BEER CAN CHICKEN AND RICE SOUP
A hearty Chicken and rice soup made with homeade broth and a healthy serving of veggies. Great way to make a delicious meal from your leftover chicken.

Steps:
- Take Leftover chicken and remove all meat from bones and set meat aside.
- Put the rest of the chicken into a large pot with the 18 cups of water. Bring to boil and reduce to medium heat. Simmer for 10 minutes.
- Saute Carrots, Celery, and Onion in large lightly greases skillet on medium heat for about 10 minutes.
- Pour your water with the simmering chicken through a strainer into a large bowl. Discard bones and rest of carcass.
- Pour broth back into Large pot and Bring to a boil. Add Sauteed vegetables to boiling broth. Add chickem meat that you set aside from the roaster. Boil for five minutes.
- Add rice and reduce heat to low. Simmer for 10-15 minutes of until rice is tender.
- Add Cream of chicken soup and mix throughly. (You can add more or less soup depending upon your preference).
- Let cool, salt to taste, and serve.

BAKED CHICKEN AND RICE WITH THREE SOUPS
This is a favorite recipe of my family's. We have been cooking this recipe for 3+ generations and this is known as comfort and/or soul food for us. The rice is the best part of the recipe if not for the juicy and tasty chicken. I hope that you try and enjoy this family favorite.

Steps:
- Preheat oven to 375 degrees.
- Combine the three soups, rice and water in a casserole dish, mixing until the ingredients are thoroughly combined.
- Place the chicken breasts on top of the rice.
- Sprinkle the chicken and the rice mixture with the salt, pepper, garlic powder, Thyme and paprika to taste.
- Place the pieces of butter evenly over each piece of chicken, so that each piece gets two portions of butter.
- Bake the casserole at 375 for about 25-30 minutes or until the skin on the chicken is golden brown and the rice is hot, bubbly and fully cooked.
- Serve immediately.
- This dish can also be made with whole cut-up chicken pieces (i.e. drumsticks, thighs, etc.) in lieu of only chicken breasts. I just make it this way so no one fights over the chicken breasts which they always seem to do if I do it the other way.

Quickest thing going. Even my 12 year old son can make it in less than 15 minutes! Great for kids, big and small alike. Believe it or not, this dish is ready to eat in about 10 minutes! Delicious!

Steps:
- Prepare rice according to package directions.
- When rice is ready, add chicken to pot and continue to stir over low heat. Mix in soup, and continue cooking until heated through.

- Saute the onion in 2 tsbps of butter or the same amount of olive oil. When translucent, add to large pot. Add the wild rice, the chicken stock and broccoli florets. Put the burner on medium heat and lat that start to heat up. Saute the carrots and the celery in the same pan as the onion, add to the pot. Take 1 cup water, pour it into the saute pan. This will get all the leftover butter and veggie bits moving-pour it all into the soup pot too. Add the Worcestershire, and basil. Then salt and pepper to taste. Bring to a boil. Once it is boiling, add your meat of choice. Slowly stir in the cheese, making sure it isn't clumping, and keep stirring so it melts into a smooth consistency. Let it simmer for 5-10 minutes, don't let it boil. Add the beer. Go slow, the carbonation will make the soup puff up. Once the beer is in, let it simmer for another 5-10 minutes. If it tastes like a frat party when you test it, let it simmer for a little bit longer. Pro tip--if this soup gets you drunk, you didn't simmer the beer long enough. Serve in bread bowls. This soup can be topped with more cheese, popcorn, bacon, green onion, whatever you'd like--or you can eat it just the way it is.
