BEET AND AVOCADO KACHUMBER SALAD | PRIYA KRISHNA



Beet and Avocado Kachumber Salad | Priya Krishna image

This simple beet and avocado kachumber salad from Priya Krishna's new book "Indian-ish" is crisp, spicy and refreshing.

Provided by Rachael Ray Show Staff

Number Of Ingredients 11

4 large pre-cooked red beets (or 6 or 7 small)
diced into ½-inch pieces
2 tablespoons fresh lime juice
from about 1 lime
1 small Indian green chile or serrano chile
finely chopped
1 clove garlic
minced
½ teaspoon kosher salt
2 just-ripe medium avocados
diced into ½-inch pieces

Steps:

  • In a medium bowl, combine the beets, lime juice, chile, garlic, and salt
  • Just before serving, add the avocado and gently mix

1/4 cup KRAFT Italian Vinaigrette Dressing
1/4 cup orange juice
8 beets, roasted, peeled and cut into wedges
4 avocados, peeled, pitted and sliced
1 red onion, thinly sliced
1/4 cup chopped fresh parsley
1 Tbsp. grated orange zest

Steps:

  • Mix dressing and orange juice in large bowl. Add beets; toss to coat. Set aside.
  • Arrange avocados on serving platter; top with onions and beet mixture.
  • Sprinkle with parsley and orange zest.
