BEER BATTER FISH MADE GREAT



Beer Batter Fish Made Great image

This is a great beer batter fish recipe, and is very easy to do. We often fish all day with friends, and then cook the fish afterwards out on deck. Yummy and great!

2 quarts vegetable oil for frying
8 (4 ounce) fillets cod
salt and pepper to taste
1 cup all-purpose flour
2 tablespoons garlic powder
2 tablespoons paprika
2 teaspoons salt
2 teaspoons ground black pepper
1 egg, beaten
1 (12 fluid ounce) can or bottle beer

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C). Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.
  • Dip fish fillets into the batter, then drop one at a time into hot oil. Fry fish, turning once, until both sides are golden brown. Drain on paper towels, and serve warm.

1 1/2 lbs salmon fillets (1 12 inch tail piece)
2 teaspoons garlic salt
3 tablespoons brown sugar
4 tablespoons butter, cut into small pieces
1 small red onion, thinly sliced
1 (12 ounce) bottle beer

Steps:

  • Preheat grill to medium-high heat.
  • Using aluminum foil, create an oblong cooking tray (approximately 13 inches by 8 inches by 2 inches) to be placed directly on grill.
  • Place salmon fillet in center of tray.
  • Season first with garlic salt, sprinkle with brown sugar, and then cover with pieces of butter.
  • Top with sliced red onions.
  • Pour beer of choice into tray to just below the highest point of the fillet.
  • Cover tray with aluminum foil to envelope fish completely.
  • Place tray on grill, cover with lid, and grill for approximately 8 minutes or until just cooked through.

2 tsp Garlic Salt.
3 tbsp Brown Sugar.
11½ pound Salmon fillet (12-inchpiece.
4 tbsp Butter, cut into small cubes.
1 Small red Onion, sliced thinly.
1 Bottle of good quality beer.

Steps:

  • Preheat the oven for medium and direct heat.
  • Create a tray using an aluminum foil of around 13x8x8 inches. Place salmon fillets in the center of the aluminum tray. Season the fillets with Brown Sugar and Garlic Salt. Add the small cubes of butter on top of fillets and in-between fillets. Add Onion on top.
  • Place the aluminum tray on the grill. Pour the Beer into the tray and cover it with aluminum so the fish can cook properly. Grill for 8 minutes or until the salmon begins to flake off.

1/4 cup chopped walnuts, toasted
1/4 cup chopped fresh parsley

Steps:

  • Heat grill to medium-high heat.
  • Place fish fillet onto center of large sheet heavy-duty foil. Bring up foil sides. Pour beer over fish. Fold to make packet.
  • Place packet on grill; cover with lid. Grill 7 min. Carefully open foil packet. Sprinkle cheese over fish; reseal packet. Cover grill with lid; grill 5 min. or until fish flakes easily with fork.
  • Remove fish from packet to serving platter; sprinkle with nuts and parsley.

1/4 teaspoon dried tarragon
1 teaspoon chives, minced
1 teaspoon green onion, chopped
1/4 teaspoon Tabasco sauce

Steps:

  • In a skillet, combine beer, lemon juice, onion, celery, salt, bay leaf and peppercorns. Bring to a boil and simmer for 10 minutes. Add salmon steaks, cover and simmer 15 minutes.
