BERGY DIM SUM #1, PORK & LETTUCE ROLLS

Bergy Dim Sum #1, Pork & Lettuce Rolls image

This is great served as an appetizer or part of a Dim Sum brunch. Over the next few weeks I will be submitting other recipes suitable for Dim Sum. I will name and number them "Bergy Dim Sum 1, 2 etc." Many of the recipes will be freezer friendly so it is easy on the hostess (host) on the day of the brunch Edited 13 Dec 03 It has been a while since I made this recipe and found it was a bit light in the taste so I added 3/4 tsp hot chili flakes and 2 tbsp Schezwan sauce - just right for me. Do what the recipe says the first time and then you can spice it up. Do not mince the chestnuts, shoots & crab too fine you want a bit of crunch left.

BERGY DIM SUM #7, MANDARIN PANCAKES

Bergy Dim Sum #7, Mandarin Pancakes image

These pancakes are traditionally served with Peking Duck but there are many other savory fillings like Moo Shoo Pork. I will post several possible fillings and you will be able to find them among my posted recipes

Provided by Bergy

Categories     Lunch/Snacks

Time 1h30m

Yield 20 Pancakes

Number Of Ingredients 3

2 cups all-purpose flour
3/4 cup boiling water
1 tablespoon sesame oil

Steps:

  • Put unsifted flour in a bowl.
  • Pour in all the boiling water at once stirring with the handle of a wooden spoon (or use your mixer with the bread paddle mix and knead for 5 minutes).
  • When the dough is cool enough to handle knead for 10 minutes (this step is not necessary if you used your mixer).
  • Whether you do this by hand or with the mixer the mixture is ready when it is a smooth, soft dough.
  • Cover the dough and let it rest for 30 minutes.
  • Roll dough into a cylindrical shape and cut into 10 equal pieces.
  • Keep covered with plastic wrap to prevent drying out.
  • Take one slice at a time and cut in two equal pieces.
  • On a lightly floured board roll each piece into a 3" circle.
  • Brush one side of one of the 3" circle pancakes with Sesame oil, brush the oil right to the edge.
  • Put the second 3 inch piece on top of the first and roll both pieces out into a pancake about 7 inches across.
  • They must be very thin.
  • Cover with plastic as each is made.
  • When they are all rolled out heat a skillet or griddle, do not grease it.
  • Put pancakes one at a time on the ungreased surface.
  • Cook over low heat until pancake developes small bubbles.
  • Turn frequently so that both sides are cooked (You'll see a few golden spots).
  • Remove from pan and gently pull the two pancakes apart.
  • This should go very easy because of the sesame oil that you brushed between them.
  • Pile the pancakes on a plate, Put waxed paper between them and cover tightly with plastic wrap so they do not dry out.
  • These pancakes will keep several days in the refrigerator.
  • To reheat arrange pancakes in a steamer lined with a clean tea towel.
  • Cover and put over simmering water for a minute or two.
  • To serve fold pancake into quarters.
  • The pancakes should be soft and pliable.

SPICY PORK LETTUCE WRAPS

Spicy Pork Lettuce Wraps image

These lettuce cups filled with spicy ground pork take inspiration from Larb. Found in several Southeast Asian countries, Larb usually features seasoned ground meat served with sticky rice or lettuce cups, topped with fresh vegetables and herbs. Toasted rice powder is typically mixed into the seasoning for some crunch and to help thicken the dressing. Katie opts for ground peanuts instead to achieve a similar texture and nutty flavor. These can also be made with ground chicken, duck, turkey, or crumbled tofu in place of the ground pork. Fresh and flavorful, these lettuce cups are super easy to make at home any night of the week.

Categories     main-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 20

2 tablespoons soy sauce
1 teaspoon grated fresh ginger (from about 1/2-inch piece)
1 teaspoon sesame oil
1 medium carrot, grated or julienned
1 bunch scallions, thinly sliced
Juice of 1 lime
1 tablespoon vegetable oil
1 pound ground pork
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
4 cloves garlic, minced
One 1 1/2-inch piece ginger, peeled and finely grated (about 1 tablespoon)
1 shallot, minced
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 head Bibb, butter or iceberg lettuce, separated into leaves
Fresh cilantro leaves, for serving
Fresh mint leaves, for serving
1/2 cup roasted salted peanuts, chopped
Sriracha, for serving

Steps:

  • For the scallion and carrot relish: Toss the soy sauce, ginger, sesame oil, carrots, scallions and lime juice in a medium bowl. Set aside in the refrigerator until ready to serve.
  • For the pork: Heat a medium skillet over medium-high heat. Add the vegetable oil, and once hot, the pork. Cook the pork, breaking it up with the back of your spoon until it browns and is no longer pink, 5 to 6 minutes. Stir in the red pepper flakes, salt, garlic, ginger and shallots. Cook until they are aromatic and incorporated, another minute. Add the hoisin and stir to combine, then add the soy sauce. Cook until the pork is sticky and glazed, about 3 minutes. Transfer the pork to a serving bowl.
  • Serve the pork with the lettuce leaves, some scallion and carrot relish, cilantro leaves, mint leaves, peanuts and sriracha, letting everyone build their own wraps with all the fixings.

  • When you get to the end of wrapping wet the tip of your finger and wet the corner of the wrapper and close. This should keep the roll closed.
