fry until brown and cooked through, turning frequently and adding more oil as needed, about 15 minutes per batch. Transfer to plate.
MOM'S SPINACH MEATBALLS

- In a food processor, combine spinach, parmesan, mushrooms, garlic, Worcestershire sauce, Italian seasoning, pepper, and salt. Process till well combined.
- Add eggs one at a time and process till well combined. Transfer to a large bowl. Combine with beef (I find this works best with one's hands). Mix well.
- Shape into 1 1/2" balls.
- Place meatballs on a baking sheet lined with foil and/or sprayed with cooking spray. Bake at 400 degrees about 15 minutes, or till meat is no longer pink.

- Heat the olive oil in a large saucepan, add the carrot, celery, garlic and onion and cook gently for about 4-5 minutes, until beginning to soften. Stir in the tomatoes, rinse out 1 of the cans with 100ml water and add to the pan. Season to taste. Bring to a gentle simmer, then cover the pan and cook for 15 minutes.
- Meanwhile, put the spinach in a large colander and pour over boiling water to wilt. Cool, then squeeze out the excess water and finely chop.
- Put the minced beef in a large bowl, add the spinach, breadcrumbs, Parmesan, chilli flakes, parsley, egg and some seasoning. Mix together with your hands until completely combined. It should be a firm, moist mixture but not sticky.
- Roll the mixture into small balls, the size of a walnut – you should have about 30 – and drop into the tomato sauce. Shake them down into the sauce (stirring them while they are soft will break them apart) and cook for 35-40 minutes, until the meatballs are cooked through and the sauce is reduced and thickened.
